THE BEST GREEN BEANS EVER
Ree Drummond's Best Green Beans Ever recipe, from The Pioneer Woman on Food Network, starts with bacon grease and gains even more flavor from chicken stock.

Steps:
- Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
- Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

- Select & Buy Green Beans. Use frozen green beans for pureeing; fresh green beans can have a grainy texture after blending. Green beans are delicious alone or mixed with a variety of other veggies (and even yogurt).
- Wash the Green Beans. We recommend that you use frozen green beans since fresh can become grainy after pureeing; if you follow our advice, skip this step and move on to the next.
- Cook the Green Beans. Place the green beans in a steamer and cook for 3 to 5 minutes, or until tender. Drain green beans and rinse with cold water for three minutes to stop the cooking process.
- Puree the Green Beans. Puree green beans in a food processor or blender until smooth. Add water as needed to reach desired consistency. Once baby is ready for finger foods, typically around 10 months, you can serve her whole green beans cut into tiny pieces.

- To steam green beans simply Simply add water to the bottom of the steamer, put the steamer basket in place, and add your prepared green beans to the basket. Place the lid on and turn on the burner. Once steam begins to build up you want to steam the green beans for about 10-12 minutes.
- How to Make Green Bean PureeNext add the green beans to the blender. I usually fill mine about 1/3 full at a time and blend in batches to help speed the process up. You need to also add a little water at this time. If you want to add back in some of the nutrients that were lost during steaming you can use the water that you used to steam the green beans. Just be sure that you use a good quality filtered or RO water when you steam them.
- Start with a few tablespoons of water as you can always add more. If the green beans get too thick they will not blend well. So keep stopping and scraping down the sides of the blender as needed and adding water until all the green beans are smooth and blend well.
- You want it to be somewhat thick and not runny, so don't add too much water. You basically only want to add as much water as is needed to help the blender out. Otherwise the green beans will just stick to the sides and won't fall down to the blades.
