Steps:
- Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of tuna with salt and cracked pepper. Place tuna on hot pan and cook 2 to 3 minutes per side for medium doneness.
- Meanwhile, in a medium bowl, combine pineapple, papaya, onion, chile pepper, lime juice, cilantro, and chili oil. Mix well and season, to taste, with salt. Serve tuna over noodles and spoon salsa over top.
GRILLED PINEAPPLE
Steps:
- Prepare a charcoal grill with a single layer of hot coals.
- When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.

- Drain the pineapple, reserving 1/4 cup of the juice; set aside. In a small bowl, combine sugar and flour. Add the butter and 1 cup cheese; mix well. Gently stir in pineapple. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle crushed crackers on top; drizzle with reserved pineapple juice. Bake, uncovered, at 350° for 30-35 minutes or until bubbly around edges. Remove from the oven and sprinkle with the remaining cheese.

Steps:
- Heat oven to 350*. Spray medium sized casserole dish with non-stick spray. Drain pineapple juice reserving 6 tablespoons.
- In large bowl mix together sugar and flour. Add the cheese and pineapple chunks. Stir until blended. Pour into prepared casserole dish.
- In medium frypan melt butter; add cracker crumbs and reserved juice. Stir until blended.
- Spread crumbs over top of casserole dish. Bake 25-30 minutes or until golden brown.
- Let stand for 5 mintues. Enjoy!
HOT PINEAPPLE
This recipe is a great one to serve at a brunch. The fruity, sweet taste goes well with the often served hashbrown casseroles or sausage casseroles. Of course, you can serve it anytime! I read about this recipe in one of the "Sweet Potato Queens" books, but haven't been able to find it again, so I made it up to match it as best as I could.

- Preheat the oven to 350 degrees.
- Put the pineapple in a greased 1 quart casserole with the cheese. Stir.
- Mix together the sugar, flour, and pineapple juice. Blend well. Pour over the pineapple.
- In a skillet, melt the butter and add the crushed crackers. Stir until the butter is absorbed and the cracker crumbs are coated. Pour the cracker mix on top of the pineapple mixture.
- Bake at 350 degrees for 30 minutes.

- Blitz the pineapple in a blender until smooth, then tip into a dry frying pan over a medium-high heat. Add the lime zest and juice. Stir in the chilli, paprika, cayenne or chilli powder and a pinch of salt and cook for about 5 mins, stirring continuously.
- Tip in the honey and let the mixture bubble for a couple more minutes until slightly thickened. Pour into a small heatproof bowl, stir in the butter and leave to cool. Will keep covered in the fridge for up to five days.

- Preheat the oven to 425 degrees F.
- Arrange the chicken thighs on a baking sheet, evenly spaced, and pat the skin dry with a paper towel. Rub the chicken skin with the oil and season with salt and pepper. Roast until the skin is golden brown and crispy and the meat registers 165 degrees F when an instant-read thermometer is inserted into the thickest part of the meat, 35 to 40 minutes.
- To make the sauce, whisk together the pineapple juice, garlic, honey and hot sauce in a saucepan over medium-high heat. Cook, stirring occasionally, until reduced by half and slightly thickened, 10 to 15 minutes.
- Drizzle the sauce over the crispy chicken skin and serve warm with cooked rice. Sprinkle with cilantro if using.

- To prep the pineapple, slice the pineapple in half lengthwise. To make the pineapple into a bowl, use a small paring knife to cut about 1/4-inch in from the outside edge of the pineapple. Be careful not to cut into the bottom or the edge of the pineapple or the bowl will leak during baking. Now staying within the cut you just made, make cuts on each side of the pineapple core. Turn the pineapple 90° and make cuts widthwise to create 1/2-inch cubes. Use a grapefruit spoon, or a small spoon to scoop out the cubes, cutting them into smaller pieces if needed. Reserve the cubes for roasting, but discard the pineapple core. Use the spoon to gently scrape out the bottom of the pineapple bowl so it’s smooth. Repeat steps for the other pineapple half. Place both halves on one side of the sheet pan. Add reserved pineapple cubes to the sheet pan, as well.
- To prep the rice, add a 1/2 cup of rice, 1/4 cup of frozen peas, 1/2 cup coconut milk, 1/4 cup of water and 1/2 a teaspoon of sea salt to a medium bowl. Stir to combine and pour this mixture into one half of the pineapple. Double up a sheet of aluminum foil and tightly cover the pineapple half, including the pineapple crown, so it doesn’t burn during baking. Repeat steps to make the rice mixture for the other pineapple half and cover it with foil as well.
- To make the sauce for the broccoli and carrots, in a medium bowl, add 1 tablespoon of soy sauce/tamari, lime juice, sambal oelek, and vegetable oil. Add broccoli and toss to coat evenly. Then add broccoli to one section of the sheet pan. Toss carrots in the leftover sauce and then add to another section of the sheet pan.
