CLASSIC HOT WINGS

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

Spicy with a kick of vinegar, these crispy baked buffalo chicken hot wings will leave the plate in no time. To serve, make sure you have lots of blue cheese dip (store-bought or the dip below) and celery. Easily double, triple, or quadruple for a crowd.

1 pound chicken wings, separated at joints, tips discarded
4 tablespoons unsalted butter
1/3 cup hot pepper hot sauce (suggested brand: Frank's Red Hot)
1/2 teaspoon garlic powder
Salt
Celery, for serving
1/2 cup sour cream
1/2 cup mayonnaise
6 ounces crumbled blue cheese
1 tablespoon minced parsley
Salt and fresh ground pepper

Steps:

  • Heat oven to 400 degrees F. Set a wire rack inside a large rimmed baking sheet.
  • Season wings with salt. Spread out in one layer on wire rack. Bake until cooked through and crispy, 35 to 45 minutes.
  • Melt butter in a saucepan over medium heat. Remove saucepan from the heat, and then stir in hot sauce and garlic powder. Season with salt, to taste.
  • Toss the baked chicken wings in the sauce and serve with celery and blue cheese dip.
  • Stir mayonnaise, sour cream, blue cheese, and parsley together in a bowl. Season with salt and pepper, to taste.

This is a hot wing sauce my ex and I came up with years back. It was just the 'ticket' in our house.

3 pound(s) chicken wings
12 ounce(s) texas pete hot sauce (or your choice)
1 stick(s) butter
1 tablespoon(s) mustard seed, ground
- s & p to taste

Steps:

  • Cook your wings in any manner you desire: Baked, deep fried or grilled until done.
  • Make the sauce by combining the Texas Pete and a stick of butter over medium-low heat until the butter melts.
  • Stir in the ground mustard seed and add salt and black pepper to taste.
  • Add your cooked wings to a large bowl, add sauce and toss.
  • If you want your wings hotter, you can add some cayenne pepper or some red pepper flakes.

4 pounds whole chicken wings
Oil for deep-fat frying
1/4 cup butter
1/4 cup honey
1/4 cup barbecue sauce
4 to 6 tablespoons hot pepper sauce
3 tablespoons vinegar
3 tablespoons prepared mustard
1/4 teaspoon garlic salt
Celery and carrot sticks
Blue cheese or ranch salad dressing

Steps:

  • Cut wings into 3 sections; discard wing tip section. In a deep cast-iron or electric skillet, heat oil to 350°. Fry chicken wings, a few at a time, about 9 minutes or until golden. Drain on paper towels; place in a large bowl. , In a small saucepan, combine the next 7 ingredients; cook and stir 5-10 minutes. Pour over cooked wings; let stand 10 minutes. With a slotted spoon, remove wings from sauce and place them in a single layer on greased baking sheets. , Bake at 350° for 15 minutes. Serve hot with vegetable sticks and dressing for dipping.

2 lbs chicken drummettes
1/4 cup butter, melted
6 ounces franks buffalo wing sauce
1/2 teaspoon fresh cracked pepper
1/2 teaspoon granulated garlic
1/8 teaspoon cayenne, ground
1/8 teaspoon cumin
1 teaspoon cider vinegar
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Spray a disposable aluminum cookie sheet that has 1/2 - 1 inch sides with non-stick spray; set aside.
  • Combine all above ingredients except chicken to make hot sauce marinade and blend well.
  • Dip chicken pieces in hot wing sauce and coat evenly. Place chicken pieces in an even layer on disposable cookie sheet. Pour remaining hot sauce evenly over chicken pieces.
  • Bake at 350 degrees for 1 hour until chicken is cooked through and chicken skin is crispy.
  • Serve with ranch or blue cheese dressing for dipping. Enjoy.

Who doesn't love hot wings? They're the perfect help-yourself starter. These are roasted to give them that distinctive crunch and glazed with soy and Sriracha

12 jumbo chicken wings
280ml buttermilk
75g cornflour
1 tbsp smoked paprika
1 tsp dried basil
1 tsp dried oregano
1 tsp dried sage
2 tsp chilli powder
2 tsp garlic powder
2 tsp onion salt
½ tsp ground white pepper
100g honey
1 tbsp soy sauce
3 tbsp ketchup
100ml sriracha
blue cheese dip , to serve (optional), see goes well with

Steps:

  • Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
  • Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
  • Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise. Remove the wings from the oven and rest for a minute or so. Serve with a blue cheese dip, if you like.
