CHESAPEAKE CRAB BUTTER SAUCE

Steps:
- over medium heat saute garllic and shallots in 2 tbsp of butter until garlic and shallots have softened. then add in heavy cream and reduce by half
- Turn heat to low and then begin whisking in butter 2 tbsp at a time until the sauce is smooth. finally gently fold in the crabmeat, avaid breaking up the lumps as much as possible. finish off the sauce with the parsley. Sauce is complete as soon as the crabmeat is warmed. Do not raise heat or butter will seperate from the sauce

- Put all the ingredients into a bowl and whisk until well blended. Refrigerate until ready to serve. May be made 1 week in advance.

This spice mix is similar to Old Bay Seasoning and really ups the volume when used with all types of seafood.

- In a small mixing bowl, stir together salt, cayenne pepper, celery seed, paprika , mustard , black pepper, bay leaf, allspice , ginger , nutmeg , cardamom, and cinnamon until well combined.
- Store this seasoning mix in a tightly covered container at cool room temperature in a cool, dark place. While it is best to use this Chesapeake Bay seasoning mix within a month to retain freshness, it will keep for several months if it is stored correctly.

EASY CHICKEN CHESAPEAKE
Steps:
- Place chicken breasts on pan and season with Old Bay Seasoning to taste. Bake for 10 min at 400 degrees F.
- While chicken is baking, mix crab meat and cooking cream in a large bowl. Add 1 Tbsp. Old Bay, lemon juice, and 3/4 cup cheese.
- Remove chicken from oven after 10 min and top each chicken breast evenly with crab mix. Bake for another 10 min.
- Top with remaining 1/4 cup cheese, and continue to bake until chicken is done.
