- Add More Eggs. To get an extra rich and moist cake, stir in two extra egg yolks along with the eggs the recipe calls for (save the egg whites to make these delicious meringues).
- Walk Away from Water. Water tastes like, well, water! Swap it out for another liquid, preferably something with flavor and fat. Substitute whole milk or your favorite non-dairy milk (almond and coconut milk work especially well).
- More Fat, More Flavor. Most box cake recipes call for vegetable or canola oil. The only trouble is, these oils have almost no flavor. Replace the oil with an equal amount of melted butter (and a pinch of salt if using unsalted butter), to boost richness.
- Amp Up the Chocolate. Boost the flavor of a boxed chocolate cake mix by adding hot water instead of tap. The hot water helps to "bloom" the cocoa (just like adding hot water to coffee grounds).
- Top Up the Tasty Bits. The vanilla powder added to your boxed cake mix might be past its prime. Bump up the flavor by adding ½ to 1 teaspoon of vanilla extract.
- Love Up the Layers. After baking and cooling your cake, slice it in half or thirds, and add something special to those layers. For extra moisture and flavor, you can brush each layer with simple syrup, jam or marmalade, or even a bit of your favorite booze (like coffee-flavored liqueur for tiramisu cake or a bit of rum for a spiced orange cake).
- Poke Around. Another way to soak your cake in flavor is to poke holes in the cake, pour a flavored mixture over the top, and let it soak into the holes.
6 EASY HACKS TO MAKE BOXED CAKE TASTE LIKE BAKERY CAKE
From thecraftybakingnurse.com
- Butter is better. Instead of oil, I used unsalted butter. I have also used salted. Either one will work and produce the same result. I have quite literally never seen a difference between them.
- Milk does a body good, in this instance anyways. Instead of 1C of water, I use 1C of milk. One of the liquid’s jobs in cake baking is to get the batter wet enough for the chemical reactions to take place.
- The more eggs the moister. I use 4 eggs instead of 3. Adding eggs gives the cake a richer flavor and makes it moister. (More moist?) It also makes the cake fluffier and lighter.
- You can add a dollop of sour cream to your cake mix to up the moisture factor. When I initially heard this, I thought for sure it would add a funny taste to my cake.
- Add pudding to your cake mix. I don’t mean Sack Pack pudding. However, adding a box of instant pudding (just the powder, not the made pudding) can be a fun addition to your yellow cake.
- Let your ingredients get to room temperature. Your eggs and butter will do better if you let them get to room temp before using them in your cake. I don’t know why.

- Add an extra egg. Adding an extra egg to a boxed cake recipe is a longtime trick to amp up the moisture and density. Most box recipes call for three eggs — try four and you'll be pleasantly surprised.
- Swap milk for water. If the recipe calls for a cup of water, try a cup of milk instead. I used whole milk, but any milk, including non-dairy ones, should work just fine.
- Or try coffee … or soda! Instead of water, considering something else to add flavor. I came across a lot of recommendations to swap coffee for water, especially in chocolate cakes, to achieve a richer, deeper chocolate flavor.
- Add mayonnaise. This might sound weird at first, but think about it: mayo is mostly just egg yolks and oil, which are already in the cake anyway! Once again, the logic here is that the mayo will add moisture, which we've already established is a very good thing when it comes to cakes.
- Add a box of instant pudding. Another tip is to toss in a box of instant pudding — just the powder; don't prep the pudding first. I was skeptical of this at first, since all the other tips I came across focused on adding moisture to a cake.
