IMITATION CRAB 3-CHEESE QUESADILLAS

Steps:
- Combine Greek yogurt and salsa, stir until you get a creamy consistency, set aside.
- Add tomatoes, bell peppers and green chilies into mixing bowl. Season with salt and pepper.
- Combine crab meat into pepper mixture and squeeze in lime juice, stir thoroughly.
- Stir in cheese and divide mixture onto tortillas and fold tortillas to close.
- On medium heat, 1 tablespoon extra-virgin olive oil on a 10-12 inch pan.
- Add 2 quesadillas at a time, 1-2 minutes on each side.
- Let cool first then slice into wedges and serve with sauce.

Steps:
- Combine crabmeat, Monterey Jack cheese, mozzarella cheese, cheddar cheese, 1/4 cup cocktail sauce, green onions and garlic in medium bowl; mix well.
- Spread about 1/2 cup mixture onto 2 tortillas; sprinkle evenly with remaining Monterey Jack cheese.
- Top with remaining tortillas.
- Melt 1 tablespoons butter on cast iron griddle over medium-high heat.
- Add one quesadilla; cook for 2 minutes on each side or until golden brown.
- Repeat.
- Cut each into eight wedges.
- Serve with cocktail sauce for dipping.

- Shred crab meat; mix together with sour cream, lime juice, and green onions in a small bowl.
- Season to taste with salt and pepper.
- Heat griddle or small frying pan with a small amount of oil or cooking spray.
- Take a tortilla, place about 1/8 of crab mixture on it and spread evenly.
- Top with 1oz.
- (about 1/4 cup) cheese and sprinkle with some chopped cilantro.
- Place on hot griddle; when cheese starts to melt, fold in half.
- Allow to heat through and brown nicely, then remove from heat.
- Repeat with other tortillas.
- Quesadillas can be kept warm on a stoneware plate or baking dish in the oven on warm while you are busy with the others.
- Serve topped with a dallop of sour cream or guacamole, and wedges of lime, if you wish.

CREAMY PASTA WITH IMITATION CRAB
Creamy pasta sauce with imitation crab that is ready with little prep but ends up with lots of flavor.

- Bring a large pot of lightly salted water to a boil.
- At the same time, heat oil in a large saucepan over medium heat. Add onion and garlic to the hot oil; cook until translucent, about 5 minutes. Stir in imitation crab and heat for 2 minutes.
- Begin cooking rotini. Add to the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
- While the pasta is cooking, stir half-and-half and parsley into the crab sauce; bring to a simmer. Continue to simmer crab sauce, adding pasta water as necessary, while pasta is finishing.
- Drain pasta.
- Mix Parmesan cheese into crab sauce and heat until melted, about 2 minutes. Serve over pasta.

- Mix first 6 ingredients in medium bowl to blend. Season cheese mixture to taste with salt and pepper. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.)
- Mix crabmeat, tomatoes, green onions and chili in large bowl. Spread cheese mixture over half of each tortilla. Spoon crabmeat mixture atop cheese mixture, dividing equally. Sprinkle with salt and pepper. Fold tortillas in half. Press gently to seal.
- Heat 1 1/2 tablespoons oil in each of 2 heavy large skillets over medium heat. Working in batches, cook quesadillas in skillets until cheese melts and tortillas are golden brown, adding more oil as needed, about 3 minutes per side. Cut quesadillas into wedges and serve.
CHI CHI'S SEAFOOD ENCHILADAS
I spent 16+ years at Chi Chi's. This is the recipe you want. In the restaurant these are cooked right on the plate. (Remember... The plates are hot and then you touched them anyway. lol) You could cook them all together in a baking dish. Cook time and temperature may need to be adjusted if not cooking with a convection oven. Enjoy with your favorite spanich rice, refried beans and sweet corn cake.

- FOR THE SAUCE: Melt butter in a 2 quart saucepan over medium heat.
- Add flour.
- Cook and stir for 5 minutes(should have a nutty aroma).
- Add 1/2 tsp white pepper.
- Stir in 2 tbsps lobster base and cook for an additional minute.
- Add milk & wine.
- Add 2 oz. of the cheese.
- Continue to cook until thickened.
- FOR THE CRAB MIX: Lightly chop the flaked imitation crab.
- Combine with shrimp in a medium size bowl.
- Add 1.5 cups of cold sauce.
- Mix well.
- FOR THE ENCHILADAS: Lay out the tortillas on a flat surface.
- Place 2 to 3 heaping tablespoons of the crab mix across the center of each tortilla.
- Place flap of the tortilla over the crab mix and roll.
- Place flap side down onto a plate or in your baking dish.
- Ladle warm sauce over the enchiladas.
- Top with remaining monterey jack cheese.
- Put into a preheated 425 degree convection oven for 12-14 minutes. In a conventional oven you may want to microwave on high for a minute or 2 before placing in the oven.
- Watch and do not allow to burn (brown spots).
- Sprinkle with paprika.
IMITATION CRAB CASSEROLE WITH CHEESE
This recipe is easy and quick to make, and offers a good taste of the ocean. It is inexpensive to make if using imitation crabmeat.
