HUNGARIAN RICE WITH MEAT (HUSOS RIZS)



Hungarian Rice With Meat (Husos Rizs) image

This is a great way to use up leftover rice and meat from a previous meal, and tastes great! I like to serve this in a bowl with some vinegarette salad on the side. Frugality is popular in Hungary, so even leftovers are brilliantly used to recreate dishes. This is our version of "fried rice." I also like to put taco sauce or tomato juice into the mix for added flavor.

2 cups cooked white rice
1/4 cup corn oil
1/2 cup chopped yellow onion
1/2 cup chopped red bell pepper
1/2 cup peas
1 cup steak (cooked and cut into thin strips) or 1 cup pork (cooked and cut into thin strips)
1 teaspoon Hungarian paprika
1/2 cup chicken broth
1/2 teaspoon salt (or to taste)

Steps:

  • Using a medium-sized sauce pan, saute onions and bell pepper in oil on low until onions are clear.
  • Add meat, paprika, and stir for few seconds.
  • Add peas, chicken broth, some salt, and cover for a few minutes. Check if peas taste cooked.
  • Add cooked rice, and salt to taste. Mix thoroughly, and heat on low until rice is at desired temperature.
  • Optional: add 2-4 taco sauce seasoning packets from your favorite fast food restaurant or 1/4 cup tomato sauce and heat with rice.

1 tablespoon unsalted butter
1/2 medium onion, finely chopped
1/2 medium red bell pepper, finely chopped
1 1/2 teaspoons kosher salt plus 2 pinches
2 cups long-grain white rice
1 pinch saffron, steeped in 1/4 cup hot but not boiling water
2 1/2 cups chicken broth
1 1-by-2-inch strip orange zest
2 bay leaves
1/2 cup peas, fresh or frozen
1/4 cup golden raisins
1/4 cup pistachios, chopped

Steps:

  • Preheat the oven to 350.
  • Melt the butter in a 3-quart saucier over medium heat.
  • Stir in the onion, bell pepper and 2 pinches of salt.
  • Decrease the heat to low and sweat until the onion is translucent and aromatic but not browned, 3 to 4 minutes. Increase the heat to medium and add the rice. Cook, stirring frequently, until you smell nuts, another 3 to 4 minutes.
  • Add the saffron and its water, the broth, orange zest, bay leaves and the remaining 1 1/2 teaspoons salt. Increase the heat and bring to a boil.
  • OK, now the weird part: Thoroughly wet a clean towel, kill the heat, scatter the peas on top of the rice, then place the towel across the top of the saucier. Top with the lid, then fold the towel corners up over the lid.
  • Transfer the saucier (towel and all) to the oven and bake 15 minutes.
  • Remove and rest at room temperature for 15 more minutes without opening the lid.
  • Fish out the orange zest and bay leaves. Turn the pilaf out onto a platter, fluff with a large fork and garnish with the raisins and pistachios. Serve family-style, right in the middle of the table.

1 cup par-boiled rice
1 & 3/4 c cold water
1-2 peeled cooking onions halved
4-5 cloves of garlic minced
1-2 tsp Olive oil
1-2 tbls dried parsley
1 tsp salt and pepper to taste

Steps:

  • -Assemble all ingredients ahead for ease and no burning. -Heat pot on high, adding olive oil, add rice and stir constantly until some of rice becomes white then immediately add water. -add onions/garlic, stir -add salt/pepper/parsley, stir -cover and wait to come to good boil -turn heat to MINIMUM and let go for 20 minutes. YUMM!

1 onion, chopped
1 cup uncooked white rice
2 cups chicken broth
1 teaspoon salt

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
  • Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
  • Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

The fried onion makes this recipe. Originally made with Vegeta or Delikat , a food seasoning. Chicken cube will work just fine. As it's quite salty no salt needed.

1 cup rice
2 tablespoons oil
1 chicken bouillon cube
1 big onion, finely chopped
pepper
water

Steps:

  • Rinse the rice under water about 2 or 3 times.
  • Add the oil to the pot and add the onion.
  • When starting to get a light brown color add the rice.
  • Add water to just cover the top of the rice.
  • Add chicken cube and pepper.
  • The pot is covered and is left on medium heat for 30 minutes.
  • The rice should be checked on to insure the water has not boiled off.
  • If the water is low, add more.
  • After 30 minutes, the rice should be done.
  • If there is too much water , leave the cover off and leave on heat for a few more minutes to allow the water to boil off.

2 cups basmati rice
3 1/4 cups water
1 1/2 teaspoons butter
3/4 teaspoon salt
2 teaspoons cumin seeds
2 tablespoons canola oil
1 large onion, chopped
10 whole cloves
1 1/4 teaspoons ground turmeric
1 jalapeno pepper, chopped (optional)
1 1/2 teaspoons salt
1 cauliflower, in 1-inch florets (about 1 pound)
1/2 cup chopped cilantro, with stems

Steps:

  • To prepare the rice: Wash rice twice in cold water. Soak rice in 3 cups of water for 15 to 20 minutes. Drain rice.
  • In a medium pot with a lid, combine rice, 3 ¼ cups of water, butter and salt on high heat. As soon as the rice starts to boil vigorously, reduce the heat to low, cover and simmer for 18 to 20 minutes. Turn off the heat, but do not remove the lid. Allow rice to sit for about 5 minutes, then remove the lid and set aside.
  • To prepare the cauliflower: In a separate frying pan or a wok, heat cumin seeds in oil on medium-high heat. Once seeds have sizzled for 30 to 45 seconds, reduce the heat to medium and add onions and cloves. Sauté the onion for 8 to 10 minutes or until brown. Add turmeric, jalapeño and salt, and sauté for another 2 minutes. Add cauliflower, stir well and stir-fry for 5 minutes. Reduce the heat to medium-low, cover and cook for another 5 to 8 minutes, until cauliflower is cooked but still firm and not too soft.
  • Add cauliflower to rice and combine well. Add cilantro and stir with a large fork until the rice is completely yellow from the turmeric.
