One 32-ounce bag frozen french fries
Garlic salt, for sprinkling
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1 tablespoon Worcestershire sauce
1 teaspoon sriracha
1 cup shredded English Cheddar
1/2 cup shredded Monterey Jack cheese
Kosher salt and freshly ground black pepper
1 pound good quality roasted turkey, sliced thin
4 slices Texas toast, buttered and griddled until golden
Chopped fresh parsley, for garnish
Sliced pickled cherry peppers, for garnish

Steps:

  • Cook fries according to package instructions. Place in a large bowl, then sprinkle with garlic salt and set aside.
  • Meanwhile, melt butter in a medium pan over medium heat, then add flour and whisk until blonde. Whisk in milk, Worcestershire and sriracha and bring to a simmer, then cook until thickened, 3 to 5 minutes. Whisk in both cheeses until melted. Adjust seasoning with salt and pepper.
  • Place a couple slices of turkey on the griddled Texas toast, then a pile of French fries; ladle the cheese sauce over the entire thing. Garnish with some parsley and some pickled peppers.

2 green onions, chopped
8 slices sourdough bread
½ pound deli-sliced turkey
4 slices pepperjack cheese
4 tablespoons butter

Steps:

  • Mix the mayonnaise, salsa, and green onions in a small bowl. Spread the seasoned mayonnaise evenly on each slice of bread. Layer the turkey and cheese on 4 of the slices. Top with remaining bread to make 4 sandwiches.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Fry sandwiches in butter until lightly toasted. Add remaining butter to skillet, turn sandwiches over. Cook until the cheese is melted, and the bread is browned.

You've probably noticed that December has been inspiring me to make more rich and traditional recipes. It's probably because the cold weather makes me crave meals that warm up my insides. I polled my close friends and decided to create a hot turkey sandwich recipe. I had no idea what I was getting myself into... To give you an idea, here's a list of the contradictory advice I got from my (difficult) friends: "Make it with peas. " "Without peas, Marilou, or I'll never talk to you again. " "Find a way to keep the bread from soaking through after two minutes. " "Find a good sauce recipe that soaks into the bread like it's supposed to. " "If your recipe calls for a can of St-Hubert sauce, I'm in! " So basically, I knew from the start that I wouldn't be able to make everyone happy. But I tried to come up with a simple recipe you can modify to your liking. ????

Number Of Ingredients 16

8 slices white bread Replacement options or ciabatta, for a fancier version
4 cups turkey, cooked and diced (see tip)
1 can peas
1 tablespoon chives, finely chopped
1 tablespoon fresh parsley, chopped
1/2 tablespoon tarragon, finely chopped
Salt and pepper, to taste
5 tablespoons butter
1 cup onion, finely chopped
1 clove garlic, minced
5 tablespoons all-purpose flour
1 teaspoon powdered mustard
2 tablespoons HP sauce
2 1/2 cups beef broth Replacement options or veal broth
1/2 tablespoon ketchup
Salt and pepper, to taste

Steps:

  • In a pot, soften the onion in the butter for 3-4 minutes and add the garlic.
  • Add the flour and stir with a wooden spoon for a few minutes.
  • Add the mustard, HP sauce, broth, and ketchup and mix well. Simmer for 20-25 minutes, whisking regularly.
  • Blend the sauce in a blender until smooth. Adjust the seasoning and set aside.
  • In a bowl, combine all the peas ingredients and season well. Set aside.
  • When it's time to serve, make sure everything is hot (turkey, peas, and sauce) and assemble the sandwich in that order: a slice of bread, some meat and peas, a bit of sauce, another slice of bread, more peas, and more sauce.

1 stick softened butter
1/4 cup finely chopped fresh herbs, such as thyme, sage and parsley
2 boneless turkey breasts (2 1/2 to 3 pounds each)
2 large fresh bay leaves
Olive oil spray
Kosher salt and coarse black pepper
8 tablespoons butter
1/4 cup fresh herbs, such as thyme, sage and parsley, finely chopped
3 to 4 ribs celery with leafy tops, chopped
2 small apples, chopped
2 small to medium yellow onions, chopped
1 bay leaf
Salt and freshly ground black pepper
6 cups stuffing cubes, such as Pepperidge Farms
3 to 4 cups chicken stock
4 tablespoons butter
Coarse black pepper
3 tablespoons flour
3 cups turkey or chicken stock
About 1/4 cup Worcestershire sauce
1 egg yolk
1 round tablespoon Dijon mustard, optional
Salt
A couple cups stock, to reheat sliced turkey
Sliced good quality white or wheat bread
Chopped fresh parsley, garnish

Steps:

  • Preheat the oven to 325 degrees F.
  • For the turkey breasts:
  • Arrange a wire rack over a baking sheet. Combine the butter with the herbs. Loosen the skin on the turkey breasts and place the butter between the skin and breast meat, working out to the edges evenly. Place a bay leaf between the skin and meat. Spray the skin with olive oil, and sprinkle liberally with salt and pepper. Roast to 165 degrees internal temperature, about 1 hour. Remove and cover loosely with foil to cool back to room temp, reserving the drippings for the gravy. Then cover and store for a make-ahead meal, as well as another night's meal, such as the Turkey Club Enchilada Casserole.
  • For the stuffing:
  • Melt 6 tablespoons butter in large skillet over medium heat. Grease a casserole dish with 1 tablespoon of remaining butter, and reserve the rest to dot the top of the stuffing once it is in its casserole dish. To the melted butter, add the herbs, celery, apples, onions, bay leaf and some salt and pepper. Cook to tender, 15 to 20 minutes, stirring occasionally. Add the stuffing cubes and moisten with the stock until damp, but not wet. Fill the casserole dish and dot the top with butter. Cover and refrigerate to store.
  • For the gravy:
  • Melt the butter in a large skillet and season liberally with black pepper. Whisk in the flour until light golden in color. Then whisk in the stock and Worcestershire and simmer at low boil to thicken. Add any pan drippings from the roasted turkey breasts. Once the gravy lightly coats the back of a spoon, add a ladle of it to the egg yolk while beating with fork. Then add the yolk back to gravy to gloss it up, stir in. Add the mustard, if using. Add salt to taste. Cool and store.
  • To serve:
  • Preheat the oven to 375 degrees F. Place the rack in center of oven.
  • Bring the stuffing to room temp, then bake until crispy on top and hot through.
  • Reheat the gravy over medium heat, partially covered and stirring occasionally.
  • While the stuffing is in the oven and the gravy is reheating, heat up an additional couple cups of plain stock in a high-sided skillet. Thinly slice 1 turkey breast, removing the bay leaf when you get to it.
  • For each sandwich, very lightly toast a slice of bread and place on a dinner plate. Top the bread with a scoop of stuffing (I use an ice cream scoop). Set a few slices of turkey into broth to heat through. Arrange the turkey slices over the mound of stuffing. Liberally ladle the gravy over the top of the sandwich and garnish with chopped parsley. Save any leftover gravy for another meal, such as the Turkey Club Enchilada Casserole later in the week.

left over sliced cooked turkey
left over prepared stuffing
cranberry sauce
gravy (optional)

Steps:

  • Preheat a buttered griddle or pan to medium heat.
  • Form thin "patties" out of the left over stuffing.
  • Once the butter is melted, heat and grill the stuffing patties and the turkey slices throughly.
  • Toast slices of bread either in a toaster or directly on the griddle. Spread both slices with a generous amount of cranberry sauce.
  • Layer on the grilled stuffing and turkey. You may also want to add some brown gravy.
  • ENJOY!
