1 (750-ml) bottle red wine, such as Cabernet Sauvignon
1/4 cup honey
2 cinnamon sticks
1 orange, zested and juiced
4 whole cloves
3 star anise
4 oranges, peeled, for garnish

Steps:

  • Combine the cider, wine, honey, cinnamon sticks, zest, juice, cloves and star anise in a large saucepan, bring to a boil and simmer over low heat for 10 minutes. Pour into mugs, add an orange peel to each and serve.

1 cup water
½ cup sugar
1 orange, cut into thin wedges
2 teaspoons finely shredded lemon peel
¼ cup lemon juice
6 inches stick cinnamon
2 cardamom pods, crushed or 1/2 teaspoon ground cardamom
2 bay leaves
1 teaspoon whole cloves
1 750 milliliter bottle dry red wine (Burgundy, Zinfandel or Merlot)
Brandy, rum, vodka, port, or kirsch (optional)

Steps:

  • In a medium saucepan, combine the water, sugar, orange wedges, lemon peel and juice, cinnamon, cardamom pods, bay leaves and whole cloves. Bring to boiling; reduce heat, Simmer, covered, for 20 minutes. Pour in the wine and heat until steaming but not simmering.
  • To serve, strain mixture through a very fine wire-mesh strainer; discard solids. Serve hot wine in small heatproof mugs or glasses. Add about 1 tablespoon of brandy or desired liquor to each, if you like. Makes 8 to 10 servings.

Here is a version I adapted from "Authentic German Home-Style Recipes" by Gini Youngkrantz. Posted by request. I am guessing on the cook time - it should be just until hot, but NOT boiling.

2 (3 inch) cinnamon sticks
2 teaspoons whole cloves
1 teaspoon whole allspice
6 cups fruity red wine (such as Beaujolais or Pinot Noir)
6 cups apple cider
3/4 cup sugar
1 orange, thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced

Steps:

  • Place first 3 ingredients on an 8" square of cheesecloth; tie with string. Place spice bag in a Dutch oven. Add red wine and remaining 5 ingredients; bring to a simmer over low heat (do not boil). Keep at a simmer while serving. Ladle into mugs.
  • Note: For a nonalcoholic version, omit wine and substitute more apple cider.

2 oranges
2 (750 milliliter) bottles red wine
1 (750 milliliter) bottle white wine
1 (3 inch) piece of fresh ginger, peeled and thinly sliced
3 cinnamon sticks
½ teaspoon ground cloves
⅓ cup brown sugar, or to taste
¼ cup brandy

Steps:

  • Use a sharp knife or a vegetable peeler to remove the zest from the oranges in strips, being careful to remove only the orange part, leaving the pith behind. Then, juice the oranges into a large, heavy-bottomed pot.
  • Pour the red wine and white wine into the pot with the orange juice. Place the strips of orange zest, ginger, cinnamon sticks, cloves, and brown sugar into the pot with the wine mixture; stir to dissolve the sugar.
  • Cover and heat over medium-high until heated through, but not boiling, reduce the heat to medium-low and heat for an hour or longer to bring all of the flavors together. Adjust the sweetness by adding more brown sugar, as necessary. Strain and serve hot with a splash of brandy, if desired.

Steps:

  • Remove orange peel and spices. Stir in wine. Heat just until hot (do not boil). Serve hot in mugs or heatproof glasses. Garnish each serving with orange slice studded with additional whole cloves.

  • Put the sugar, the orange zest, juice and chunks, cinnamon and nutmeg in a pan with 300ml/1⁄2pt water and bring to the boil. Simmer for 10 mins to infuse the spices, then add the wine and apple slices and bring to a simmer. Serve in heatproof glasses.

Transfer 1/4 cup spice mixture to a small bowl, and whisk in pineapple juice. Cover with plastic wrap, and place in refrigerator until ready to use. Set aside remaining spice mixture.
  • Line a 13- x 9-inch glass or ceramic baking dish with a large sheet of plastic wrap, leaving a 12-inch overhang on 2 long sides. Spread reserved spice mixture on plastic wrap in an even layer slightly larger than the salmon. Place salmon, skin side up, on spice mixture. Wrap plastic wrap tightly around salmon; cover baking dish with plastic wrap, and refrigerate until fish is barely firm to the touch, 10 to 12 hours.
  • Unwrap salmon, and discard plastic wrap. Rinse off most of spice mixture, and pat salmon dry. Lightly grease a flame-proof rack or perforated grill pan set over a large baking sheet with cooking spray; add salmon, skin side down. Brush salmon with 2 tablespoons pineapple juice mixture; refrigerate, uncovered, until surface of salmon forms a pellicle (a thin, slightly dry layer), about 4 hours.
