Yield 1 whole garlic

1 garlic bulb
1 tsp olive oil

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
  • Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.

2 bulbs fresh garlic
1/2 cup olive oil

Steps:

  • Start by selecting the largest and firmest heads of garlic. The larger the cloves the more roasted garlic you'll end up with, but it will also take a little longer than using bulbs with smaller cloves.
  • Preheat your oven to 400F. Peel any loose skin of the bulb and discard it, but make sure to keep the bulb itself intact.
  • Cut the top of the garlic bulb open, exposing the individual cloves inside. (You can roast this 'top' as well). Place the bulb with the cut side up in an oven-safe pan and pour half a cup of olive oil over the top of the bulb, letting the oil sink into all the cracks.
  • Cover the pan with tinfoil or a tight-fitting lid and place the pan in the hot oven. That's it! After 40 minutes check the garlic to see if it has started to brown and the cloves are buttery soft.
  • Once the roasted garlic has cooled you can literally squeeze the roasted garlic out of the bulb as if they were in a tube.

  • Preheat oven to 400 degrees F (200 degrees C).
  • Arrange heads of garlic on a baking sheet. Sprinkle garlic with olive oil. Bake for 40 minutes to 1 hour, when the garlic is soft and squeezable, it is ready. Remove, let cool, and serve.

  • Preheat the oven to 400 degrees F.
  • Slice off the top each head of garlic to expose some of the cloves inside. Place the heads on a piece of foil. Drizzle with olive oil and wrap in the foil. Roast until cloves are lightly browned and tender, about 30 minutes.

Adapted from Deborah Madison's book Vegetarian Cooking for Everyone. This is the best method for roasting garlic. It creates the smoothest roasted garlic with the best flavor. It enriches and smooths the flavor and it great in just about everything (well, except desserts). Yield depends on the size of your head of garlic. This produces surprisingly little (perhaps 2 tbs the first time I did it), so if you would like a larger quantity you may want to double or triple the recipe.

Yield 1 head roasted garlic

1 head garlic
1 teaspoon olive oil (approx) or 1 teaspoon butter (approx)
2 tablespoons water (approx) or 2 tablespoons stock (approx)

Steps:

  • Preheat oven to 350°F.
  • Peel the head of garlic of all the papery skin with the exception of the very last layer.
  • Garlic should still hold together in its original shape, but individual cloves should be visible.
  • Rub head and inside of oven proof dish (a ramekin, custard dish will work) with butter or olive oil.
  • Put water/stock in bottom of dish.
  • Cover dish with foil and place in preheated oven for 45 minutes.
  • After the 45 minutes are up, uncover the dish and bake for an additional 30 minutes.
  • Remove garlic and dish from oven and allow to cool.
  • After cooled, remove cloves and squeeze the roasted garlic from the cloves into a dish or container.
  • The roasted garlic should be a light yellowy-brown and very soft and sticky.
  • Store in the refrigerator and use in place of garlic for a milder and delicious flavor.

Certainly you can use roast garlic in many different recipes!

1 head garlic (elephant garlic has many cloves & works well)
2 tablespoons olive oil (or more)
salt and pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Slice off the very top of the garlic head. Place in a piece of foil and drizzle olive oil inside the head of garlic until it is completely filled and just starting to run down the side.
  • Wrap tightly with foil and place on a cookie sheet and bake until tender and fragrant, roughly 35 minutes.
  • Remove from the oven and let cool. Peel outside off of bulb of garlic, then gently squeeze each clove out.
  • Use in the recipe of your desire, or simply spread on bread for a wonderful addition to any meal.
