SWEET AND SMOKY BARBEQUE SAUCE

Sweet and Smoky Barbeque Sauce image

Use this toward the end of cooking as you would for any BBQ meat such as pork, ribs, or chicken. I have even used it on beef and hamburgers, sausages, hot dogs, or anything you want, for the most part. I use it on everything from ribs to roasts to hamburgers to hot dogs. Even goes good with a good old classic grilled cheese sandwich. This is a great all-round BBQ sauce. Use right away or cool to room temperature, transfer to jars or containers, and refrigerate. The sauce will keep for several months in the fridge.

HOT & SWEET BBQ SAUCE

HOT & SWEET BBQ SAUCE image

This recipe originally came from Barbecue! Bible Sauces, Rubs, And Marinades by Steven Raichlen. I tweaked it a bit and tried canning it. CAME OUT GREAT!!! It's a super easy one-pot recipe. It's my all time favorite BBQ sauce.

Provided by Tess Geer

Categories     Other Sauces

Time 1h5m

Number Of Ingredients 14

3/4 c packed dark brown sugar
1 c apple cider vinegar
1/2 c molasses
1/2 c honey
1/4 c dark rum or whiskey
1/4 c yellow mustard
2 Tbsp liquid smoke flavoring
2 Tbsp chili powder
1 Tbsp garlic powder
1 Tbsp black pepper
2 Tbsp allspice, ground
1/2 tsp ground cloves
8 c ketchup
kosher salt and pepper to taste

Steps:

  • 1. Combine all the ingredients, except for the ketchup, in a large, deep, heavy, nonreactive saucepan and bring to a simmer over medium heat. Cook, uncovered, until all the ingredients are dissolved, stirring constantly, about 5-10 minutes. Stir in the ketchup and bring to a boil, stirring well because ketchup has a tendency to spatter. Add salt and pepper to taste
  • 2. Reduce the heat slightly and gently simmer the sauce, uncovered, until dark, thick, and richly flavored about 30 minutes, stirring often.
  • 3. Ladle the hot sauce in hot, clean half-pint or pint canning jars, leaving 1/2-inch headspace. Run a small spatula around the inside of each jar to get rid of air pockets. Wipe jar rims and tighten lids to finger-tip tight.
  • 4. Process filled jars in a boiling-water canner for 20 minutes (start timing when water begins to boil). Remove the jars from the canner and place upright on a towel to cool completely.
  • 5. After jars cool, check seals by pressing middle of lid with finger. If lid springs back, lid is not sealed and refrigeration is necessary. Let jars stand at room temperature 24 hours. Store unopened jars in cool (50ºF to 70ºF), dry, dark place. Use within one year. You also store in your fridge for up to a month.
  • 6. This should yield 4-5 pints. You also store in your fridge for up to a month.

LOW FODMAP SWEET AND STICKY BBQ SAUCE

Low FODMAP Sweet and Sticky BBQ Sauce image

This Low FODMAP Sweet and Sticky BBQ Sauce is just what the name says: a little sweet, a bit sticky, with an adjustable heat level. It is very easy to make and is based upon "copycat" recipes for the beloved Sweet Baby Ray's BBQ Sauce, which unfortunately contains high FODMAP high fructose corn syrup. Ours has all the texture and flavor you want in a sweet and sticky BBQ sauce using low FODMAP ingredients.Low FODMAP Serving Size Info: Makes about 3 cups (720 ml); serving size scant 2 tablespoons; approximately 24 servings

Provided by Dédé Wilson

Categories     Basic     Condiment     Sauce

Time 20m

Number Of Ingredients 12

1 cup (140 g) pineapple chunks
¼ cup (60 ml) water
½ teaspoon FreeFod Garlic Replacer
1 ¼ cups (340 g) ketchup
1 cup (213 g) firmly packed light brown sugar
¼ cup (60 ml) unsulphured molasses
1 tablespoon Worcestershire sauce, (such as Lea & Perrins)
2 ½ teaspoons dry mustard
2 teaspoons smoked paprika, (or regular paprika)
1 ½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper, (or more to taste)

Steps:

  • Place pineapple chunks in blender. Whisk the FreeFod Garlic Replacer together with the water and add to the blender. Blend until liquified. Pour through a fine-mesh strainer and measure out ¼ cup (60 ml) of juice to use in the recipe. You will most likely have extra to drink or for another use.
  • Place the pineapple juice, ketchup, brown sugar, molasses, Worcestershire sauce, dry mustard, paprika, salt, pepper and cayenne in a non-reactive saucepan. Whisk together to combine. Bring the sauce a simmer over medium heat, whisking often, and simmer for 5 minutes. Cool. BBQ sauce is ready to use. You may refrigerate it in an airtight container for up to 1 week. • Basic Barbecue Sauce. Everyone needs a good basic BBQ sauce recipe, in my opinion. I’m talking about a go-to sauce you can mix up in a hurry by memory whenever you crave BBQ chicken, beef, pork, venison, or some other meat.
  • Orange-Tangerine BBQ Sauce. I sort of created this BBQ sauce recipe by accident. By that, I mean I didn’t plan it in advance. My son-in-law was going to grill some chicken one Sunday afternoon, and we were out of store-bought sauce.
  • Teriyaki-Peach BBQ Sauce. We love making this sauce when we have juicy fresh peaches on hand. It's great as a grilling sauce, and it also makes a wonderful dipping sauce.
  • Cherry-Chipotle BBQ Sauce. This is often my go-to recipe for bone-in pork loin, and for visual effect, I leave a few of the cherries whole. It's also good on chicken, lean ribs, pork chops, and ham.
  • White BBQ Sauce. The first time I was served white barbecue sauce, I wasn't sure what to expect. After all, I was used to red or brown sauce, so I wasn't at all convinced I'd like the white version.
  • Mesquite BBQ Sauce for Beef. My gang and I usually prefer a sweet-hot BBQ sauce for chicken and pork, but for beef, we prefer a more savory sauce. One with the smoky flavor of mesquite is even better.
