SIMPLE BOIL AND BAKE CRISPY CHICKEN WINGS
This is more of a method than a recipe, but this is how I always make wings now. I find boiling them first helps get rid of more of the fat, and they get crispier in the oven.

Steps:
- Boil wings in a large pot of water for about 15 minutes.
- Broil wings in oven for about 5-10 minutes per side depending on how your oven works) until nicely browned and crisp.
- I put the bbq sauce in the bottom of a big metal bowl and keep it on the stove near the oven vent so that is warms up a bit.
- Remove the wings from the oven and pat with paper towels to remove more grease if necessary (I bake mine on parchment paper, so that absorbs some of the grease for me).
- Toss wings in bowl with bbq sauce (or any sauce you want) until well covered.

- Cut the wings into flats and drummettes or leave them whole.Clean and pat the chicken dry then add into a pot.
- Add onion, black pepper, thyme, salt, bay leaf and water.Make the water atleast 1 inch above the chicken in the pot.
- Cover the pot and cook the chicken wings on medium heat for 15 minutes or till it's tender and juicy.
- Remove the chicken from the broth and save the broth to make gravy or use in other recipes that requires chicken broth.
- Serve the chicken wings or you bake or broil for a crispy, golden skin finish. You can also brush with sauces like bbq sauce, teriyaki, or buffalo sauce.

BAKED BUFFALO CHICKEN WINGS
Sticky spiced wings make great finger food or canapés, and this version skips the deep-fried stage so they're healthier

- In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
- Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.
