Spice rubs are the secret to mouth-watering barbecued meat, giving these sweet and sticky chicken wings extra crispy skin

1kg chicken wings , halved at the joint, wing tips removed and discarded
1 tsp cayenne pepper
1 tsp garlic granules
1 tsp celery salt
1 tsp golden caster sugar
1 tsp mustard powder
1 tbsp vegetable oil
2 tbsp cider vinegar
2 tsp smoked paprika
1 tbsp Worcestershire sauce
3 tbsp hot chilli sauce
2 tbsp maple syrup
1 tbsp chipotle paste

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a small bowl, mix the ingredients for the spice rub together. Put the chicken wings in a large bowl and mix with the spice rub and a good amount of seasoning. Spread out in a single layer on a large foil-lined baking tray (or 2 smaller ones). Roast for 45 mins, then remove from the oven and drain off any excess oil.
  • Heat a gas or charcoal barbecue to high. Mix the ingredients for the hot sauce in a small bowl and brush all over the chicken wings. Cook the wings on direct heat on the barbecue for 3-4 mins each side or heat oven to 220C/200C fan/gas 7 and cook the wings for 15 mins. Serve with plenty of napkins.

Love chicken wings either on their own or as part of a big barbecue? The sticky maple and butter glaze on these wings adds extra succulence

1kg chicken wings
a little oil , for the tray
½ tsp ground cumin
½ tsp ground black pepper
½ tsp ground coriander
1 tsp dark brown soft sugar
1 tsp garlic powder
2½ tsp smoked paprika
½ tsp dried oregano
½ tsp dried thyme
75g butter
75g cider vinegar
75ml hot sauce
50ml maple syrup

Steps:

  • To make the rub, mix together all the ingredients in a large bowl with a large pinch of salt. Add the chicken wings and toss to coat in the spices. If you've got time, chill and marinate for up to 24 hrs.
  • Heat oven to 180C/160C fan/gas 4. , transfer the wings to the tray and roast for 40-45 mins until they are cooked through. Turn the oven up to 220C/200C fan/gas 7 and roast for a further 10 mins until golden brown and crispy.
  • Meanwhile, make the glaze by heating the butter, vinegar, hot sauce and maple syrup in a small saucepan. Bring to the boil over a high heat, then reduce the heat and simmer gently for 5 mins or until the glaze has thickened. Remove the wings from the oven and while they are still hot, pour over the glaze and carefully mix using a spoon to roll and coat them evenly. They should be nice and glossy. Serve with your favourite dip.

3 to 4 pounds chicken wings
1/3 cup teriyaki sauce
1/2 cup lite soy sauce
2 tablespoon minced garlic
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon black pepper
1 to 2 cups maple syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Cut off chicken wing tips and snip the skin between the joints. Place in disposable large baking pan. Add the maple syrup, soy sauce, teriyaki sauce, garlic, garlic powder, onion powder, and black pepper, toss to coat.
  • Place pan on baking sheet and bake for approximately 1 hours, tossing every 15 to 20 minutes. The liquid will gradually evaporate the longer you cook it.
  • After 1 hour, increase the oven temperature to 425 degrees F. Turn wings to coat evenly and cook an additional 45 minutes.

4 pounds chicken wings
1/4 cup all-purpose flour
1/2 tablespoon baking powder
1 teaspoon coarsely ground pepper
1 teaspoon kosher salt
1/2 teaspoon garlic powder
GLAZE:
2/3 cup maple syrup
2 teaspoons coarsely ground pepper
2 teaspoons soy sauce
1 garlic clove, minced
Chopped green onions, optional

Steps:

  • Preheat oven to 425°. Line two 15x10x1-in. baking pans with foil and coat with cooking spray; set aside. , Using a sharp knife, cut through the 2 wing joints; discard wing tips. In a shallow bowl, combine flour, baking powder, pepper, salt and garlic powder. Add wing pieces, a few at a time, and toss to coat; shake off excess., Place on prepared baking sheets. Bake until no longer pink, 40-50 minutes, turning once. Meanwhile, in a small saucepan, combine glaze ingredients. Bring to a boil. Reduce heat; simmer until thickened, 5-7 minutes, stirring frequently. Drizzle over wings; toss to coat. If desired, top with chopped green onions.

Oil for deep-fat frying
1/2 cup butter, cubed
1/2 cup maple syrup
1/2 cup Louisiana-style hot sauce
1/4 cup packed brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons water
1-1/2 teaspoons cornstarch

Steps:

  • Cut each chicken wing into 3 sections; discard wing tip sections. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry chicken, a few pieces at a time, for 8 minutes or until golden brown and juices run clear, turning occasionally. Drain on paper towels., In a small saucepan, melt butter. Stir in the syrup, hot sauce, brown sugar, salt and pepper. Combine water and cornstarch; stir into sauce. 2 to 3 pounds whole chicken wings
1 cup maple syrup
2/3 cup chili sauce
1/2 cup finely chopped onion
2 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
1/4 to 1/2 teaspoon crushed red pepper flakes

Steps:

  • Cut chicken wings into three sections; discard wing tip section. In a large resealable plastic bag, combine remaining ingredients. Set aside 1 cup for basting and refrigerate. Add chicken to remaining marinade. Seal bag and turn to coat; refrigerate for 4 hours, turning occasionally., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. 50g butter
150g hot chilli sauce
3 tbsp light brown soft sugar
2 tbsp maple syrup
celery sticks , to serve
soured cream , for dunking

Steps:

  • Heat oven to 180C/160C fan/gas 4. Toss the chicken wings in some oil and seasoning in a baking tray. Cook for 30 mins. Combine the butter, hot chilli sauce, sugar and maple syrup in a saucepan with a good pinch of salt, and bubble until thick and glossy. Brush the mixture all over the chicken, then return to the oven for 20 mins - turning and painting halfway through cooking - until sticky. Serve with celery sticks and sour cream for dunking.
