Heat a seasoned cast iron skillet on medium-high for about 5 minutes. In the last minute, add ½ tablespoon butter to the skillet and melt.Salt and pepper the scallops and add them to the skillet. Cook for about a minute on each side. Remove the scallops and place on a clean plate. Turn off the heat and add remaining 1 tablespoon butter to the cast iron skillet. Allow to melt and then add lemon juice. Mix and then pour into a bowl for serving.Serve scallops with your favorite pasta or with vegetables. Drizzle lemon butter sauce on top of the scallops. Steps:
- Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
- Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve immediately.
EASY FRIED SCALLOPS
I experimented with some ways to cook scallops one night with my family. This was everyone's favorite and it has become a regular dish at our family fry nights. If serving as a main dish, make twice as many servings as people (about 8 scallops per person).

- Pat the scallops dry with a paper towel and season with salt and pepper.
- Heat a large non-stick pan with 1/2 tbsp of olive oil and 2 tbsp of butter on high heat. When the pan is hot, add the scallops and cook for 3-4 minutes undisturbed. Remove the scallops from the pan and transfer to a large plate tented with foil to keep them warm.
- Reduce the heat to low and melt 3 tbsps of butter with 1.5 tbsps of chopped parsley. Spoon the parsley butter over the scallops and serve hot.

Steps:
- Choose a saute pan large enough to hold all of the scallops in one layer without overcrowding the pan or without them touching each other. Cook in batches if necessary. Heat the oil and 1 tablespoon of the butter until nearly smoking. Add the scallops and do not move or shake pan, but allow the scallops to brown well on one side before tossing the pan to flip them or gently turning them with a spatula to cook the second side.
- Remove the scallops from the pan and place on a warm serving platter. Return the pan in which the scallops had been cooked to the fire, add the remaining 2 tablespoons of sweet butter, and cook until the butter begins to turn a light brown color. When the butter has browned to a hazelnut color add the lemon juice and chopped parsley.
- Pour the classic lemon butter over the scallops, garnish with heart-shaped croutons and serve promptly.

- Remove catch muscle if needed. Rinse scallops under cold water and thoroughly pat dry with paper towels or a clean kitchen towel. Season with salt and pepper.
- Heat grapeseed oil in a large stainless steel, non-stick, or cast iron skillet over medium-high heat. Test the pan’s heat by sprinkling a tiny bit of water in it—if the water evaporates on contact, the pan is ready.
- Place scallops in the pan in a single layer, leaving about an inch of space between each one and working in batches if necessary. The first scallop should sizzle on contact with the pan; if not, wait a few seconds for the pan to get hot before adding the rest.
- Cook scallops until golden brown on the bottom, about 2 minutes, then flip using tongs. (If the scallop doesn’t release easily, give it a few extra seconds in the pan.) Add butter, and swirl to coat scallops.

- Clean Them. scallop-foot.JPG. You don’t need to wash scallops, so not much is required of you here. But some scallops come with what is called a “foot” still attached.
- Dry Them. scallops-paper-towel.jpg. This step is maybe the most important when it comes to cooking scallops to browned perfection. You will have a really hard time achieving that signature look if your scallops are at all wet.
- Prepare Your Pan. scallops-fresh-on-pan.JPG. Make sure to pick a pan that has enough space for you to spread out the scallops. They should have a few inches between them and not be touching.
- Season Them. scallops-cooking.JPG. Just before you’re ready to cook, sprinkle a little bit of kosher salt on each scallop. You want to do this mere seconds before cooking because salt brings out moisture—if the scallops you’ve spent a few minutes drying are left sitting too long salted, they will get wet again, and I can’t emphasize enough how much moisture is not our friend here.
- Brown Them. scallops-browned.JPG. Place each scallop with one flat side in the pan, making sure not to crowd them, and give each scallop a quick little press to make sure it makes full contact with the heated surface.
