Iced Cherry Cake, made in a loaf tin, is a favourite for afternoon tea. Easy to make using the all-in-one method, this cake will keep for a couple of weeks.

300 g glacé cherries
200 g plain/all-purpose flour
2 teaspoons baking powder ((10ml))
Pinch of salt
175 g butter, (at room temperature)
175 g caster sugar
3 large eggs
75 g ground almonds
75 ml milk
2 teaspoons vanilla extract ((10ml))
250 g icing sugar
2 tablespoons hot water ((30ml))
4 glacé cherries

Steps:

  • Set the oven to 180°C/ 160°C fan/ gas mark 4/ 350°F
  • Grease a 2lb loaf tin with butter or use a paper liner
  • Halve the cherries, then wash in warm water and dry. This will remove the syrup and stop them from sinking too much. Quarter them if you want a better distribution. If you're short of time, don't bother to wash. The cherries may sink but the cake will still taste wonderful.
  • Put all the ingredients except the cherries into a large bowl and mix well with a mixer or in a food processor.(Flour, baking powder, salt, butter, sugar, eggs, ground almonds, milk, vanilla extract)
  • Add the cherries and fold in with a large spoon until they are evenly distributed through the mixture.
  • Put the cake mixture into the prepared tin
  • Cook for 60-75 minutes until well risen and golden and a skewer comes out clean. Test after an hour.If the top starts to brown before the centre is cooked, cover with baking parchment or foil
  • Take the cake out of the oven and leave in the tin for 15 minutes before turning out onto a wire rack to cool.
  • Sieve the icing sugar and add enough hot water to make a smooth icing that will spread but not run
  • Spread the icing over the top of the cake
  • Cut the cherries in half and arrange on top.

MARY'S CHERRY CAKE

A lovely cherry sponge cake with a little extra texture from the ground almonds. Dusting the cherries with flour helps stop them sinking to the bottom of the cake. Equipment and preparation: for this recipe you will need a 23cm/9in savarin mould or a bundt tin (alternatively use a 20cm/8in round cake tin).

200g/7oz glacé cherries
225g/8oz self-raising flour
175g/6oz softened butter, plus extra for greasing
175g/6oz caster sugar
1 lemon, finely grated zest only
50g/1¾oz ground almonds
3 large free-range eggs
175g/6oz icing sugar
1 lemon, juice only
15g/½oz flaked almonds, toasted
5 glacé cherries, quartered

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease a 23cm/9in bundt tin or savarin mould with butter.
  • Cut the cherries into quarters. Set aside five of the quartered cherries for the decoration later. Put the rest of the quartered cherries in a sieve and rinse under running water. Drain well then dry thoroughly on kitchen paper and toss in two tablespoons of the flour.
  • Measure all the remaining ingredients into a large bowl and beat well for two minutes to mix thoroughly. Lightly fold in the cherries. Turn into the prepared tin.
  • Bake in the preheated oven for 35-40 minutes until well risen, golden-brown and a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes then turn out and cool on a wire rack.
  • For the icing, mix the icing sugar together with the lemon juice to a thick paste. Drizzle over the cooled cake using the back of a spoon, sprinkle over the toasted almonds and reserved cherries.

In the 1950's, when cake mixes first came out, there was only chocolate, white or spice. To make something special, I came up with this.

1 (18 ounce) box white cake mix
1/3 cup vegetable oil
4 egg whites (or 3, per cake mix directions)
1 1/4 cups water (*see directions)
1 (8 ounce) jar maraschino cherries

Steps:

  • Preheat oven to 350.
  • Grease or Spray bottom of two 8 or 9 inch cake pans.
  • *Drain juice from cherries and add water to make 1 1/4 cups.
  • Chop cherries in half.
  • Beat cake mix, cherry juice/water, oil, egg whites and cherries in large bowl on low speed 30 seconds; beat on medium speed 1 1/2 minutes
  • Pour into pans.
  • Bake 30- 35 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes in pans.
  • Run knife around sides of pans before removing.
  • Cool completely before frosting.
  • A White Mountain icing is very good.

1 cup candied cherry (or marachino cherries drained & dried on paper towels for 4-6 hrs. or overnight)
2/3 cup all-purpose flour
1/3 cup butter
2/3 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/3 cup milk
1 cup powdered sugar
1 tablespoon butter
2 tablespoons water
red food coloring (optional)

Steps:

  • Preheat oven to 350°F
  • Grease an 8 inch bundt pan.
  • Dust with flour, then shake any excess.
  • Cut cherries in half and toss them in flour.
  • In a mixer, cream butter and sugar until creamy and light.
  • Add eggs, then vanilla.
  • Add dry ingredients that have been previously sifted and fold by hand alternating with milk.
  • Stir in cherries.
  • Pour into tin and smooth surface.
  • Bake for 35 min or until toothpick comes out clean of the center.
  • Let cool in pan for 10 min before unmolding.
  • For the glaze, stir all ingredients over a hot water bath or double boiler until smooth.
  • Pour over cake.

CHERRY FROSTING

Frosts a 13 X 9- inch cake or fills and frosts (two) 8- or 9-inch cake layers or 24 cupcakes. Adjust to consistency you like by adding more liquid or more powdered sugar. If your powdered sugar is lumpy you might want to sift it before whipping it. If you use milk instead of the cherry juice you might want to add a few drops of red food coloring.

16 ounces angel food cake mix
1 (10 ounce) jar maraschino cherries
water, to add to cherry liquid
1/2 teaspoon almond extract
1/2 teaspoon pure vanilla extract
1/4 cup granulated sugar
1 tablespoon reserved cherry juice
1 large egg white
3/4 cup marshmallow cream (1/2 of 7 oz jar)
1/2 cup chopped maraschino cherry (optional)

Steps:

  • Place a rack in center of oven.
  • Preheat oven to 325°F.
  • Set aside an ungreased tube pan.
  • Dump angel food cake mix in large mixing bowl.
  • Drain juice from maraschino cherries, reserving 1 tbsp for frosting.
  • To remaining maraschino cherry juice, add enough water to equal 1 1/4 cups liquid.
  • Pour this liquid along with almond and vanilla extract into dry cake mix in bowl.
  • Beat with electric mixer on low for 1 minute and stop and scrape down sides of bowl with rubber spatula. Increase speed to medium and beat for 1 minute more.Scraping down sides of bowl if necessary. Batter should look well blended.
  • Pour batter into pan.smoothing top with rubber spatula.
  • Place pan in oven on rack and bake till deeply browned and top springs back when lightly touched with fingers, about 38-42 minutes.
  • Remove from oven and immediately invert onto a glass bottle neck upside down to cool for 1 hour.
  • Remove from bottle and run a long knife around sides of cake.
  • Invert onto cooling rack and then invert onto serving platter.
  • Prepare cherry fluff frosting.
  • Place reserved cherry juice, sugar, and egg white into a medium size saucepan.
  • Cook over low heat, beating continuously with electic mixer on high speed, till soft peaks forms (2-3 minutes).
  • Remove pan from heat and add marshmallow cream and beat with electric mixer on high till stiff peaks form.about 2 minutes. Fold in chopped cherries, is using.
  • Spread frosting over top and halfway down sides of angel food cake and serve immediately.
  • We usually don't have any leftovers, so I am not sure how well this stores.
