1 teaspoon baking powder
1 teaspoon salt
6 tablespoons onions, chopped
1 egg, beaten
2 cups water, boiling
1 cup salad oil

Steps:

Combine dry ingredients, onion, and egg.
add boiling water, stirring constantly until mixture is smooth.
Add more water if necessary.
Drop by spoonfuls into deep, hot oil.
Cook until golden brown.

I first had these when Buddha first took me to his family's fishing spot on the lake. His Aunt Brenda makes these often. I loathed hush puppies before these. Always thought them dry and bland. Not these! Wow are they yummy. Thanks Brenda!

1 cup cornmeal
1 cup flour
2 tablespoons sugar
1 (16 ounce) can creamed corn
1 onion, diced
1 egg
1/2 cup buttermilk
1 teaspoon vegetable oil
2 tablespoons jalapenos, chopped fine (optional)
vegetable oil (for frying)

Steps:

Mix all ingredients til blended.
Drop by teaspoonfuls into hot oil.
Fry til cooked.

While the oil is heating, combine the onion, cornmeal, flour, sugar, and salt together in a medium bowl.
In a small bowl, whisk the egg into the buttermilk. Add to the dry mixture and stir until just combined. Allow the batter to rest for about 5 minutes.
Drop the batter by heaping tablespoonsful carefully into the hot oil and fry for 5 to 6 minutes, turning over once, or until golden brown and cooked through. Drain on a wire rack over paper towels. Working in batches, being sure not to cook too many at one time as the oil temp will drop and the hush puppies will end up greasy. Be sure to adjust the heat to keep the oil at about 350°F.
