GRAPE FRUIT LEATHER

Steps:
- Puree the grapes in a blender or food processor, in batches if necessary, until very smooth. Pour the puree into a fine sieve and press hard with a spatula to extract as much juice as possible. Puree the grapes again and put them back into the sieve. Press again and reserve the juice for another recipe. There should be about 2 cups of grape puree.
- Pour the puree into a small saucepan with the sugar and lemon juice and bring to a boil. Simmer, stirring often and scraping the sides, until the puree turns glossy and darkens slightly, about 30 to 45 minutes.
- Preheat the oven to 200°F using convection mode if available. Line a large-rimmed baking sheet with a silicon baking sheet. Pour the puree onto the mat and spread into an 1/8-inch thickness using an offset spatula, leaving a 1-inch border of space around the edge. Bake 1½ to 3 hours, rotating the tray halfway through, until the puree is tacky and not quite dried in the center. Let stand at room temperature until fruit leather peels easily from the tray, 24 hours to 48 hours.
- Place a piece of parchment paper over the fruit leather and invert. Peel off the silicon baking sheet and starting at the long end, roll up the fruit leather and parchment. Using scissors or a sharp knife, cut the fruit leather roll into 1-inch segments. Store in a resealable plastic bag for up to 1 week at room temperature or 2 to 3 months in the freezer.

- Preheat the oven to 150 degrees F (65 degrees C). Cover a baking sheet with a layer of plastic wrap or parchment paper.
- In the container of a blender, combine the sugar, lemon juice, apple and pear. Cover and puree until smooth. Spread evenly on the prepared pan. Place the pan on the top rack of the oven.
- Bake for 5 to 6 hours, leaving the door to the oven partway open. Fruit is dry when the surface is no longer tacky and you can tear it like leather. Roll up on the plastic wrap and store in an airtight jar.

- Sort and wash grapes; remove stems. Place grapes in a steamer basket; place in a large saucepan over 1 in. of water. - Preheat oven to 170°F.
- Line two 17-by-12-inch baking sheets with a silicone baking mats.
- Place the grapes, lemon juice and honey (if using) in a high speed blender and blend until smooth.
- Spread the mixture evenly onto the baking sheets.
- Bake until the leather is no longer sticky to the touch, about 3-4 hours.
- Rotate the pans 180 degrees and swapping levels halfway through.
- Lay a sheet of parchment on top of the fruit leather.
- Invert the leather and gently peel off the mat.
- Cut the leather into strips.
- Roll up and store in an airtight container.

BAKED GRAPEFRUIT
Steps:
- Heat oven to 450 degrees F. Remove the ends of the grapefruits to stabilize on the cutting board. Using a sharp knife, remove the skin and bitter pith from the flesh. Over a small bowl, hold grapefruit in 1 hand and carefully remove the segments by sliding the knife between the flesh and the membrane. Toss grapefruit pieces with brown sugar and vanilla and divide among 6 ramekins. In a large bowl, beat egg whites until light and fluffy. Add sugar and beat until meringue is glossy and holds stiff peaks. Top each ramekin with 1/4 cup of ice cream. Cover with meringue and bake until golden brown, about 7 minutes.

- Cut the grapefruit in half and thoroughly loosen all sections with a knife. Dry the cut surface with a paper towel.
- Put the sugar in a 10-inch heavy skillet and place over medium-high heat. Add 2 tablespoons water to the pan and swirl it into the sugar. Continue swirling until the sugar melts and darkens slightly, approximately 3 to 5 minutes; do not let it burn. Immediately add the grapefruit halves, cut sides down, and turn off the heat.
- Move the grapefruit in the pan to coat the surface. Using tongs or two spoons, transfer to serving dishes, cut sides up. Sprinkle with mint and serve immediately.
