HOT AND CRUSTY SHRIMP SANDWICH



Hot and Crusty Shrimp Sandwich image

This open-faced sandwich is fantastic! The recipe is adapted from one in a book given to me several years ago by my mother-in-law called "Season's Greetings", by Marlene Sorosky. Marinating time is not included in prep time.

2 tablespoons vegetable oil
1 garlic clove, minced
2 teaspoons dry mustard
1 teaspoon salt
1/4 cup lemon juice
2 teaspoons red wine vinegar
1 dash cayenne pepper
1/2 medium red onion, thinly sliced
1/2 lb large raw shrimp, peeled and deveined
1 loaf French bread, cut in half horizontally (reserve half for other use)
6 tablespoons butter, at room temperature
5 tablespoons chopped fresh parsley
4 garlic cloves, minced
3 tablespoons sliced black olives
3 tablespoons chopped pimiento

Steps:

  • To make the marinade, mix the oil, garlic, mustard, salt, lemon juice, vinegar, and cayenne in a medium glass or plastic bowl. Stir in the sliced onion and shrimp. Cover and marinate in the refrigerator up to 3 hours.
  • Using your hands, remove as much bread as possible from the inside of the half-loaf of French bread, leaving a 1-inch rim. Place the bread pieces in a food processor (fitted with metal blade) and process into crumbs; measure 1 cup. Saute' the 1 cup crumbs in 2 tablespoons of the butter until golden; set aside.
  • Preheat oven to 400°F With a fork, mix remaining 4 tablespoons butter with 3 tablespoons parsley and the garlic in a small bowl until combined. Spread on the inside of the hollowed loaf. Remove the shrimp and onions from the marinade (reserving marinade) and place in the loaf. Sprinkle with the olives and pimento, then drizzle with 3 tablespoons marinade (discard remaining marinade). Sprinkle with the sauteed bread crumbs and remaining 2 tablespoons parsley.
  • Place the bread on a sheet of foil in the center of the oven. Bake for 18-20 minutes, or until the shrimp are pink and the bread is crusty (watch closely--mine did not take this long).
  • Using a sharp, serrated knife (or a large mezzaluna, as I used), cut into 6 slices to serve. Serve warm or at room temperature.

HOT HONEY SHRIMP



Hot Honey Shrimp image

Chile powder adds sting, honey lends sweetness, and butter gives a creamy richness to these succulent roasted shrimp. Even better, the dish comes together in minutes, making it an ideal after-work meal or extremely speedy appetizer. The shrimp are also excellent tucked into a baguette for a shrimp sandwich. If you happen to have a jar of hot honey (chile-spiced honey), you can use that instead of combining the honey and cayenne. Just be sure to use a light hand with the lime juice at the very end; hot honey also contains vinegar, so taste as you go. If you'd like to double the recipe, you can. Just use two baking pans so as not to crowd the shrimp.

1 tablespoon honey
1/8 teaspoon ground cayenne
1/4 teaspoon grated lime zest
1/4 teaspoon freshly grated ginger
1 garlic clove, grated on a Microplane or finely minced
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound cleaned extra-large shrimp, patted very dry with paper towels
1 tablespoon very cold butter, cubed
Lime wedges, for serving
1 jalapeño, halved, seeded and very thinly sliced, for serving
1 tablespoon chives or scallion greens, finely chopped, for serving
Mayonnaise, for serving (optional)

Steps:

  • Heat oven to 500 degrees.
  • In a medium bowl, combine honey, cayenne, lime zest, ginger, garlic, salt and pepper. Toss in shrimp to coat.
  • Spread shrimp on a large rimmed baking sheet and dot with butter. Roast until shrimp is pink and opaque, but before the edges have started to curl, about 5 minutes. Sprinkle generously with fresh lime juice and toss with jalapeños and chives or scallions. Serve with mayonnaise if you like.

I found this recipe on a card at the supermarket and tweaked it to fit our tastes. I always serve this with assorted crackers.

1 cup mayonnaise
1 1/2 cups grated cheddar cheese, divided
1 1/2 teaspoons Old Bay Seasoning
1 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard
1/2-1 teaspoon hot sauce, to taste
1 lb shrimp, cooked and chopped

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the mayonnaise, 3/4 c cheese, Old Bay, Worcestershire, mustard and hot sauce in a bowl; mix well.
  • Fold in the shrimp and spoon in a 1 quart casserole dish.
  • Top with the remaining cheese.
  • Sprinkle a dash of Old Bay on top.
  • Bake until the dip begins to bubble around the edges, about 15 minutes.
  • Serve hot with crackers.

1/4 cup butter
1 onion, finely chopped
4 cloves garlic, minced
1 lb roma tomato, cored and chopped
1 -2 teaspoon chinese chili paste with garlic
8 ounces sliced mushrooms, rinsed
1 cup dry white wine
1 lb frozen raw tail-on shrimp, thawed (41 to 50 per pound)
1 cup chicken broth
2 tablespoons minced parsley
2 green onions, including tops,ends trimmed and thinly sliced on the diagonal

Steps:

  • In a 12-inch fry pan, melt butter over medium-high heat.
  • Add onion and garlic and stir often until onion is limp but not browned, 3 to 5 minutes.
  • Stir in tomatoes, chili paste, mushrooms, and wine.
  • Bring to a boil over high heat; boil, uncovered, stirring often, until most of the liquid has evaporated, 5 to 8 minutes.
  • Reduce heat to medium-high.
  • Add shrimp and stir often just until shrimp begin to turn pink, 1 to 2 minutes.
  • Stir in broth, parsley, and green onion.
  • Stir just until hot and shrimp are no longer translucent in center (cut one to test), about 1 more minute.

I've had this recipe many times, varying the vegetable with my mood and with what I had on hand. A little hot oil added to the dish is also a nice touch. Adapted from a recipe by Rose Cheng. In the posted pic, I was in the mood for even more vegetables, so I doubled the sauce when I added those (very easy to do). In that one, besides the carrots, I also used shiitake mushrooms, scallions, bok choy, and bean sprouts. Use whatever types and amounts of veggies you like, just cook them crisp-tender.

1 lb fresh shrimp, shelled and deveined
3 tablespoons cooking oil (total amount approximate)
8 dried hot red chili peppers
2 teaspoons minced garlic
1 carrot, sliced thinly
6 tablespoons soy sauce
3 teaspoons sugar
2 teaspoons dark sesame oil
2 teaspoons Worcestershire sauce
1 tablespoon rice wine (or other dry white wine)
2 teaspoons cornstarch
1/4 cup water
3 -4 cups hot steamed rice (optional)

Steps:

  • Stir together ingredients for the seasoning sauce in a small bowl and keep near the cooking area.
  • Stir together the cornstarch and water in a small dish and keep near the cooking area.
  • Heat small amount of oil in wok or large skillet.
  • Add shrimp and stir-fry until they just turn pink and start to curl; remove from pan and set aside.
  • Add a little oil to pan (if needed) and heat.
  • Add dried peppers and garlic to pan and cook just until you start to smell them; do not allow to burn.
  • Add the carrots and cook for 1- 1 1/2 minutes.
  • Return the shrimp to the pan and toss with the carrots.
  • Re-stir contents of seasoning bowl and add to pan.
  • Quickly stir all ingredients.
  • Re-stir the cornstarch and water slurry and add to the pan.
  • Stir mixture and cook until sauce thickens and shrimp are coated with sauce.
  • Remove from heat and serve with steamed rice (if desired).

Because most include vinegar and salt in addition to chiles, all hot sauce needs to become a silky pan sauce is fat. That's the approach used in this super-quick recipe, which tastes like a cross between Buffalo chicken wings and chile shrimp. After charring some scallions in the skillet, shrimp are cooked until plump and pink, then both are tossed with butter and hot sauce until glossy. Because hot sauces vary greatly in terms of heat, start with one tablespoon, then add more as you wish. If it's too spicy for you, add more butter, or serve it with rice, crusty bread, beer, yogurt or ranch dressing to cut the heat.

Kosher salt

  • Transfer the shrimp and any juices to the butter, hot sauce and scallions. Toss vigorously until the butter is melted and the shrimp is glossy. Taste, and add more hot sauce and salt as needed.
