My family loves canned creamed corn but I can't stand it. I finally came up with this recipe so we could all get along at supper. LOL!

1 (10 -16 ounce) package frozen corn, cooked
water, for cooking corn
3 tablespoons butter
3 tablespoons flour
2 cups milk
2 -3 tablespoons sugar
salt and pepper (optional)

Steps:

  • Cook corn according to package directions; I use the microwave.
  • Melt butter in saucepan, stir in flour and blend well.
  • Add milk, about 1/2 cup at a time, and blend with whisk.
  • Cook over medium heat until thickened.
  • Stir in sugar, salt and pepper.
  • Add cooked, drained corn.
  • Hint: sometimes I use part milk, part cream.

2 Tablespoons Flour
1 teaspoon Sugar
Salt and Pepper to taste

Steps:

  • Remove shucks, clean and silk the corn as needed.
  • Stand ear of corn on end inside a large bowl.
  • Cut halfway through the kernels of corn, slicing off with a sharp knife.
  • Using the back of knife, scrape out the remaining corn from each ear of corn.
  • Place butter in a skillet, over medium heat on your stove top.
  • Add corn.
  • Add sugar.
  • Add Salt.
  • Add Black Pepper, to taste.
  • Stir and let cook until corn tastes done.
  • Mix 2 Tablespoons flour with 2 Tablespoons of water.
  • Pour flour-water mixture into corn.
  • Let cook for several minutes, until mixture thickens.
  • Serve warm and Enjoy!

1/4 cup finely chopped salted fatback
1 tablespoon butter
1/4 cup finely chopped Vidalia onion
1 cup grated white corn, with all pulp scraped from the cob
1/4 cup heavy cream
1 teaspoon sugar
Salt and freshly ground black pepper
Lemon juice

Steps:

  • Place the cold fatback into a saute pan and begin to heat over medium-low heat. Allow the fat to melt and render as slowly as possible to insure that the pieces are completely rendered but remain very light golden brown. Add the butter to the pan, then the onions and allow the onions to sweat until very soft. Mix together the corn with the heavy cream and sugar, and add to the pan of fat and onions. Increase the heat to high and stir vigorously to emulsify the mixture. Once the mixture has reached a boil, turn off the heat and continue to stir for 30 seconds. Season with salt, black pepper and lemon juice. Serve immediately.

  • Heat 75g butter in a heavy-based pan until foaming and fry 1 finely chopped onion for about 5 mins. Cut the kernels off 3 corn cobs and add to the pan with 125ml water. Turn down the heat, cover and cook gently for 10 mins. Add 1 tsp sugar and 125ml single cream, season and cook, uncovered, for 5 mins more.   • Remove the husks and silk from the ears of corn and rinse well. Cut about 1 inch or so off of the top of each ear to make a flat end. Stand an ear on its flat end on a wide bowl or plate and, with a sharp knife, cut downward through several rows. Don't cut too close to the cob; cut the corn kernels about 3/4 of the way through. Once the kernels are cut from the cob, scrape the corn with the back of the knife to get all of the "milk" and pulp.
  • Melt the butter in a large skillet over medium-low heat.
  • Add the corn and juices, the 3 tablespoons water, and sugar. Cook, stirring, until the corn is tender.
  • Stir in flour and water mixture, salt, and pepper, blending well. Continue cooking, stirring, for 2 minutes.
  • Gradually add the milk and cream cheese, stirring constantly. Cook for about 2 minutes longer. Do not let the mixture boil.

15 ounces whole kernel corn (fresh or frozen also can be used)
2 tablespoons self-rising flour
1/2 cup milk
1/4 cup whipping cream
1/2 cube chicken bouillon cube, crushed
salt and pepper, to taste
1 dash of crushed red pepper seasoning (optional)

Steps:

  • Drain a can of whole kernel corn and place in a saucepan on the stove. Heat on medium to high heat.
  • Sprinkle flour and chicken bouillon over corn and stir well.
  • Turn heat up and add milk,whipping cream, salt and pepper and a dash of red pepper. Stir well.
  • Bring to a boil stirring constantly til flour thickens in milk.
  • Serve and enjoy!

  • In a liquid measuring cup or small bowl, combine water and sugar. Stir until the sugar dissolves, then add to the corn, along with the melted butter. Stir until evenly combined.
  • Cover with a plate and microwave for 3 minutes.
  • In a liquid measuring cup or small bowl, combine the half and half and cornstarch.
  • Remove the bowl from microwave, stir, cover, and microwave for 3 minutes more.
  • Remove the bowl from the microwave and add the half and half mixture. Stir to combine. Microwave for 6 minutes, until the corn has softened.
  • Let cool, then top with sliced scallions.
