CHEESY BAKED EGGS

4 tablespoons unsalted butter, at room temperature
3 cups chopped mustard greens
1 clove garlic, minced
Kosher salt and freshly ground black pepper
12 large eggs, lightly beaten
1/2 cup milk
1/2 cup baking mix, preferably Bisquick
2 cups grated sharp yellow Cheddar
2 cups grated Monterey Jack cheese
2 cups frozen hash browns

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon softened butter.
  • Melt the remaining 3 tablespoons butter in a skillet over medium heat. Add the mustard greens, garlic and a pinch of salt and pepper and saute just until wilted, 2 to 3 minutes. Remove from the heat and cool slightly.
  • Whisk together the eggs, milk, baking mix, 1/2 teaspoon salt and some pepper in a bowl until well incorporated. Stir in the mustard greens, cheeses and hash browns. Pour into the greased baking dish. Bake until puffed lightly, golden brown and soft-set in the middle, 45 to 50 minutes. Cool slightly before slicing and serving warm.

This basically is eggs, on top of cheese, on top of cheese, on top of eggs making an interesting concoction of eggs, cheese, and flour. To add a little extra kick, add a small can of diced chiles or jalapenos into the mix. Serve with sour cream, salsa, and green taco sauce.

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 9x13 inch baking dish with the melted butter.
  • Whisk together the eggs, pepperjack cheese, cottage cheese, flour, and salt in a large bowl. Pour the mixture into the prepared baking dish.

1 (8 ounce) package shredded sharp Cheddar cheese, divided
½ cup heavy cream
½ teaspoon dry mustard
½ teaspoon salt
½ teaspoon paprika
10 large eggs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch pan.
  • Cover the bottom of the prepared pan with 1/2 of the sharp Cheddar cheese.
  • Mix together heavy cream, dry mustard, salt, and paprika in a bowl. Pour 1/2 of the mixture over the cheese in the prepared pan.
  • Break eggs over the top, making sure not to break yolks. Cover with remaining cream mixture and top with remaining sharp Cheddar cheese.
  • Bake in the preheated oven until eggs are set, about 20 minutes. Serve immediately.

Steps:

  • Heat the oven (350F/180C/Gas 4). Grease an ovenproof dish well with some butter.
  • Grate the cheese and cover the base of the dish with half of the cheese. Break the eggs, one at a time, into a cup, then slide them carefully on top the cheese. Season well with the salt and pepper, and cover the eggs completely with the rest of the cheese.
  • Dot with the butter and bake in a hot oven for about 15 minutes, until the cheese is bubbling and the eggs are just set. Serve at once, with crusty French bread, roll, or crisp toast, or a salad.

1/4 cup each finely chopped green and red peppers
1 small onion, finely chopped
6 slices firm white bread, cut into 1/2-inch cubes
6 eggs
1/2 cup milk
1/4 tsp. dried thyme leaves
1/8 tsp. ground nutmeg
4 KRAFT 2% Milk Swiss Singles

Steps:

  • Heat oven to 350ºF.
  • Melt butter in medium skillet on medium heat. Add peppers and onions; cook and stir 3 to 5 min. or until crisp-tender. Stir in bread. Whisk eggs, milk, thyme and nutmeg in separate bowl until blended.

Egg and cheese infiltrate the spinach in this creamy dish, it's a wonderful dish to serve at a holiday or brunch buffet, or it makes a nice weeknight dinner, you can substiture frozen chopped spinach in place of the fresh if desired. The cayenne is optional, add in for some heat. For a lower fat recipe use low-fat milk and mozzarella cheese and reduce the butter amount.

1/4-1/2 cup butter
1 onion, chopped
1 -2 tablespoon fresh minced garlic
1 lb fresh spinach (cleaned, stemmed and cut into strips)
2 teaspoons seasoning salt (to taste) or 2 teaspoons white salt
2 cups grated mozzarella cheese, divided
1 teaspoon paprika
black pepper
1 pinch nutmeg
4 large eggs
1/4 cup 18% table cream or 1/4 cup half-and-half cream
cayenne pepper (optional)
1/3 cup grated parmesan cheese (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Butter a medium casserole dish.
  • In a large saucepan melt butter over medium heat; add in onion and garlic, saute for about 3-4 minutes.
  • Add in fresh spinach and seasoned salt, reduce the heat to low.
  • Cover and steam for about 5 minutes; remove from heat.
  • Sprinkle 1 cup (or more) mozza cheese into the bottom of the casserole dish, then spoon the spinach mixture over the cheese.
  • Sprinkle the paprika, nutmeg and black pepper over the spinach.
  • In a medium bowl beat the eggs with cream and cayenne pepper (if using) pour over the spinach mixture.
  • Top with 1/3 cup grated Parmesan cheese (or to taste) then sprinkle with remaining 1 cup mozzarella cheese.
  • Bake uncovered for about 15-20 minutes or until the cheese bubbles.
  • Let stand 5 minutes beeefore cutting.
