CINNAMON CRESCENTS
I've had the recipe for these crispy cinnamon-sugar roll-ups for years. They're one of my family's favorites and so easy to make. We enjoy them at breakfast with a cup of coffee. -Emily Engel, Quill Lake, Saskatchewan

Steps:
- Combine flour and baking powder in a large bowl; cut in butter until crumbly. Stir in milk and egg. Divide into three portions; shape each portion into a ball., Combine sugar and cinnamon; sprinkle a third over a pastry board or a surface. Roll one ball into a 12-in. circle; cut into 12 wedges. Roll up from wide edge. Repeat with the remaining dough and cinnamon sugar. Place rolls with point side down on a lightly greased baking sheets; form into crescent shapes. Bake at 350° for 16-18 minutes or until lightly browned (do not overbake)., For optional glaze, combine confectioners' sugar, cinnamon and milk until smooth. Drizzle over cooled crescents.

- Divide pastry in half and roll each half into a 10-in. circle. Transfer to two ungreased 12-in. pizza pans. Using a pizza cutter or sharp knife, score pastry into wedges (do not cut through). - In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic. - In a medium bowl, beat together cream cheese, 1/4 cup sugar and egg yolk.
- In a small, shallow bowl, mix 3/4 cup sugar and cinnamon.
- Spread one side of each bread slice with the cream cheese mixture. Roll bread slices jelly roll fashion, and dip into melted butter. Place each piece of bread in the sugar mixture, and coat evenly. CINNAMON PALMIERS
Steps:
- Sprinkle a flat work surface with 1/4 cup sugar; unfold puff pastry over sugar and roll out to a 15x10-inch rectangle. Brush pastry with butter. Mix 1/3 cup sugar, cinnamon, and cardamom in a small bowl; sprinkle evenly over buttered pastry.
- Starting with a long edge of the pastry, roll pastry tightly around filling, stopping in the middle. Repeat with the opposite edge, meeting the first roll. - Stir together the flour, sugar, baking powder and salt in a large bowl or the bowl of a standing mixer with the paddle attachment. Dice the butter into the mix and rub it in with your fingers or mix until the mixture resembles coarse breadcrumbs.
- Add the cream and vanilla extract and mix or knead briefly just until it comes together. Transfer the dough to a lightly dusted work surface.
- Pat or roll it out to a wide rectangle about 15 x 40cm. Fold a third of the dough into the centre, like an envelope, and fold the other end over to make 3 layers. Turn it 90 degrees and roll out again to a similar size.
- Make the filling: melt the butter and stir with the sugar and cinnamon. Brush it all over the dough in an even layer.
