4 peaches
1/3 cup elderflower liqueur (such as St. Germain) or sweet dessert wine
1 tablespoon unsalted butter
2 tablespoons plus 2 teaspoons demerara sugar
1/4 cup mascarpone cheese or sour cream

Steps:

  • Preheat the broiler. Halve and pit the peaches, then lightly score the cut sides of each peach a few times with a knife.
  • Combine the liqueur and butter in a medium ovenproof skillet over medium heat; cook, stirring, until the butter melts and the liquid just begins to simmer. Add the peaches, cut-side up, and cook until the bottoms begin to soften, about 4 minutes. Sprinkle each peach half with 1 teaspoon sugar and transfer the skillet to the broiler. Broil until the peaches brown in spots, about 3 minutes. Let cool slightly.
  • Divide the peaches among plates and drizzle with the syrup from the skillet. Serve with the mascarpone.

2 ripe peaches or nectarines, stoned and thickly sliced
2 tbsp clear honey
juice 1 orange
8-10 basil leaves, shredded
vanilla or white chocolate ice cream, to serve

Steps:

  • Melt the butter in a frying pan, add the peaches or nectarines, then cook both sides until slightly softened, about 3 mins. Add the honey and stir to make a sauce, then add the orange juice and allow to bubble briefly. Stir in the basil and serve warm with scoops of ice cream.

2 peaches
1 tablespoon butter
1/2 lemon, juice of
1 1/2 tablespoons brown sugar
vanilla ice cream

Steps:

  • Boil enough water to cover peaches.
  • Drop peaches in boiling water for about 1 minute.
  • Drain water and when cool enough to touch, remove peach skins.
  • Slice peaches into crescent shapes and saute in butter for about 5 minutes until thoroughly warmed.
  • Squeeze lemon over top and add brown sugar
  • Saute for another minute or 2.
  • Remove from heat and serve over very good vanilla ice cream.
  • This is not the time to buy lousy ice cream - really good ice cream will make a difference.

2 heads tightly packed green lettuce
4 small peaches
3 tablespoons olive oil
1 clove garlic, chopped
3 tablespoons chopped fennel, leaves
1 lemon, juiced
3 tablespoons sour cream
4 small fennel, sprigs (for garnish)

Steps:

  • Cut lettuces into 3/4" thick slices.
  • Pit and slice peaches.
  • Heat oil in frying pan on moderate heat and chop in garlic.
  • Put in lettuce, peaches and fennel and stir for 30 seconds.
  • Pour in lemon juice, boil and stir in sour cream.
  • When it bubbles, remove salad from heat and transfer to individual bowls.
  • Garnish with a dollop of sour cream and one fennel sprig per serving.

Grilled Hot Honey Biscuits With Thyme-Roasted Peaches image

Take advantage of fresh peaches by roasting them and serving them over warm biscuits drizzled with honey.

3 large ripe peaches
6 sprigs thyme, picked
2 tablespoons unsalted butter, cut into quarters
2 tablespoons honey
1 pinch salt
4 ounces unsalted butter, cut into small pieces
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon granulated sugar
1 lemon, zest of
5/8 cup buttermilk
3 tablespoons hot honey, such as Mike's Hot Honey

Steps:

  • To make the Thyme-Roasted Peaches:.
  • Cut the peaches in half and remove the pits. Cut the halves into 4 wedges each. Lay half of the peaches in two rows on a piece of aluminum foil large enough to fold over them on both sides.
  • Scatter one tablespoon of the butter, half of the thyme and 1 tablespoon of honey over the peaches. Repeat this process with another piece of foil and the remaining peaches and ingredients.
  • Lightly sprinkle salt over the prepared peaches. Bring the long ends of the foil to meet over the peaches and fold over to seal. Bring the short ends over and press together to seal. This will create two flat packets.
  • Place the packets, seam-side down on a grill set to medium heat. Cook with the grill cover on for 5 minutes. Flip the packets and cook for another 5 minutes until the peaches are tender when pierced with a fork but not over cooked. Let rest.
  • To make the Grilled Hot Honey Biscuits:.
  • In a medium bowl, combine the flour, sugar, salt, baking powder and lemon zest. Add the butter and work it into the dry mixture with your fingers until the butter forms small pea-sized clumps. Stir in the buttermilk and gently knead the dough until it comes together.
  • Roll into a 3-inch-thick log and cut into 8 even pieces. Press the biscuits into 1/2-inch thick disks. The biscuits should be flatter than normal to enable them to be cooked on the grill.
  • Spray both sides of the biscuits with nonstick spray and place on the grill set to very low heat. Cook for 5 minutes on each side with the grill cover on. The biscuits are done when they are firm and not squishy in the middle. (NOTE: due to the inconsistent heat of grills, it's important to monitor the biscuit's cooking. If needed, flip the biscuits more than once to ensure they are cooked through without burning them.).
  • Once the biscuits are done, remove from the grill and drizzle with the hot honey. Set aside to cool slightly.
  • To assemble:.
  • Top the biscuits with 3 or 4 pieces of peaches, making sure to include any delicious juices that seeped out and garnish with a dollop of crème fraiche or unsweetened whipped cream.
