MANDARIN ORANGE CAKE

This was a favorite cake growing up. The middle gets sunken, all good from the topping sinking into it. You may wnat to double the topping so you can pour extra over the edge pieces of the cake, they don't seem to get as much of the topping sinking in as it all flows to the middle of the cake.

2 cups sugar
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
2 eggs
2 cans drained mandarin oranges
3/4 cup brown sugar
3 tablespoons milk
2 tablespoons butter

Steps:

  • Preheat oven to 350F degrees.
  • Beat the eggs, add oranges and dry ingredients, sugar, flour, baking soda and salt, beat on low speed until combined Pour into a greased and floured pan.
  • Bake for 30-35 minutes.
  • In a small saucepan bring the final 3 ingredients to a boil and pour over the hot cake as soon as it comes out of the oven Serve with whipped cream.

This is a light and easy chicken dish with a brightly-flavored sauce of Mandarin orange juice, lemon juice, soy sauce, and honey. The chicken is then served with the oranges and topped with slivered almonds and chow mein noodles on a bed of rice. The whole thing takes about 15 minutes to prepare and about 30 minutes to cook, so long as you defrosted the chicken ahead of time. Enjoy!

1 (11 ounce) can mandarin oranges, reserve liquid
3 tablespoons honey
1 lemon, juice of
2 tablespoons soy sauce
1 teaspoon dried ginger
3/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 lbs boneless skinless chicken breasts, cut into strips
2 tablespoons butter
2 tablespoons oil
chopped cashews or slivered almonds, as garnish
3 cups hot cooked rice

Steps:

  • Make the sauce by combining reserved orange juice with honey, soy sauce, lemon juice,, and ginger in a small bowl.
  • Blend well and set aside.
  • Combine flour with salt and pepper in a shallow pie pan.
  • Set aside.
  • Trim off any fat and white veins from chicken breasts and slice each breast into about three strips.
  • Dry between double layers of paper towels.
  • Heat butter and oil in large skillet or wok over medium-high heat.
  • Coat all sides of chicken strips in seasoned flour and brown lightly in skillet.
  • Reserve browned pieces on a plate lined with paper towels.
  • When all chicken is browned, pour sauce into wok or skillet.
  • Place chicken in the sauce and turn to coat.
  • Reduce heat to medium-low, cover, and simmer for 20 to 30 minutes, or until chicken is tender and white throughout and sauce begins to caramelize on the chicken.
  • Turn several times during cooking to coat evenly with sauce.
  • Meanwhile, prepare rice.
  • When chicken is done, remove from heat and quickly stir in the Mandarin oranges.
  • Sprinkle with your chosen garnish and serve over rice.

  • Prepare your canner. Place your canner centered on the heating element. Put rack on the bottom. Fill halfway with clean water. Preheat to a gentle boil to approximately 140°F.
  • Clean your jars, lids, rings, and equipment. It is no longer required to sterilize your jars if you are processing for ten minutes or longer, but it is necessary to clean them before using.
  • Clean your mandarin oranges. Clean in warm, soapy water with baking soda to remove any residue from the peels.
  • Prepare Simple Syrup. ⅓ C of sugar. 4 C of water. Simmer until sugar has dissolved. This was just enough for my 8 half-pints (4 pints). You can increase the recipe if you have more to do.
  • Peel Oranges. Peel the oranges and set them aside. You may want to use them to create a DIY citrus vinegar cleaner, or you may want to use them to make candied orange peels, or maybe even dehydrate them for use in a simmering pot, a firestarter, or a quick orange zest.
  • Fill jars with orange segments. You'll want to stuff it full, but not going above your ½" headspace.
  • Fill jar to ½" headspace. Fill to a ½ headspace with your light syrup. Note: If you would like to do without the sugar, use water instead. Orange juice is also another viable option.
  • Debubble. Using a skewer or a debubbler tool (not metal), debubble your jar to make sure no air pockets are left. If you find that you have dropped below the ½" headspace, add one more segment or a little more liquid.
  • Wipe rims. Use your clean cloth or paper towel dipped in vinegar to wipe the rim of the jar to remove any syrup or debris. This is also your last chance to check for cracked or chipped rims.
  • Seal jars. Placing a jar lid on (without touching the bottom - this is where a lid lifter comes in handy), then place ring on finger tight (don't crank it super tight -just until it resists a little).
