Buttery, rich shortbread bursts with a twist of lemon flavor.

3/4 cup powdered sugar
1/4 cup granulated sugar
1 cup butter or margarine, slightly softened
2 tablespoons grated lemon peel
1/4 cup lemon juice
2 1/4 cups Gold Medal™ all-purpose flour
1/3 cup cornstarch
1/4 teaspoon salt
2 cups powdered sugar
2 teaspoons light corn syrup
1 teaspoon grated lemon peel
3 to 4 tablespoons lemon juice

Steps:

  • Heat oven to 325°F (if using dark or nonstick pan, heat oven to 300°F). Grease bottom and sides of 13x9-inch pan with shortening or spray with cooking spray.
  • In large bowl, beat 3/4 cup powdered sugar, the granulated sugar and butter with electric mixer on low speed until combined. Beat on medium speed until light and fluffy. Stir in 2 tablespoons lemon peel and 1/4 cup lemon juice. Stir in flour, cornstarch and salt. Press dough in pan with floured fingers.
  • Bake 35 to 45 minutes or until top is light golden brown. Cool completely, about 45 minutes.
  • Meanwhile, in medium bowl, stir all Lemon Icing ingredients until smooth and spreadable. Spread cooled bars with Lemon Icing; let stand 15 minutes or until set. For bars, cut into 6 rows by 6 rows.

4 cups sugar
1/2 cup lemon zest, about 6 to 8 lemons
4 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
2 cups (4 sticks) unsalted butter, cut into 1-inch cubes, chilled
5 egg yolks
2 teaspoons vanilla extract
3/4 cup lemon juice
Lemon Icing, recipe follows

Steps:

  • Preheat oven to 350 degrees F.
  • In a food processor work bowl, add sugar and lemon zest. Process until sugar and zest are well mixed, about 20 seconds. Scrape into a large mixing bowl. Reserve about 1/2 cup of lemon sugar in a separate bowl for later use.
  • Add flour, baking powder and salt into food processor and pulse briefly to mix. Add cold butter into food processor with flour mixture and process with short pulses until mixture resembles cornmeal and no large lumps of butter remain, about 10 pulses. Pour this mixture into the sugar and lemon mixture in the large mixing bowl and set aside.
  • In a medium bowl, mix egg yolks, vanilla extract and lemon juice together.
  • Using an electric mixer with a paddle attachment, pour in the lemon/sugar and flour/butter mixture and stir until combined, about 15 seconds. Then, while the mixer is still running, slowly add egg/lemon juice mixture and mix until well combined and dough pulls away from the sides of the bowl, about 15 to 30 seconds.
  • Scrape the dough into a large bowl and refrigerate until cold, but not solid, about 30 minutes. Use an ice cream scoop to scoop the dough onto parchment-lined cookie sheets. Take the dough balls and roll the tops into the reserved lemon sugar. Use the bottom of a water glass to press the cookies flat, about 1/4-inch thick. Bake the cookies until slightly browned, about 15 minutes. Remove the parchment paper with the cookies from the tray to a cooling rack and cool completely, about 1 hour. Once the cookies have completely cooled, ice with Lemon Icing.
  • 1 pound (2 cups) confectioners' sugar
  • 6 tablespoons lemon juice
  • In a medium bowl, whisk sugar and lemon juice together until smooth. Spoon onto cooled cookies, and spread evenly with the back of a spoon. Let stand on a cooling rack until the glaze is set, about 1 hour.
  • Yield: enough for 3 dozen cookies

1/3 cup cornstarch
1/2 cup powdered sugar

2 tablespoons finely grated lemon zest
3/4 cup butter, slightly softened
1/4 teaspoon salt
2 teaspoons fresh lemon juice
1/2 teaspoon lemon extract
2 tablespoons granulated sugar
1 teaspoon finely grated lemon zest
1 1/2 tablespoons fresh lemon juice
1 teaspoon light corn syrup
1 cup powdered sugar

Steps:

  • Lightly grease a 9-inch square pan or coat with nonstick spray.
  • Line the pan with aluminum foil, letting the foil overhang two opposing sides of the pan by about 2 inches.
  • In a medium bowl, thoroughly stir together the flour and cornstarch, set aside.
  • In a food processor, process the powdered sugar, sugar and lemon zest until the sugar is yellow and zest if finely pulverized, about 3 minutes.stopping and scraping down the bowl several times. Add the butter, salt, lemon juice and lemon extract and process until well blended and fluffy, about 1 minute.
  • Sprinkle the flour mixture over the butter mixture and process in on/off pulse until well blended and smooth, stopping and scraping down sides of bowl several times.
  • Turn the dough out onto a large sheet of plastic wrap, pat the dough into a 6" disk. Fold the wrap around the dough.
  • Refrigerate for 20-23 minutes or until doguh is cool and slightly firmer.
  • Preheat the oven to 300°F.
  • Press the dough evenly into the pan. lay a sheet of wax paper on the dough, then press it out the the edges until the top is smooth and flat.
  • Peel off and discard the paper.
  • Bake in the middle of the oven 37-40 minutes or until pale golden all over and just slightly darker at the edges.
  • Transfer the pan to a wire rack and let stand until completely cooled.
  • Using the overhanging foil as handles, transfer the shortbread to a cutting board. Carefully peel off and discard the foil.
  • For the icing: In a food processor, combine the sugar, and lemon zest and process until the sugar is lightly colored and zest is finely pulverized. about 1 minutes, stopping and scraping down sides of bowl.
  • Add enough water a few drops at a time to yield a fluid but not runny icing.
  • Immediately spread the icing evenly over the shortbread.
  • Let stand for 5 minutes.
  • Using a large sharp knife, trim off and discard the uneven edges, work carefully, the shortbread is slightly crumbly.
  • Wipe the knife clean between cuts.
  • Cut into 24 fingers -- using a table knife or spatula, carefully separate and lift the fingers, let stand, slightly separated until the icing completely sets, about 1 hour.
  • Store in a single layer or layered with wax paper in an airtight container for up to 10 days or freeze for up to 1 month.

150g plain flour, plus extra for dusting
100g butter, chilled and cubed
50g caster sugar, plus 1 tbsp for sprinkling

Steps:

  • Heat the oven 170C/150C fan/gas 3. Put the flour, butter and sugar into a mixing bowl. Use your hands to combine the ingredients until the mixture looks like breadcrumbs, then squeeze until it comes together as a dough.
  • On a lightly floured surface, use a rolling pin to roll out the dough to ½ cm thick. Cut the dough into fingers and place on a lined baking tray. Use a fork to create imprints, then sprinkle with the remaining caster sugar.
  • Chill the dough in the fridge for 20 mins, then bake for 15-20 mins until golden brown. Remove the shortbread fingers from the oven and leave to cool on the tray for 10 mins.

100g salted butter , softened, plus a little extra for greasing
50g golden caster sugar , plus extra for dusting
zest 1 large lemon
8 pieces of crystallised ginger , finely chopped
175g plain flour

Steps:

  • Heat oven to 150C/130C fan/gas 2 and grease a 22cm loose-bottomed fluted tart tin. Put the butter in a bowl and beat with a wooden spoon until soft. Beat in the sugar, then stir in the lemon zest and ginger.
  • Stir in the flour and work with your hands to form a soft dough. Tip into the tin and press into an even, flat layer with your fingers. Prick all over with a fork and bake in the oven for 40 mins until pale gold. Cut into wedges then leave to cool completely in the tin. Remove from the tin and dust with caster sugar to serve.

These are gobbled up super fast every time I make them. I generally double the batch and make it in a 9x13 dish. See below directions for variations to make the gluten and dairy free.

1 cup flour
1/2 cup butter, softened
1/4 cup powdered sugar
2 large eggs
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350. Sift flour and powdered sugar into a 9 x 9 baking dish. Cream in the butter thoroughly. Pat out this crust to cover the bottom of the dish. Bake at 350 for 20 minutes.
  • Beat remaining ingredients together for 3 minutes (until light and fluffy). Pour over hot crust. Bake another 25 minutes or until no imprint remains when touched in center. Cool and cut into squares. Makes 16 cookies.
  • To make this gluten free, substitute your favorite wheat free flour. I recently made this with Brown Rice Flour and it was very well received. To make this dairy free choose a non-dairy margarine. I used Flieschman's unsalted and it really worked well.

8 ounces (2 sticks) unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour
3/4 teaspoon coarse salt
1/2 cup confectioners' or granulated sugar
1 teaspoon pure vanilla extract (optional)

Steps:

  • Butter an 8 1/2-inch cake or springform pan; set aside. Sift together flour and salt into a small bowl; set aside. Place butter in bowl of electric mixer fitted with paddle attachment. Cream until fluffy, 3 to 5 minutes. Add sugar, and continue to beat until very light in color and fluffy, occasionally scraping down the sides of the bowl with a spatula, about 2 minutes more. Add vanilla, if using. Add flour mixture, and combine on low speed, scraping with spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.
  • Pat dough into prepared pan. If rolling out dough to cut into shapes, form into a flat disk; wrap in plastic. Chill until firm, at least 1 hour.
  • Roll dough to 1/2 inch thick. Cut into 1-by-3-inch rectangles. Score with a knife; chill. Heat oven to 325 degrees. Bake until firm and just starting to color, 20 to 25 minutes.
