SIZZLING SAUSAGE SALAD
A classic wintry salad topped off with tasty sausage and onion

Steps:
- Heat the oil in a wok or deep frying pan. Using scissors, snip the sausages into quarters straight into the pan. Throw in the onion, and fry for a minute or two, stirring every now and then to brown everything. Spoon in the mustard and sugar, tip in the tomatoes and cook for a few minutes more, stirring occasionally, until the tomatoes are just beginning to split and the mixture is coated in the sweet mustard glaze.
- Meanwhile, separate the lettuces into leaves, peel, stone and slice the avocado and halve and slice the cucumber. Mix them together and pile onto a platter. Spoon the hot sausage mixture on top. Add the vinegar and 1 tbsp water to the pan and stir it over the heat to dislodge all those tasty flavourings from the pan. Spoon the pan juices over the salad and serve with crusty bread.

CLASSIC HOT CHICKEN SALAD
Steps:
- Preheat oven to 425 F.
- Butter a 2-quart baking dish or baking pan.
- Combine the cubed cooked chicken, celery, mayonnaise, toasted almonds, lemon juice, and chopped onion in a bowl. Taste and add salt, if needed.
- Stir 1/2 cup of the toasted breadcrumbs into the chicken mixture.
- Spoon the chicken salad mixture into the prepared baking dish.
- Sprinkle with the shredded cheese.
- Toss the remaining 1 cup of toasted breadcrumbs with the melted butter. Sprinkle over the cheese layer.
- Bake the casserole for 15 to 20 minutes, until the topping has browned and the filling is bubbly around the edges.
- Garnish with chopped green onion tops or parsley, if desired.
- Serve the chicken hot with cooked rice and a tossed salad, steamed broccoli, or green beans.
- To toast the almonds, spread them out in a single layer in a dry skillet.
- Place the skillet over medium heat and cook, stirring constantly, until the almonds are lightly browned and aromatic.
- Remove to a plate or bowl immediately so they won't over brown.
- To make homemade toasted breadcrumbs , heat the oven to 325 F.
- Cut or tear fresh or day-old bread into small pieces.
- Spread out on a large rimmed baking sheet.
- Sprinkle with a small amount of kosher salt , if desired.
- Bake for about 12 to 14 minutes, or until dry and lightly browned.
- Crush the dried bread coarsely or finely and use in the recipe.
- Freeze extra breadcrumbs in a zip-close food storage bag.

HOT CHICKEN SALAD
I've always doubled this recipe since our family of five loves it so much. I use chopped or sliced almonds.

- Preheat oven to 350 degrees F (175 degrees C).
- Combine the chicken, celery, almonds, bell pepper, onion, pimento, salt, lemon juice, and mayonnaise. Mix well and pour into a 1 1/2 quart casserole dish.
- Top with grated cheese and the crushed potato chips. Bake for 25 minutes or until cheese is melted.

- Preheat oven to 325 degrees F ( 165 degrees ).
- Mix together chicken, celery, lemon juice, chopped onion, toasted almonds, mayonnaise, sour cream, and grated cheese and place mixture in a lightly greased 9x13 inch baking dish. Top with crushed corn flakes.
- Bake in preheated oven for 45 minutes to 1 hour, until heated through.

HOT CHICKEN WITH SAUSAGES, TOMATOES & PEPPERS
Cook this moreish meat feast of chicken thighs with spicy sausages, tomatoes and peppers. It tastes great served with pilaf rice or mashed potatoes

- Heat oven to 200C/180C fan/gas 6. Heat half the oil in a big shallow casserole dish in which the thighs can lie in a single layer - one 30cm across is ideal, if you use a bigger dish the sauce may evaporate. Quickly brown the chicken on both sides - you don't want to cook the chicken through, just get some colour on it - then remove from the pan. Do the same with the sausages in the remaining oil, colouring them all over. Cut the sausages on the diagonal into three or four pieces. Drain the peppers of their brine and cut into broad strips.
- Add the onions and tomatoes to the dish or roasting tin with the chilli, garlic, seasoning, sherry vinegar, rosemary and sausages. Heat the stock and add that too. Mix everything together. Arrange so that the chicken is on top. Bake in the oven for 30 mins, stirring the 'sauce' that forms around the vegetables halfway through.
- When 30 mins is up, add the peppers and cook for another 10 mins. The chicken should be cooked through with a thick sauce around it. Serve with rice pilaf, little potatoes that you've roasted in olive oil or mashed potato (mash or rice with a little saffron in it would be lovely).
