You have been cooking peas wrong your whole life. Peas are supposed to taste GOOD-- here's how to do it.

1 pound frozen green peas
6 tablespoons butter (salted, sweet cream)
2 teaspoons sugar
3 cloves garlic (fresh, crushed)
kosher salt (to taste)
black pepper (to taste)

Steps:

  • Combine peas, butter, sugar, and garlic in a medium-sized skillet.
  • Cook at medium heat until butter is melted and peas are heated through, about 5-7 minutes. Stir occasionally.
  • Remove from heat, drain off any liquid, add salt and pepper. Serve.

20 ounces frozen peas
1 (10 1/2 ounce) can cream of mushroom soup
8 ounces swiss cheese, grated
1/2 cup dried breadcrumbs
1/4 cup margarine, melted

Steps:

  • DO NOT thaw peas. Break apart with hands and place in bowl.
  • Mix frozen peas with cream of mushroom soup and 4 ounces of the grated swiss cheese.
  • Pour into 8x8-inch casserole dish. Top with remaining 4 ounces grated swiss cheese. Mix together bread crumbs and melted margarine. Sprinkle over top of casserole.
  • Bake, uncovered, in 400 degree oven for 35 to 40 minutes. If top starts getting brown too fast, loosely cover with aluminum foil.

This is my recipe for cooking frozen peas or butter beans (Lima beans) in the pressure cooker. We put up purplehulls, crowders and butter beans from our spring garden (yes, we are Southerners), but this recipe works with any frozen legumes, either home frozen or store bought.

16 ounces frozen peas (Lima beans, or any legume)
2 slices hickory smoked bacon
1 1/2 cups water
1 teaspoon salt (mol to taste)

Steps:

  • Add all ingredients to 4 or 6 quart pressure cooker.
  • Cover and bring to pressure, reducing heat when control starts to jiggle.
  • Cook for 6 minutes, turn off heat and allow cooker to depressurize naturally.
