MEXICAN HOT DOGS
If you've ever walked through the streets of Los Angeles late at night, you may have been lucky enough to happen upon a street vendor selling bacon-wrapped hot dogs piled high with caramelized onions, sautéed peppers, pico de gallo, avocado, ketchup, mustard and mayonnaise. This version of Mexican hot dogs, also known as street dogs or Los Angeles hot dogs, is believed to be a riff on a similar recipe that originated in Sonora, Mexico. In Los Angeles, they're sometimes fried on a mobile D.I.Y. griddle made with a wheeled cart, a large sheet pan and a heat source underneath, but we don't recommend trying that at home. For this recipe, a standard sheet pan and an oven will do.

- Heat oven to 400 degrees. Tightly wrap each hot dog with a strip of bacon until most of the hot dog is covered. Transfer hot dogs to an aluminum foil-lined baking sheet. If using jalapeños, place them skin-side down on a separate aluminum foil-lined baking sheet and lightly drizzle with oil. Roast jalapeños until skin starts to blister, about 25 minutes. Roast hot dogs until bacon is browned and starts to ripple, about 30 minutes.
- Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high. Add the yellow onion and cook, stirring frequently, until it begins to brown and shrinks by half, about 10 minutes. Stir in bell pepper and the remaining 1 tablespoon oil; season to taste with salt. Remove from heat when onions are caramelized and peppers are soft, about 20 minutes.
- Make the pico de gallo with avocado: Combine tomatoes, avocado, red onion, cilantro and lime juice in a medium bowl. Season to taste with salt and set aside.
- Toast buns, if desired. Blot excess oil from the hot dogs with a paper towel and transfer to buns. Top with onions, peppers and pico de gallo. Drizzle with ketchup, mustard and mayonnaise. Finish with roasted jalapeños, if desired.

- Seed peppers and chop. Also chop hot dogs.
- Mix the rest of the ingredients and place into at least a 6-quart stock pot. Add hot dogs and bring to a boil.

- In a saucepan over medium-high heat, heat enough oil to cover the potatoes to frying temperature (325 to 350 degrees F), and add the potato rounds. Turn them over when they begin to stick to the pan, and fry until the potatoes are browned and crispy on the outside. (The potatoes can also be cooked in a deep fryer for 3 to 5 minutes.) Set the potatoes aside, and turn the heat down to medium.
- Add the hot dogs, onions and peppers to the remaining oil in the saucepan. Let them cook together and exchange flavors until the hot dogs are done and the onions and peppers are beginning to brown.
- To build The Single: Cut the bread into quarters. Starting at the point of one wedge, slice open through the soft middle of the bread, not across the crust and not completely in half. You should be able to peel open the bread just enough to make a pocket for the dog. Mustard can be added to the inside of the bun. Place one dog on the bottom, then pile with the onions, peppers and about half a potato worth of rounds. If the toppings are overflowing the bun, you're doing it just right. Ketchup and sprinkled red pepper flakes can be added on top. Have a fork handy!
- To build The Double: Cut the bread in half. Slice open a pocket in the middle of the half-moon. Put 2 hot dogs on the bottom and double everything, especially the potato rounds - about 1 potato's worth can fit on top!

SUNNY'S JALAPEñO POPPER HOT DOGS

- For the spread: Put about 2 inches of oil in a small saucepan and line a plate with paper towels.
- Heat the oil over medium-high heat until swirls appear on the surface of the oil, about 5 minutes, then add the jalapeños. Fry until they begin to wrinkle and the thin outer skin begins to separate, about 5 minutes. Remove and drain on the lined plate. Let cool slightly, then chop finely, removing seeds if you'd like less heat. Fold together the jalapeños, cream cheese and salt and pepper to taste in a bowl.
- For the hot dogs: Cook the hot dogs in the same frying oil until they plump and begin to blister, about 5 minutes. Remove and drain on the lined plate. Slather the insides of the warm hot dog buns with the cream cheese mixture, then add a hot dog to each and top with a drizzle of the nacho cheese sauce and a sprinkle of the chopped fried jalapeños.
CHEESY HOT DOGS WITH PICKLE-PEPPER RELISH

- Make the relish: Combine the vinegar, sugar, celery seeds and mustard seeds in a small saucepan. Bring to a boil and cook until syrupy, about 2 minutes. Transfer to a bowl; let cool slightly. Stir in the dill pickles, yellow peppers, pimientos, pickled jalapenos and chives. Cover and refrigerate at least 1 hour or overnight. Season with salt.

- Mix tomato juice, vinegar, sugar, ketchup and garlic.
- Cook 30 Minutes.
- Cut stem end off of banana peppers and remove seeds (use rubber gloves if making hot peppers).
- Stuff 1 Vienna sausage (or hot dog) into each pepper.
- Pack peppers tightly into pint or quart jars.
- Bring sauce to boiling.
- Pour over peppers.
- Wipe rims of jar with a clean cloth; place llids and screw on rings fingertip-tight.
- Set the jars on lids for 5 minutes and then set right-side up until lids pop.**.
- **This is an heirloom recipe that uses the inversion method, which is no longer recommended by the USDA/NCHFP (National Center for Home Food Preservation) because it can affect the ability of the lid to form a good, secure seal to the jar. LA STREET DOGS (AKA BACON WRAPPED HOT DOGS)

- Slice the top off the bulb of garlic so the cloves are exposed. Add some olive oil, salt and pepper. Wrap the garlic in foil and put in a 400ºF oven for about 35 minutes.
- Squeeze the garlic out of the bulb and put it in a food processor. Add the mayo and the crema. Season with salt and pepper and blend until you get an even consistent sauce.
- Add some olive oil to a medium high pan. Add the sliced yellow onion and cook for about 3 minutes just until it softens slightly.
- Add the poblano and red pepper, season with salt and pepper and sauté for about 5 minutes or until the peppers and onions are softened. Remove from the pan and set aside in a covered bowl.
- Wipe the pan clean. Add a tablespoon of olive oil and sauté the jalapenos for about 5 minutes. Place them with the other sauteed vegetables, cover and set aside.
- Add the milk to a saucepan or pot. Add the cream cheese and bring to a simmer.
- in a separate bowl, combine the cornstarch, turmeric, cumin, garlic powder and onion powder. Once the cream cheese is melted into the milk, slowly whisk in the spice mixture.
- When the mixture starts to bubble, start adding the shredded cheese a bit a time so you can melt it evenly. Set it aside off the heat.
- Loosely wrap two strips of bacon on each hot dog. Use a toothpick to secure the strips. Place them on a baking tray and into a 375ºF oven for about 15 minutes.
- Take the hot dogs out and let them cool. Place them on a medium frying pan, turning them frequently for about 5-7 minutes or until they become fully cooked through. Set them aside.
- add a thin line of extra mexican crema to the bottom of the hot dog bun.
- Place the bacon wrapped hot dog inside. On Top of the hot dog, add some of the nacho cheese sauce, followed by the pico de gallo. Enjoy!
