DEVIL'S FOOD CAKE

Devil's Food Cake image

Provided by Dan Langan

Categories     dessert

Time 3h5m

Yield 14 servings

Number Of Ingredients 19

1 cup very hot water (8 fluid ounces)
2 ounces semisweet baking chocolate, finely chopped
1 tablespoon instant coffee powder
400 grams (14.1 ounces) granulated sugar
100 grams (3.5 ounces) Dutch process cocoa powder
220 grams (7.75 ounces) all-purpose flour
1/2 tablespoon baking soda
1 1/4 teaspoons baking powder
3/4 teaspoon salt
8 ounces buttermilk
4 1/2 fluid ounces vegetable oil
2 large eggs
2 teaspoons pure vanilla extract
4 sticks (2 cups) unsalted butter, softened
28 ounces sifted confectioners' sugar
3 tablespoons milk, plus teaspoons for thinning as needed
2 teaspoons vanilla extract
Pinch of salt
3/4 cup creamy natural-style peanut butter

Steps:

  • For the devil's food cake: Preheat the oven to 325 degrees F. Grease three 8-inch-round cake pans and line the bottoms with parchment paper.
  • Combine the hot water, chocolate and coffee powder and whisk to dissolve. Set aside to cool for a few minutes.
  • Sift the granulated sugar, cocoa powder, flour, baking soda, baking powder and salt into a large bowl and whisk to combine. Add the buttermilk and oil to the chocolate mixture. Add the chocolate mixture, eggs and vanilla to the bowl with the dry ingredients. Beat with an electric mixer on low until the dry ingredients are moistened, about 30 seconds. Give the bowl a scrape with a rubber spatula. Increase the mixer speed to medium and beat the batter for 2 minutes.
  • Divide the batter equally among the 3 prepared pans, about 1 pound of batter per pan.
  • Bake until a toothpick inserted into the center of the cakes comes out almost clean, 25 to 35 minutes. Cool in the pans for 12 minutes, then turn out onto wire racks to cool completely. Wrap the cake layers in plastic wrap and refrigerate for 1 hour before assembling.
  • For the peanut butter buttercream: Beat the butter in a stand mixer fitted with the paddle attachment on medium speed until it is glossy and creamy, 5 to 7 minutes. Reduce the mixer speed to low. Working in batches, slowly add the confectioners' sugar, allowing each addition to be incorporated. Once all the confectioners' sugar has been added, scrape the bowl with a rubber spatula and then beat the mixture on medium speed until no lumps remain and the mixture is smooth and thick, 1 to 2 minutes. Add the milk, vanilla and salt and mix on low speed to combine. Give the bowl and the paddle another scrape, then increase the mixer speed to medium and beat for about 5 minutes. Add the peanut butter and beat until combined. If the icing appears to be too thick, thin it by adding more milk, 1 teaspoon at a time.
  • To assemble the cake: Place one of your refrigerated cake layers on a cake circle or serving dish and spread about 1 cup of peanut butter buttercream evenly across the cake. Place a second layer on top, press down slightly and spread another 1 cup buttercream evenly over the top of the cake. Top with the third layer. Give the cake a crumb coat by placing a large dollop of buttercream on top of the cake and spreading it to the edges of the cake and down the sides to seal in any crumbs. Refrigerate the 3-layer cake for about 20 minutes. Use the remaining buttercream to frost the top and sides of the cake.

CHOCOLATE WATER CAKE

Chocolate Water Cake image

Dense, moist, and decadent, this Chocolate Water Cake calls for ingredients you likely have in the cupboard, and the cake doesn't use any butter, milk, or eggs (meaning the cake itself is dairy-free and vegan). The chocolate frosting does include dairy, but if you'd like to keep the recipe vegan, feel free to top the cake with any vegan frosting you prefer-we promise the cake will still be just as good. This cake comes together in one bowl, and because it's so moist and rich on its own, we don't fuss with layering and stacking several layers of cake. This recipe is designed to require the frosting of one perfectly thick layer and moving on with your life. The cake is made of a simple batter of flour, brown sugar, and cocoa powder mixed with vegetable oil and hot water. The lift and tenderness of the cake comes from the incorporation of baking soda and apple cider vinegar, and the sweetness of the cake is balanced with just the right amount of salt. As for the frosting, a simple chocolate ganache is made in the microwave by melting together chocolate chips and butter and then whipping this ganache with cream cheese, powdered sugar, and a small amount of strong coffee to create a tangy and rich chocolate frosting that's easy to spread. Finally, we top the frosted cake with a sprinkling of flake salt to elevate and compliment the cake's richness.

Time 20m

Yield 1 (8-inch) cake

Number Of Ingredients 14

1 1/3 cups all-purpose flour
1 1/2 cups packed light brown sugar
3/4 cups cocoa powder
2 teaspoons instant espresso powder (optional)
1 1/2 teaspoons baking soda
3/4 teaspoon kosher salt
1 3/4 cups hot water*
6 tablespoons vegetable oil
1 1/2 teaspoons apple cider vinegar
1/2 cup semisweet chocolate chips
4 tablespoons butter
1 tablespoon strongly brewed coffee
4 ounces cream cheese, room temperature
1/3 cup powdered sugar

Steps:

  • Make the Cake: Preheat oven to 350°F. Grease an 8-inch cake pan with vegetable oil and line bottom with a circle of parchment paper. In a large mixing bowl, whisk together flour, brown sugar, cocoa powder, espresso powder, baking soda, and salt until homogenous. Add water, oil, and vinegar. Whisk until no pockets of dry ingredients remain. Pour batter into prepare pan and bake until the cake pulls away slightly from the pan and a toothpick inserted in the center comes back with a few dry crumbs, 50 to 55 minutes. Allow to cool completely before inverting out of pan.
  • Make the Frosting: Place chocolate and butter in a microwave-safe bowl. Microwave for 30 seconds; stir until chocolate and butter are completely melted and combined (if chocolate is still not fully melted, microwave for 10 seconds more and stir again). Using the whisk attachment of a mixer, combine chocolate mixture and cream cheese until fully incorporated. Add coffee and beat until combined. Add powdered sugar and incorporate on low; increase speed to medium-high and beat until glossy, about 3 minutes.
  • Place cake on serving plate, scoop frosting on top of cake and spread to edges. Use a spoon to make decorative swirls and finish with a sprinkling of flake salt.

HOT MILK CAKE

Hot Milk Cake image

I originally found the comfortingly named "hot milk cake" in a collection of old New England recipes and have been using it ever since. Milk and butter give it a tender crumb with a sturdy texture and, unlike many traditional white cakes, which often can be dry, this hot milk cake is moist and flavorful. Hot milk cake is technically a sponge cake made with the addition of baking powder and a large amount of butter. The texture is stronger than most sponges-it stands up beautifully to buttercream-but still light and airy enough to absorb a syrup, without becoming gummy or grainy. That means you can flavor it in many different directions or serve it on its own with berries and whipped cream. Hot milk cake is often used as the base for wedding cakes. This is a challenging cake, in that there are a couple of steps you need to manage simultaneously. The key to success lies completely in temperature control, so it is crucial that you have an instant-read thermometer at the ready. Two separate mixtures that started hot are combined only when they have cooled to the same room temperature. Using a thermometer will help ensure the proper emulsification of the subtly special batter.

Provided by Food Network

Yield Makes two 6 inch cakes

Number Of Ingredients 8

1 1/3 cups (6 1/2 ounces) all-purpose flour
2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 cup (4 ounces) unsalted butter, at room temperature
1/2 cup whole milk
1 1/2 cups (10 1/2 ounces) sugar
3 large eggs
1/2 teaspoon vanilla extract

Steps:

  • Liberally butter two 6-by-3-inch cake pans and dust with flour. Tap out the excess flour. Preheat the oven to 350 degrees F. Sift together the flour, baking powder, and salt into a bowl and set aside. In a saucepan over medium-low heat, combine the butter and milk and heat, stirring occasionally, until the butter is melted, 3 to 4 minutes. Alternatively, in a microwave-safe bowl, combine the butter and milk and microwave on high at 10-second intervals, stirring between each, until the butter is melted. Pour the milk mixture into a large bowl. Set aside and let cool to slightly above room temperature; an instant-read thermometer should register between 80 and 85 degrees F. You want the milk and butter to remain incorporated, so whisk the mixture occasionally and vigorously while it is cooling and up until you add it to the batter. In the top pan of a double boiler or in a bowl for a bain-marie, whisk together the sugar, eggs, and vanilla. Fit the top pan or bowl over (but not touching) simmering water in the bottom pan or a saucepan and gently warm the mixture, stirring, just until the sugar is dissolved and the thermometer registers 110 degrees F, about 10 minutes. Pour the egg mixture through a medium-mesh sieve into the bowl of a stand mixer. Fit the mixer with the whisk attachment and whisk on high speed until the mixture is light and fluffy and has cooled to slightly above room temperature (between 80 and 85 degrees F), about 10 minutes. (Note: The batter becomes more stable as the mixture cools; this is an important factor in creating a cake with good structure.) Stop the mixer. Add the sifted dry ingredients and mix until just incorporated, preferably by hand, lifting and folding in from the bottom center. Or, use the mixer set on low and whisk just until incorporated, about 5 seconds. Using a rubber spatula, scrape down the sides of the bowl and mix again just briefly by hand or machine. The batter should be smooth. Check the milk mixture to make sure it is fully cooled, then slowly pour it into the batter, whisking on low speed. Stop mixing as soon as the batter is well blended and smooth. Remove the bowl from the mixer, scrape down the sides of the bowl again, and fold by hand a few times with the spatula. Divide the batter between the prepared pans. Bake until the cakes are golden brown and a tester inserted in the center comes out clean, 30 to 35 minutes. Transfer to wire racks and let cool in the pans for about 20 minutes. When the cakes are cooled enough to handle the pans but still a tad warm to the touch, carefully run an offset spatula around the edges of the pans to loosen them, then invert the cakes onto the racks and remove the pans. Let cool for about 30 minutes longer. Wrap the cakes tightly in plastic wrap and refrigerate to ensure that the interiors are completely cooled before decorating, at least 1 hour or for up to 3 days. To freeze, wrap tightly in a second layer of plastic wrap and store in the freezer for up to 2 months.

HOW TO BAKE USING A WATER BATH - A FAMILY FEAST®
A water bath is simply a pan of hot water placed in the oven, and using this method has two benefits when baking. First, a water bath adds moisture to the oven and this is important for baking foods like cheesecakes, which tend to crack from the heat of the oven, or custards which can become rubbery without moist heat.
