Steps:
- Preheat the oven to 350-degrees Fahrenheit, and ensure your cream cheese and sour cream are softened.
- In a large bowl, combine the refried beans, softened cream cheese, sour cream, taco seasoning, green chiles and half of the shredded cheese.
- Using an electric mixer, beat the mixture together until smooth and creamy, about 1 minute. Spread the mixture into an 8x8" baking dish.
- Sprinkle the remaining cheddar on top. Bake the bean dip for 20 minutes, or until the edges start to barely bubble.
- Let cool slightly, and then spread store-bought pico de gallo on top before serving with tortilla chips.

INSTANT REFRIED BEANS MIX OR BEAN DIP MIX

Steps:
- In a coffee grinder, food mill or blender, grind beans until a flour consistency. Mix all ingredients together until they are well blended. Store in a large airtight container or jar. TO USE: 3/4 C. Instant Refried Bean Mix 2 1/2 cups boiling water Combine bean mix and water in a medium-sized saucepan. Mix with a wire whisk until combined. Don't worry about the lumps, they are tasty and add texture to your beans. Bring to boil, cover, reduce heat to low and simmer for 4-5 minutes or until thickened. Mixture will thicken more as it cools. Refried beans will remain thickened even when reheating.

EASY REFRIED BEAN DIP
This refried bean dip is a healthy spin on the traditional cheese dip: it's plant based using refried beans, spices, and a salsa fresca topping.

- Make the Instant Pot refried beans or Homemade Refried Beans, making sure they are warm before serving. If using canned beans, warm them on the stovetop in a saucepan and stir until creamy, adding a little water or broth if they are too thick. (If you make the refried beans in advance, reheat them on the stovetop.)
- Stir in the green chilis, lime juice, ground cumin, smoked paprika, and hot sauce. Taste and add additional kosher salt if necessary. (If you're using canned refried beans, you may want to add additional cumin or lime
- For the salsa fresca topping, dice the tomato. Finely chop the red onion. Chop the cilantro. In a small bowl, mix the tomato, red onion and cilantro with the lime juice, cumin, and kosher salt. If using, thinly slice the jalapeno pepper into rounds.
- To serve, place the dip into a shallow dish. Top with the salsa topping and thinly sliced jalapeno pepper. Serve with tortilla chips.

INSTANT POT BEAN DIP (AKA REFRIED BEANS)
These beans make a great dip, side dish, or used in any recipe that calls for refried beans. Recipe is "mild" heat.

- Rinse & sort pinto beans then add to Instant Pot with vegetables, spices, herbs, and water (or stock).
- Set Instant Pot to "Bean/Chili" setting for 45 minutes.
- Let pressure release naturally - about 15-20 minutes.
- Once cooked, discard bay leafs.
- Add salt to beans as desired (check the salt level in the juice, not the bean) then mash or puree using a masher, food mill, food processor, blender, or stick-blender. If you mash by hand the beans will be more rustic, if you want them smooth then use a blender (I prefer to use a stick blender).
- Makes about 8 cups.

INSTANT REFRIED BEANS MIX
The texture after rehydrating isn't so good I would serve this on it's own. I find keeping this mix around is great when you want to make 7 layer dip or use refried beans in burritos, tacos or enchiladas. It's a great way to use that big bag of dried beans as well!

Easy and delicious! The cream cheese and green onions really make this dish special. This was originally a bean dip recipe, but we like it so much we serve it as refried beans too.

- If serving as a dip, place in crockpot on warm. Tastes even better if you make it up ahead of time, refrigerate 'til needed then reheat.

I made this the first time for public use at a pot luck at Alcatraz. It went over so well, I've been making it ever since. I figure a piece of paper is easier to give to someone than having to make this. I hope you enjoy it.

Steps:
- Mix together refried beans and 1/4 of salsa.
- Place mixture in bottom of 8 x 8 glass dish.
- Pour remaining salsa on top of bean mixture.
- sprinkle half of taco seasoning or to taste over salsa.
- Sprinkle chopped onions over salsa mixture.
- Spread sour cream over salsa mixture.
- Sprinkle cheese over top of sour cream.
- Cover and chill over night.
- Serve with Corn chips, crackers, dipping utensiles ect--.
