AMISH SUGAR COOKIES
These easy-to-make, old-fashioned sugar cookies simply melt in your mouth! I've passed this recipe around to many friends. After I gave it to my sister, she entered the cookies in a local fair and won best of show. -Sylvia Ford, Kennett, Missouri

Steps:
- Preheat oven to 375°. In a large bowl, beat the butter, oil and sugars. Beat in eggs until well blended. Beat in vanilla. Combine the flour, baking soda and cream of tartar; gradually add to creamed mixture., Drop by small teaspoonfuls onto ungreased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

ICED VANILLA AMISH SUGAR COOKIES
Soft, puffy, melt-in-your-mouth Iced Vanilla Amish Sugar Cookies! These could not be easier and are made with common pantry ingredients! These Iced Vanilla Amish Sugar Cookies are a lot like cut-out cookies, but much less work! Top them with a sweet, buttery vanilla icing for an extra special cookie!

- In a large mixing bowl, beat the butter, oil, and sugars until combined.
- Beat in eggs and vanilla extract.
- In a large bowl, whisk together flour, baking soda, and cream of tartar.
- In two additions, add flour mixture to the butter mixture, beating until just combined. Do not overmix. Dough will be soft and almost fluffy.
- Line baking sheets with parchment paper or silicone baking mats.
- Drop dough by rounded teaspoonfuls onto baking sheets.
- Bake at 375 for 8-11 minutes, or until edges and bottoms are lightly browned.
- Remove to wire racks to cool completely.
- In a large mixing bowl, combine butter, vanilla extract, and 1/4 cup milk or cream.
- Gradually add 4 cups powdered sugar, mixing until smooth.
- Add additional milk or powdered sugar, as needed, to achieve a thick, but spreadable consistency. It should be thicker than a glaze, and it shouldn't run off the cookie, but should be easily spreadable. It's an icing that sets, so if it's getting too thick as it sits, or you notice it's becoming harder to spread, you can pop it in the microwave for 5-6 seconds - that's ALL it takes - a few seconds will thin it back out again.
- Ice the cookies generously, top with sprinkles, and allow to set.
- Store cookies in airtight containers in a cool, dry place. Stack cookies with parchment paper or foil in-between layers. Cookies will keep for about a week.
AMISH SUGAR COOKIES
Everyone I've ever made these cookies for describes them as very similar to tea cakes; they are very fluffy with a unique flavor. The recipe was given to me by a close friend of my great-aunt Jackie. They are YUM YUM good!!

Steps:
- Preheat oven to 400°F.
- In a very large mixing bowl, cream together; eggs, sugar, and oil.
- Add buttermilk, baking soda, salt, baking powder, and vanilla extract.
- Gradually beat in flour, and beat until mixture is smooth.
- Allow batter sit for about 5 minutes after beating in all the flour.
- Pour by 1/4 cupfulls onto a greased cookie sheet.
- Sprinkle tops of cookies with cinnamon sugar.
- Bake at 400° for 7-8 minutes. Watch carefully and do not overbake.
- If the cookie springs back when touched, it's done.

TRADITIONAL AMISH SUGAR COOKIES
I got this recipe from a friend at school who did a speech on them. She gave us each a sample. They were so good!

Steps:
- Mix granulated sugar, powdered sugar, butter, and cooking oil together.
- Add eggs, mix again.
- Add flour, cream of tartar, vanilla, and baking soda mix together.
- Drop small balls of dough on cookie sheet.
- Pour a small amount of granulated sugar in a bowl.
- Dip bottom of a cup in the small bowl of sugar.
- Then slightly flatten dough with the bottom of cup.
- Bake in oven at 375 degrees.
- Bake for about 10-12 minutes or until lightly brown.

this came from an old Amish cookbook...have not tried these yet..but wanted to keep the recipe on file..I find it intriguing about heating the sugar and water to make frosting..can't wait to try it..
