CHICKEN CHASSEUR (HUNTER-STYLE CHICKEN)

1 (4-pound) chicken, quartered
Salt and pepper
Clarified butter
5 ounces cremini mushrooms, emincer (thinly sliced)
1 large shallot, ciseler (fine dice)
2 ounces Cognac
2 ounces dry white wine
1 1/2 cups enriched chicken stock
1/4 cup tomato concasse (peeled, seeded, and diced tomato)
1-ounce cold butter
1 teaspoon finely chopped fresh tarragon leaves
1 teaspoon finely chopped fresh chervil leaves or flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees F.
  • Season chicken pieces on both sides with salt and pepper. Heat a few tablespoons of clarified butter in a Dutch oven over high heat. Place chicken in skin side down and cook until golden brown. Turn the chicken over and brown the other side. Remove chicken to a baking sheet and bake in the oven until just cooked through, about 12 to 15 minutes.
  • Remove all but 2 tablespoons of the fat from the pan. Add the mushrooms, season with salt and pepper, and saute until golden brown. Add the shallots and cook for 30 seconds. Remove the pan from the heat and add the Cognac and cook until completely reduced. Add the wine and cook until completely reduced. Add the stock and tomato and bring to a simmer. Cook until the sauce is thick enough to coat the back of a spoon ("nappe") and then swirl in the butter ("monter au beurre"). Once the butter is added, the sauce can not be further reduced because it will break. Season with salt and pepper and stir in the tarragon and chervil.
  • Remove the chicken from the oven and let rest for 5 minutes. Remove the breastbone from the breast. Cut each breast into 2 even pieces on the bias. Cut the legs into 2 pieces at the joint and on the bias and remove the thighbones. Serve 1 leg piece and 1 breast piece. Make sure only 1 piece contains a bone. Serve on hot plates, napped with the sauce.

What could be more comforting than chicken breasts wrapped in bacon with BBQ sauce and cheese? Serve this easy chicken dish with mash or roast potatoes

1 tbsp vegetable oil, plus extra for the tray
2 skinless chicken breasts
4 rashers smoked back bacon
1 red onion, sliced
½ pack runner beans, ends trimmed
2 carrots, peeled and sliced
50ml sticky BBQ sauce
25g grated parmesan
4 potatoes, peeled and chopped
100ml milk
2 tbsp cream cheese

Steps:

  • Heat oven to 200C/180C fan/gas 6. Oil a tray, put the chicken breasts on it and cover each one with 2 bacon rashers. Put the chicken in the oven for 20-25 mins until cooked through.
  • While the chicken is cooking, fry the onion in 1 tbsp oil until golden brown and soft, then set aside. Put the potatoes in a large pan of boiling water and cook for 10-15 mins until soft. Put another smaller pan of water on the hob and bring to the boil while the potatoes are cooking. Once boiling, tip in the runner beans and carrots and cook for 8-10 mins until soft but with a little bite. Drain the potatoes and put them back in the pan with the milk and cream cheese, mash until smooth and stir though the fried onions.
  • Once the chicken is cooked, pour over the BBQ sauce and scatter over the parmesan and return to the oven for 2 mins until the cheese has melted. Serve with the mash, carrots and runner beans.

This sauce is also known as sauce chasseur. It's a nice brown sauce with mushrooms. I sometimes substitute this sauce when the recipe calls for golden mushroom soup.

2 tablespoons minced onions
2 tablespoons butter
1 cup chopped mushroom
1/2 cup white wine
1/2 cup tomato puree
1 cup left over home made beef gravy (or brown gravy/brown sauce made from a packet such as Knorr's)
2 -5 drops maggi seasoning (or other flavor enhancer like Kitchen Bouquet, or even Worcestershire sauce)
salt and pepper

Steps:

  • Saute onions in butter until very tender.
  • Add mushrooms and saute additional 2- 3 minutes.
  • Add wine, simmer, and reduce by half.
  • Add tomato puree and gravy and simmer for 5 minutes.
  • Adjust seasoning to your taste with Maggi, salt and pepper.
  • You can also add your favorite herbs to this sauce.

3 tablespoons olive oil, divided
1 tablespoon tomato paste
1/2 teaspoon salt

1 cup red wine
1 cup reduced-sodium beef broth
2 tablespoons creme fraiche or 2 tablespoons sour cream

Steps:

  • Saute bacon in 1 tablespoons olive oil until golden brown.
  • remove bacon to a bowl and saute onion in drippings until soft.
  • remove to bowl with bacon.
  • saute mushrooms in remaining 2 tablespoons olive oil.
  • return bacon and onions to skillet.
  • add tomato paste, thyme, salt, pepper, and paprika.
  • stir until tomato paste is dissolved.
  • add wine and reduce over medium heat for 5 minutes.
  • add beef broth and reduce over medium heat for 10 minutes.
  • stir in creme fraiche and parsley until heated through.
  • spoon over sauteed chicken breasts or veal/pork scallopine.

1 (14 1/2 ounce) can diced tomatoes
1/4 teaspoon dried oregano
1/4 cup red wine
1 1/2 cups fresh cremini mushrooms, quartered

Steps:

  • Combine the flour, salt and pepper in a plastic bag and shake chicken pieces in flour mixture until coated.
  • Heat oil in a large skillet and brown chicken pieces on both sides.
  • Remove from skillet and add onion, garlic and bell pepper to the skillet.
  • Saute until the onion is golden, even a little browned.
  • Return the chicken to the skillet and add the tomatoes, oregano and red wine.
  • Cover and simmer for 30 minutes over medium low heat, or until sauce thickens.
  • Add mushrooms, salt and pepper to taste.
  • Simmer for 10 more minutes (can simmer longer if you have the time and want a thicker sauce).
  • Serve over spaghetti or bucatini.

This is so so delicious, a classic pub favorite that is easy to make at home. You can make this recipe even simpler by simply buying a store bought barbecue sauce. But it's extra special when you make your own.

4 skinless chicken breasts
4 slices streaky bacon
1 cup grated mozzarella cheese
3 cups chopped onions
1/4 cup honey
1 tablespoon garlic, chopped
2 tablespoons lemon juice
1 cup sweet pepper, chopped
1 tablespoon salt
1/2 cup parsley, dried
3 tablespoons Worcestershire sauce
1 cup dry white wine
3 tablespoons vinegar
1 tablespoon liquid smoke
2 cups ketchup
1/2 tablespoon louisiana hot sauce

Steps:

  • To make the barbecue sauce, place all the ingredients into a large saucepan, bring to boil. The reduce heat to very low and simmer, covered for 2 - 3 hours. It can then be kept for a few days in the fridge and so can be prepared in advance.
  • Wash the chicken breasts and remove any sinew.
  • Wrap each breast in a piece of streaky bacon and place in a baking dish/tray.
  • Pour the barbecue sauce over the chicken breasts. You can then proceed to cook them immediately or they can be left to marinade for an hour or so and this will increase the flavor of the barbecue chicken.
  • Cover with foil and cook in a preheated oven 200°C or 400°F for 15 minutes.
  • After the 15 minutes are up, remove the foil and baste the chicken breasts with the sauce. Then return to the oven for a further ten minutes.
  • Remove from the oven and sprinkle the mozzarella cheese over each breast. Return to the oven for a few minuted until the cheese is melted and bubbling, serve immediately.

  • Heat 1.5 tablespoons of olive oil in a large 12-inch pan (like a sauté pan or one that's about 2.5 to 3 inches deep that comes with a lid) over medium-high heat.
