Steps:
- Make spinach filling. Combine the spinach, onion, spices, and herbs in sauce pan and cook for 5 minutes, just long enough to warm and combine ingredients. Let cool and drain excess liquid.
- Make egg wash for pastry. Beat eggs and add in sunflower oil and yougurt. Set aside.
- Decide on layering technique, and start layering your yufka or pastry dough, brushed with egg mxture, then spinach.
- Brush the remainder of egg wash on top and sides of borek, and sprinkle with sesame seeds if desired.
- Bake in preheated 350 degree oven for about 40 minutes, until browned.
- Remove from oven and serve warm.

- Preheat an oven to 400 degrees F (200 degrees C).
- Brown ground beef in a large non-stick skillet over medium heat, 5 to 7 minutes. Drain fat; stir in allspice, paprika, salt, and pepper. Transfer beef to a large bowl and stir in potato and onion.
- Unroll phyllo pastry and transfer 2 sheets to a work surface; stack sheets. Spoon 1/8th of the ground beef mixture down one long edge of the phyllo pastry. Roll phyllo into a tube, encasing beef. Shape the tube into a coil (snail shape). Place the roll on an ungreased baking sheet; brush with melted butter. Repeat, placing finished rolls up against one another to keep them from unrolling.
- Bake burek in the preheated oven until golden brown, 20 to 30 minutes.

- Take a large bowl and combine the flour and the salt
- Add the water bit by bit, mixing until the mixture forms a dough
- Knead the dough for around five minutes, until it turns quite stretchy
- Split the dough mixture into batches of four and press down to flatten
- You need to find a bowl or a pan which is large enough to hold the dough when it is piled up on top of each other
- Add a little bit of vegetable oil to the pan or bowl and put the first flattened piece of dough inside
- Add a bit more oil (not too much), and add another piece of dough - repeat until you've done the same with all four pieces
- Add more vegetable oil on top of the last piece and place to one side to rest
- Preheat your oven to around 200°C (390°F)
- Add a little vegetable oil over your work surface (a table is best) - just a little!
- Remove one piece of dough from the bowl and remove the excess oil
- Flatten the piece of dough until it reaches a thickness of no more than around half a centimeter
- Handle the dough and stretch it outwards, over and over, so that you pull it to around 1 meter in diameter - you might end up with a few holes but don't worry about it too much. By the end, you should be able to see through the dough
- Take one side of the dough disc and fold it over, towards the center
- Repeat this process until you have a shape that resembles a pentagon
- Repeat with the second piece of dough
- Add your filling (see below for the filling instructions) to the dough piece
- Add the first piece of stretched dough into the middle of the second one, and cut away the thick edge of the second piece - you can throw this away, you won't need it
- Fold over the edges of the dough, so that you get a pentagon shape once more, and put it into a baking pan or tray
- Put the pan in the oven and bake for around half an hour, until it is a golden color
- Remove from the oven and let it cool down
- Cut into 12 pieces
- Repeat the process with the rest of the dough
- Bake until the pastry turns golden, and serve while warm!

- Take a large pan and heat up the oil over a medium heat
- Add the onion and cook until soft
- Now, add the mince and cook for around 2 minutes, stirring regularly
- Now, add the potato, the rosemary, the garlic, and the paprika, and stir to combine
- Add the salt and continue to cook, ensuring the beef mince is cooked through
- Once cooked, drain the beef with a sieve to get rid of any excess oil and press down to dry it out

- First, know that yufka, like phyllo dough, is delicate and might break. That's completely okay.
- To make the spinach filling: Heat olive oil in a pan over medium heat. Saute onion until golden, add spinach and cook until the spinach is wilted. Once the spinach is cool enough to handle, mix it with cheese, salt and pepper.
- To make potato filling: Wash and peel the potato. Cut it into large chunks and boil until fork tender. Mash the potato completely and add Aleppo pepper, salt and black pepper.
- To make the cheese filling: Mix cheese with parsley, salt and pepper.
- Place a triangle shaped yufka dough on a clean surface, with the wide side facing you. Wet your finger with water and moisten the edges. This will help the edges to stick while rolling.
- Add one to two tablespoon of filling one inch away from the wide edge and form it into a thin log.
- Fold the outer corners over the filling and roll the borek. Dip your index finger in water and wet the edges again and roll tightly. Set aside and continue with the remaining yufka and filling.
- Heat 2 tablespoons vegetable oil in a non stick pan over medium heat. Once the oil is hot, place the boreks in the oil and fry on all sides until crispy and golden. Don't over crowd the pan. Place the boreks on a kitchen paper towel to absorb the excess oil.
- Continue with the remaining boreks and add more oil if needed.

- Heat oil in a non stick pan and add small potatoe cubes. Let fry until they are crispy and brown.
- After a couple of minutes (before potatoe cubes go brown) add onion and garlic. Don't let them burn.(you can add a bit of water to prevent that from happening).
- Add allspice, salt and pepper to taste.
- Butter a dish/pyrex/ with one TB of meltet butter.
- Take one phyllo sheet, brush with meltet butter, and put another pastry sheet on top of it.
- Place potatoe filling on one end of the phyllo sheets.
- Roll up like a cigar and form a spiral.
- Do so with the rest of sheets and filling.
- Place burek spirals into form and brush with the rest of the melted butter.
- Let bake at 180°C until golden, crispy (about 15 to 20 minutes).
- Enjoy with salad and/or yoghurt sauce.

One of the foods that I say fortunately exists in Turkish cuisine is borek. It is impossible to imagine what kind of creativity it was invented with. It is very difficult to understand how the people who invented such beautiful foods are forgotten. Yes, painting, music, sculpture are very important arts and maybe even less important than they should be. But I'm sure many people will agree with me that a good meal can satisfy one's soul at least as much as a good painting or composition. Therefore, I think the inventors of the dishes should be investigated and the necessary respect should be shown. Maybe because eating is a fast-paced art, it can be difficult to find the first to do it. But at least, the answers of the questions such as which region came from, which civilization and under what conditions made this dish, what conditions forced people to cook this dish should be investigated. We may not be able to pay for the inventor of the food, but at least we are doing the food we eat in this way. I would be very happy if the first research starts from borek. Because if its inventor is found, I want to pray to him by name every time I eat this borek. There are dozens, maybe hundreds of borek varieties right now. - For the potato part of this filling, you can bake a potato, use a leftover baked potato, or use leftover mashed potatoes. If you're baking a potato, place a rack on the lowest part of the oven and another rack in the middle of the oven. Place a baking sheet on the lowest rack of the oven (line with aluminum foil for easier cleanup). Preheat the oven to 400 degrees F. Scrub the potato clean and pat them dry. Stab a few slits on both sides of the potato with a sharp steak knife. (Note that there are two potatoes in these pictures, but you will only need one.)
- Hold the potato over a mixing bowl and rub it with extra virgin olive oil, then coat lightly with kosher salt.Place the potato directly on the middle rack above the baking sheet. Let the potato bake for 60-70 minutes till soft inside.Squeeze the potato after baking to test for doneness-- it should give when you apply pressure. Remove potato from the oven and let it stand uncovered till cool.Peel the potato with your fingers, then mash it. You should end up with about 1 cup of mashed potatoes. Alternatively, you can use a leftover baked potato for this step (of the correct size). You can also use leftover mashed potatoes (make sure they're dairy or pareve if you're keeping kosher). You'll need about a cup of cold or room temperature mashed potatoes total, no matter which of these methods you choose.
- Preheat oven to 350 degrees F. In a mixing bowl, combine mashed potato, feta, kashkaval, egg, a pinch of salt and a pinch of black pepper (if using all feta cheese or pre-seasoned mashed potatoes, no need to add any salt). Use a fork to mix ingredients together till well blended. Make sure to break up any large crumbles of feta with the fork. Reserve mixture.On a smooth, clean, lightly floured surface, unfold one of your puff pastry sheets. Use a rolling pin to roll out the sheet to a 12x12 inch square. If using homemade puff pastry, roll your dough out to the same size - a 12"x12" square. Cut the sheet of puff pastry dough into 9 equal-sized squares, each about 4"x4" large.Place 1 heaping tablespoon of the potato cheese filling on one corner of each square, spreading it out into a triangle shape 1/4 inch from the edge to halfway across the square. The filling will create a diagonal triangle inside the square.
- Fold the dough square by grasping the opposite corner and folding it up and over the filling to make a triangle. Pinch firmly along the outer open edge of the triangle to seal.You can also crimp the edges with the tines of a fork, if you wish.Repeat this process for the remaining squares, then for the second sheet of puff pastry-roll out the pastry, cut into squares, add filling, and seal the triangles.
- Spray your baking sheets with nonstick cooking spray or line with parchment paper. Place 9 bourekas on each sheet, evenly spaced, giving them a little room to expand during baking.
- In a small bowl, whisk together the egg yolk and 2 tsp of cool water. Use a pastry brush to brush a light layer of the egg wash onto the surface of each boureka. Sprinkle the bourekas with sesame or poppy seeds, if desired.
- Bake the bourekas for about 35 minutes, switching the baking sheets between the upper and lower racks halfway through cooking. Bake till golden brown and cooked through.
- Serve warm. Store in a sealed container or plastic zipper bag.To freeze bourekas: prepare, fill, and seal the pastries. Do not coat with egg wash or bake. Place the unbaked pastries in a Tupperware or plastic bag in single layers, separating each layer of bourekas with a piece of parchment paper or wax paper to keep them from freezing together. Freeze.When ready to bake, take the bourekas out of the freezer (no need to defrost) and arrange them on a baking sheet sprayed with nonstick oil. Coat with thin layer of egg wash and sesame or poppy seeds, if desired. Bake at 350 degrees for 35-45 minutes till golden brown, crisp and flaky.

POTATO BOREKS - BOREKAS TAPUKHAY ADAMA
Borekas are savory or sweet pastries made with puff pastry and a variety of fillings. The shape of a boreka usually tells you what the filling is -- triangles for cheese, squares for potatoes, twists for spinach. They are found everywhere on the streets in Israel, often treated as if they were sandwiches. The vendor opens the boreka to add chopped eggs, tomatoes and tahini sauce to the filling (which I haven't listed below, though I do include a recipe for a side of Haminados eggs). He then presents it to you with pickles. The Haminados eggs are simply eggs hard boiled in water containing dried onion peels, salt and pepper, with the option of adding a tablespoon or two of coffee grounds or instant coffee. This imparts a brownish color and wonderfully subtle flavor, which won't taste like either coffee or onions. At the Arab stalls, borekas are sold with a garnish of za'tar and salt. Whichever way you have them, plain or filled, they are totally irresistible. - Place eggs in a pot and add oil, salt, pepper, onion peels and coffee grounds, if using, in water to cover. Bring to a boil on high heat, then reduce to a simmer and cover the pot with the lid slightly ajar. (The eggs will be ready in one hour but most cooks leave them on very low heat overnight.).
- Fry the onion in the oil until lightly golden. Season the potatoes with salt and pepper to taste, add the onions and cheese if you're using it, and mix well. Set aside.
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Roll the puff pastry quite thinly, about 1/4" or less, and cut into 6 equal squares.
- Divide the filling into 6 parts. Place one portion in the middle of a square and fold into a triangle. Press hard on the sides to seal well and brush with the egg yolk. Repeat with the remaining dough and filling. Sprinkle the borekas with sesame seeds.
- Bake on the middle shelf of the preheated oven for 25-30 minutes, or until crisp and golden. Check the bottoms to see if they are done they should be brown. Serve warm or at room temperature with haminados eggs.
- NOTES: These cannot be refrigerated, but can be frozen, preferably before baking.

- Gently saute the onion for around 5 minutes until soft.
- Add the beef mince and brown.
- Add a pinch of cinnamon, salt and pepper, and the chopped parsley and stir well.
- On a gentle heat add the beaten egg taking care not to let it scramble.
- Let this mixture cool or the pastry will disintegrate.
- Place 2 or 3 tablespoons of beef mixture about 1.5 inches from the bottom of the phyllo pastry sheets (feuille de brik) leaving approximately one inch either side.
- Cut the cheese in half and lay across the mixture.
- Pull the phyllo (brik) up from the bottom; fold the sides to the centre of section and continue to roll.
- Place the Boreks (fold side down) in a frying pan with vegetable oil.
- Fry on both sides until golden.

- Preheat oven to 350 degrees. In a bowl, blend the feta and mozzarella cheese with the beaten eggs. Add the chopped herbs, season with pepper and nutmeg and stir well to mix.
- Cut the sheets of pastry into four rectangular strips approximately 3 inches wide. Cover all but one or two strips with a damp cloth to prevent them from drying out.
- Brush on strip of pastry at a time with a little melted butter. Place 1 teaspoon filling at the bottom edge. Fold one corner over the filling to make a triangle shape. Continue folding the pastry over itself until you get to the end of the strip. Keep making triangles until all the mixture is used up.
- Place the boreks on a greased baking sheet and bake in the oven for about 30 minutes or until golden brown.

- Fill a medium saucepan with cold water and add the potatoes in.
- Put the pan on medium heat, bring to a boil and gently simmer the potatoes on low heat for 30 minutes or until soft in the middle.
- Cool the potatoes down under running cold water and peel.
- Grate the potatoes and set them aside.
- In a separate bowl, whisk the eggs and then add the milk along with the melted butter.
- Add the mixture into the bowl with the grated potatoes.
- Add chopped parsley, feta and kasar cheese, salt, freshly ground pepper and chilli (if using) to the bowl and give it a good stir.
- Preheat the oven to 180 C°.
- Lay a sheet of yufka on a work surface and spoon ⅓ of the potato filling onto it. Spread the mixture evenly with the back of a spoon, taking care not to tear the yufka.
- Place the second yufka sheet on top and cover it with another ⅓ of the filling.
- Trim the sides of the yufka into a square and place the trimmings on top of the filling.
- Repeat the same with the last yufka and the potato filling.
- Roll the yufka sheet carefully into a neat cylinder.
- Cut the cylinder into two equal pieces.
- Wrap them with cling film and then place them into the freezer for about an hour or until semi-frozen.
- Wrap the cylinder with cling film and place it into the freezer for about an hour or until slightly frozen and easy to handle.
- Cut the cylinder crosswise into slices two fingers thick using a sharp knife, and arrange them on a greaseproof paper-lined baking tray(s).
- Eggwash the slices and sprinkle on some sesame seeds or nigella seeds.
- Cook them in preheated oven for about 30 minutes or until golden and crispy.

ISRAELI POTATO BOUREKAS (PAREVE)

- Place the potatoes in a saucepan or stockpot with enough cold water to cover by 1 inch. Bring to a boil over medium-high heat.
- Cook uncovered until the potatoes are tender and easily pierced with a fork, 20 to 25 minutes.
- Drain the potatoes and place in a large bowl. Pass through a potato ricer or mash with a potato masher or wire whisk. Set aside to cool.
- If adding the onion and garlic, warm the oil (or melt the margarine or butter) in a large skillet set over medium-high heat. Add the onion and garlic and sauté until soft and translucent, 5 to 7 minutes. Stir the mixture into the potatoes.
- If you're not using the onions and garlic, simply add the olive oil, margarine, or butter to the potatoes.
- Season to taste with salt and pepper.
- In a small bowl, beat one of the eggs . While stirring the cool potato mixture, slowly add the beaten egg. Mix well until the egg is totally integrated into the mashed potatoes.
- Heat the oven to 375 F / 190 C. Line a large rimmed baking sheet with parchment paper . Fill a small bowl with water. If using puff pastry sheets, cut them into 5-inch squares.
- Place a heaping tablespoon of filling in the center of each square. Dip your fingers in the water and dampen the edges of the squares, then fold in half diagonally or vertically to form triangular or rectangular pastries. Pinch the edges together to seal the filling inside.
- Beat the second egg and brush it over the tops of the bourekas. Sprinkle sesame seeds on top. Place the pastries on the prepared baking sheet and bake for 30 minutes or until the bourekas are puffed and golden.
- Serve warm and enjoy.
