MARINADE FOR CHICKEN, PORK OR BEEF
This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

HP SAUCE
This is a clone for the famous English "Houses of Parliament" steak sauce & a must have recipe for all canadians living outside the country. I got it from a co-worker many years ago & haven't used the store-bought product since; however, I do keep my current supply in an old bottle for that authentic look (lol). If you prefer more of a bite, increase the tabasco!!

- Cut chicken into small pieces (2-3 inches by 1 inch thick)
- Place the chicken and the soy sauce, ketchup, brown sugar, lemon juice, oyster sauce, garlic, ginger, and sesame oil into a gallon-sized zipper bag,
- Marinade in the fridge for at least an hour.
- Heat a cast-iron skillet and cook the chicken until it's fully cooked 165° and slightly charred, don't overcrowd the pan if using a skillet (you could bake the chicken at 425 degrees on a foil-lined pan if desired)
- Serve with rice, rice noodles, and vegetables, as an appetizer, and top the chicken with sesame seeds and cilantro.
HOUSES OF PARLIAMENT MARINADE FOR CHICKEN OR PORK
While going through some old binders, I found this recipe in a booklet put out by HP. And yes, HP does stand for Houses of Parliament (the picture you see on the bottle). I don't know about its availability in the U.S., but in Canada a bottle of HP sauce is just about as common as ketchup -- all restaurants have it on hand, and it's in most homes.

- In a mixing bowl, whisk together HP Sauce, wine, oil, worcestershire sauce and garlic.
- Place chicken in a dish, pour marinade over, cover with plastic wrap and place in the fridge for at least 4 hours.
- After marinating is done, drain off marinade and grill or broil chicken until done.
- If desired, place marinade in a small pot, bring to a boil, let boil for 2 minutes, then use as a basting sauce for chicken (do not use straight from the fridge as there is a danger of bacteria; boil first).

- Start with some BBQ sauce as the base.
- Add all ingredients as you would like, taste along the way. That is the fun part.
- When you have the right marinade for you, place meat in 9x13 pan and marinate.
- Marinate meat as long as you like depending on the type of meat you are using.
- I cook my meat in the same pan with the marinade. Usually on the grill. But can be done in the oven as well.
- Doing this makes the meat very flavorful and extremely tender.
AMAZING PORK CHOP OR CHICKEN MARINADE
This recipe came from my sister-in-law Denise who is an awesome cook, mother and wife! Originally we were using it only for pork but last night I had boneless, skinless chicken breasts thawed and thought, "why not?" The brown sugar flavor really came through with the chicken. I'm guessing it would also be great with venison. I often double the marinade for plenty to boil and pour over the grilled meat.
