1 lb fruit, prepared (for cooking)
1 teaspoon gelatin powder
1/4 pint water
1 tablespoon sugar
3 tablespoons powdered milk
3 drops flavoring

Steps:

  • Cook the fruit with the sugar and as little water as possible. Allow to cool, then beat until smooth pulp.
  • Make the Marshmallow Foam.
  • Allow the fruit to become quite cold then blend it with the Marshmallow Foam and spoon into glasses.
  • Marshmallow Foam - Soften the gelatine with about 2 tablespoons of cold water.
  • Heat the remainder of the water, pour over the gelatine and stir until dissolved.
  • Add the 1 tablespoon sugar and gradually whisk in the milk powder. Continue whisking until the mixture is light and fluffly.
  • Add the flavouring.

I used to wonder how Starbucks made such a beautiful cloud-like cold foam that perched on my cold brew. This recipe makes enough Cold Brew for one week, and enough foam for two drinks! foam it up every day of the week.

8 ounces coffee beans, coarsely ground
1/2 cup whole milk, very well chilled

Steps:

  • In a large container, that fits in your refrigerator; combine the ground coffee and 6 cups of cold water. Stir well until coffee is fully mixed in . Cover, and allow the coffee to steep 12 hours. Coffee can steep up to 24 hours in the refrigerator.
  • Place a fine mesh strainer over a large bowl. Line the strainer with a few layers of damp paper towels, or cheesecloth. You may need to strain the coffee in batches. The coffee should also be strained until it is completely clear of particles, perhaps more than once. Once the coffee is strained transfer it to a pitcher with a lid, and return it to the refrigerator.
  • Copycat Starbucks Cold Foam For Two:
  • In the carafe of a french press, or milk frother add milk. Close top and plunge press 5 for 6 times until milk consistency changes to a light foam, with very small bubbles. Do not over-pump.
  • Make Two Drinks:.
  • Fill two tall glasses 3/4 full with ice cubes, top with cold brew, leaving about 2 inches for Copycat Starbucks Cold Foam. Dividing evenly, carefully pour Copycat Starbucks Cold Foam over cold brewed coffee, so it rests on top; serve immediately.
  • Remaining coffee can be stored in the refrigerator for up to a week, tightly covered.
