Hot dogs, buns, and American cheese - can you think of three ingredients better for game day? Here's a twist on that classic combination that turns a cheese dog into a proper melt for the next time you and your friends gather to root for your favorite team.

1 hot dog
1 hot dog bun (such as ball park)
4 slices of american cheese

Steps:

  • Preheat a gas grill, griddle, or grill pan on high heat. Place the hot dog on the grill and keep a watchful eye on it, rolling it so that it rotates every 30 to 45 seconds. Remove once the hot dog is cooked all the way through.
  • On the same hot grill, place the open hot dog bun inside-down on the grill until golden brown before flipping. Place slices of American cheese on the inside of the bun (which is now face-up); slice the grilled hot dog and place pieces on top of the cheese. Carefully close the bun, which contains both the cheese and sliced hot dog. Using a large spatula or spoon, press entire sandwich down so that it flattens and the cheese begins to melt. After a minute or two, flip over sandwich and repeat on the other side. Once both sides of the bun are toasted and the cheese is viscous, remove the melt from the grill.
  • Serves 1.

1/4 cup butter
1 sweet onion, thinly sliced
1 (4 ounce) package cream cheese
4 hot dogs or 4 your favorite sausages
4 hot dog buns
brown mustard
sauerkraut (optional)

Steps:

  • Preheat grill or grill pan for medium-high heat.
  • Melt butter in a skillet over medium heat. Add onions, and cook slowly until the onions have softened and turned deep brown, about 15 minutes. Warm the cream cheese over low heat in a small skillet until very soft.
  • Grill hot dogs until well browned. Lightly grill hot dog buns on both sides.
  • To assemble cheese dogs, spread warm cream cheese on toasted hot dog bun, add hot dog or sausage, top with onions, mustard and sauerkraut, if desired.

Long before Tuna Melts, in their many variations, became standard on every menu, my mother discovered this 1950's recipe. We grew up having these kid-friendly rolls on Friday nights when, as Catholics, we were forbidden meat. Served in corn-on-the-cob dishes with a side of french fries and a salad, Mom was out of the kitchen in under 45 minutes and we kids were in hog heaven!

8 hot dog buns
24 ounces solid white tuna packed in water, drained
1/4 cup pickle, chopped (you can use dill or sweet, your preference)
2 tablespoons onions, finely minced
8 ounces cheese, diced (you can use Velveeta or sharp cheddar, your preference)
3/4 cup mayonnaise

Steps:

  • Drain and flake tuna in a medium bowl.
  • Add pickles, onion and cheese and mix well.
  • Add mayonnaise and mix well.
  • Fill hot dog rolls and wrap each in tin foil, twisting both ends to close.
  • Place on cookie sheet and bake at 350 degrees for 20-25 minutes.
  • Serve in corn-on-the-cob dishes with french fries and a salad.
  • These can also be cooked on a grill, making them suitable for camping.

6 slices bacon
1 large onion, sliced and separated into rings
4 large hot dogs
1 loaf rye bread or 1 loaf pumpernickel bread, sliced in half lengthwise (one-pound)
4 slices swiss cheese
2 slices American cheese

Steps:

  • In a large skillet, cook bacon until crisp.
  • Drain on paper towels.
  • Reserve 2 tablespoons drippings.
  • Cook onion in reserved drippings until tender.
  • Cook hot dogs in boiling water for 5 mintues or until heated through.
  • Drain.
  • Toast bread under broiler.
  • To assemble sandwiches, cut hot dogs in half lengthwise, cutting to but not through the other side.
