If you enjoy having a soothing, refreshing glass of iced tea in the summertime, I hope you will try my version of sweet mint tea. I grew up drinking mint tea and still enjoy it so very much today. If you don't care for sugar in your tea, just leave it out, it will still be just as satisfying.

12 bags single serving tea (caffinated or decafe)
2 quarts boiling water
10 sprigs mint
1 cup sugar (or to taste)
2 lemons, sliced

Steps:

  • In large tea pot (or two small tea pots) pour boiling water over tea bags and mint and allow to steep for 20 minutes.
  • Place sugar in 2-quart pitcher (that will tolerate some heat).
  • Pour freshly brewed tea (minus mint and tea bags) into sugar and stir until sugar is dissolved.
  • Place in refrigerator until ready to serve.
  • To serve, pour into tall glasses over ice.
  • Serve with lemon slices.
  • Serves 8.

1 1/2 cups sugar
Three 3/4-ounce packages fresh mint, plus extra sprigs for serving
5 English Breakfast or Earl Grey tea bags
2 cups 1/2-inch cubed watermelon, plus extra for serving
16 strawberries, stemmed, halved, plus extra for serving
1 teaspoon fresh lemon juice
1/4 teaspoon pure peppermint extract
Pinch kosher salt
1 bottle chilled prosecco, optional
Ice cubes
One 1/2-pint container blackberries
Lemon wedges

Steps:

  • Bring 5 cups water and the sugar to a boil in a heavy large saucepan. Stir until the sugar dissolves. Add the mint. Remove the pan from the heat and add the tea bags. Let the tea steep for 10 minutes. Cool the tea to room temperature. Strain the tea into a large pitcher or bowl.
  • Blend the watermelon and strawberries until smooth in a blender. Stir the fruit mixture into the tea. Add the lemon juice, peppermint and salt. Chill the tea until very cold, at least 2 hours and up to 1 day. Before serving, add chilled prosecco if using.
  • Put a few ice cubes into each of the 6 glasses or water goblets. Add some watermelon, strawberries and the blackberries to each glass. Pour tea into each glass and garnish with mint sprigs and serve, passing lemon wedges.

  • In a large saucepan, bring water to a boil. Remove from the heat; add mint and tea bags. Cover and steep for 3-5 minutes. Discard mint and tea bags. Stir in the sugar., In a blender, process honeydew until blended. Add 1-1/2 cups ice and tea; process until blended. Serve over additional ice.

handful of fresh mint (around ½ a pack)
honey to taste

Steps:

  • Take a few leaves of the mint in one hand and sharply clap your other hand on top, then drop the leaves into a teapot or cafetiere. Repeat with the rest of the mint, saving a few small sprigs for each glass as a garnish.
  • Fill up the pot with boiling water and let it infuse for 2-3 mins or until the liquid starts to take on a slight pale yellow/green hue. Strain the tea into cups or heatproof glasses and sweeten with honey to taste. Drop the reserved mint into the cups to decorate if you like.

  • In a large pot bring the water to a boil. Remove pot from heat, add the tea bags, cover with a lid, and allow tea to steep in water for 20 minutes. Take a 1 gallon jug and pour the sugar into the jug and cover with some hot tap water. Stir the sugar around to dissolve while the tea is steeping. Once the tea has steeped, remove the lid and the tea bags. Pour the tea into the jug with the sugar, stir, and place the tea bags back into the jug and run them under hot tap water to release any additional flavors. Stir the tea well making sure the sugar dissolves. Fill the jug with cold water to yield 1 gallon.
