This chocolate cake is all the rage at trendy restaurants. Just crack it open to find a lovely gooey center.

1/2 lb bittersweet chocolate, finely chopped
1/2 lb unsalted butter
6 eggs
1 1/2 cups sugar
1/2 cup flour

Steps:

  • Preheat oven to 400°F.
  • Butter the bottom and sides of 15 4oz ramekins.
  • Sprinkle with sugar, tapping to remove extra sugar.
  • In double boiler, melt the chocolate and butter.
  • Whisk until thoroughly melted.
  • In a large bowl whisk together the eggs, sugar and flour until just blended Gradually whisk the chocolate into the egg mixture until combined.
  • Evenly divide the mixture between the prepared ramekins, using about 1/3 cup for each Place the ramekins on a baking sheet for 10-12 minutes until the tops are firm and beginning to crack and the edges are set Remove from oven and serve immediately with ice cream.

If you have hot chocolate mix kicking around in your pantry, use some of it to make this easy dessert. Our hot chocolate pudding is topped with whipped cream, butas on the real thingmini marshmallows would be great too!

4 1/2 cups whole milk
3/4 cup sugar
2/3 cup hot chocolate or cocoa mix, plus more for sprinkling
1/3 cup cornstarch
Kosher salt
5 large egg yolks, beaten
2 teaspoons pure vanilla extract
Whipped cream, for topping

Steps:

  • Heat 4 cups of the milk in a large saucepan over medium heat until steaming.
  • Meanwhile, whisk the sugar, hot chocolate mix, cornstarch and 1/4 teaspoon salt in a large bowl. Whisk in the egg yolks and the remaining 1/2 cup milk.
  • Slowly add half of the hot milk to the egg mixture, whisking constantly until smooth. Gradually whisk the egg-milk mixture into the remaining hot milk in the saucepan and bring to a boil over medium heat, whisking constantly. Continue to cook, whisking constantly, until the mixture has thickened to a pudding-like consistency, 3 to 4 minutes. Remove the saucepan from the heat and stir in the vanilla.
  • Let the pudding cool slightly, stirring a few times to prevent a skin from forming. Place a piece of plastic wrap directly on the surface of the pudding and refrigerate until it has completely cooled and thickened, about 4 hours.
  • Before serving, whisk the pudding vigorously until it's smooth and creamy. Spoon it into serving bowls and top with dollops of whipped cream and a sprinkling of hot chocolate mix.

6 tablespoons unsalted butter
1 ounce unsweetened baking chocolate, chopped
1 egg yolk, from a large egg
1 cup all-purpose flour
1 1/4 cups granulated sugar
2/3 cup unsweetened dutch cocoa
1 teaspoon baking powder
1/4 teaspoon salt
2 1/2 cups milk
2 teaspoons vanilla extract
1/3 cup packed light brown sugar
1 1/2 pints vanilla ice cream

Steps:

  • Heat oven to 350 degrees. You'll need a shallow baking dish.
  • Microwave butter and chocolate in a small bowl just until melted; stir with a whisk to combine, then stir in yolk until well blended.
  • Whisk flour, 3/4 cup granulated sugar, 1/3 cup cocoa, the baking powder and salt in a medium bowl until blended. Stir in 1/2 cup milk, the butter mixture and vanilla until smooth. Spread batter into an ungreased baking dish.
  • Mix remaining 1/2 cup granulated sugar, remaining 1/3 cup cocoa and the brown sugar in a small bowl with fingers or a fork until blended. Sprinkle over batter.
  • Heat remaining 2 cups milk in microwave just until simmering. Slowly pour over mixture in baking dish--Don't Stir.
  • BAke 45 minutes. Spoon into dessert bowls. Top each serving with a small scoop of ce cream. Serve immediately or pudding layer will be absorbed by cake layer.

1 cup flour
1 1/2 cups sugar (divided)
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, melted
1/2 cup cocoa (divided)
1/2 cup milk
1 teaspoon vanilla
1 1/2 cups hot water

Steps:

  • Melt butter in a 9 inch square pan.
  • Add 1/4 cup cocoa, milk, and vanilla to pan and mix well with a fork.
  • Sprinkle flour, 3/4 cup sugar, baking powder and salt into pan, and mix well with a fork.
  • Combine 3/4 cup sugar and 1/4 cocoa in a small bowl and sprinkle over batter - DO NOT mix it inches
  • Carefully pour hot water over all and DON'T mix that in either!
  • Bake 350 for 40-45 minutes.

  • Preheat the oven to 375° F. (190° C), with rack set in lower third of oven. Set ramekins or baking dishes on a baking sheet. No need to grease.
  • Put the butter and chocolate in a medium-sized bowl, then set the bowl over a saucepan of barely simmering water. Stir gently until smooth. Remove the bowl from the heat and set aside.
  • Using an electric mixer or by hand with a whisk, whip the eggs, sugar, and salt until the mixture is light and foamy, and just holding its shape (like soft whipped cream). This should take about 5 minutes with an electric mixer, or longer if doing by hand. Fold one-third of the beaten eggs into the chocolate to lighten it, then scrape the lightened chocolate mixture over the beaten eggs, and fold it in just until there are no streaks of eggs visible.
  • Divide the batter into the baking dishes, filling them no more then 3/4 full (They will rise). *Note: If you like, you can cover and refrigerate batter in dishes now to bake later. Note that a cold batter will take longer to cook.
