STRAWBERRY BROWNIE SHORTCAKE

2 boxes brownie mix, prepared according to package directions
1 cup sour cream
1 cup prepared whipped cream (I have been known to use Cool Whip on occasion)
1-pint strawberries, hulled and sliced

Steps:

  • Preheat the oven to the temperature indicated on the brownie mix box. Spray 2 8" round cake pans with nonstick cooking spray. Divide the batter between the prepared pans and bake according to the box instructions. Let cool on wire racks, then turn out of the pans. If the top of the cakes are domed, slice the tops with a serrated knife so you have an even, flat, cake. Put 1 brownie cake on a serving platter to form the bottom layer.
  • Fold the sour cream into the whipped cream. Spread the brownie with about half of the whipped cream mixture and half of the berries. Place the second brownie layer on top. Add a scoop of the whipped cream mixture and a few berries. Slice and serve with extra berries and whipped cream mixture.

6 ounces vodka
2/3 cup sugar
5 ounces fresh sweet cherries (1 cup), pitted and halved, plus more for serving (optional)
9 ounces fresh berries (1 1/2 cups), such as raspberries and blackberries, plus more for serving (optional)
9 ounces chocolate wafers, such as Nabisco Famous
4 tablespoons unsalted butter, melted
Kosher salt
1 pint cherry ice cream
1 1/2 cups heavy cream
1 pint vanilla ice cream
5 ounces semisweet chocolate

Steps:

  • Combine vodka and 1/3 cup sugar; gently stir in cherries and berries. Let stand 2 hours, stirring occasionally; or refrigerate, covered, up to 12 hours. Strain (reserving syrup for another use).
  • Pulse wafers in a food processor until finely ground. Add butter and 1/2 teaspoon salt; pulse until mixture has the texture of wet sand. Press half of mixture into the bottom of a 9-inch springform pan; freeze until firm, about 30 minutes.
  • Temper cherry ice cream in the refrigerator until it has the texture of soft-serve, about 20 minutes. Meanwhile, beat cream with remaining 1/3 cup sugar to soft peaks. Stir two thirds of whipped cream (refrigerate the remainder) into cherry ice cream just to combine. Pour ice cream mixture over crust; smooth top and freeze until firm, about 1 hour.
  • Top with remaining crumb mixture; press to lightly pack. Freeze 20 minutes. Meanwhile, temper vanilla ice cream in the refrigerator about 20 minutes, then stir into remaining whipped cream just to combine. Fold in half of cherry-berry mixture. Spread over crumb mixture, smooth top, and sprinkle with remaining berry-cherry mixture. Cover and freeze at least 4 hours and up to 2 days.
  • Melt chocolate in a heatproof bowl set over (not in) a pot of boiling water. Let cool until no longer hot but still pourable, about 10 minutes. Run a thin-bladed knife between cake and sides of pan to loosen; remove sides. Run knife between bottom of cake and pan; transfer to a cake plate. Drizzle chocolate evenly over cake; top with whole cherries and berries.
  • Return to freezer until chocolate hardens, 2 to 3 minutes; or freeze, loosely covered, up to 8 hours. Slice into wedges using a sharp knife dipped in hot water (if cake is too firm to slice, let temper in the refrigerator 10 to 15 minutes first).

RASPBERRY SAUCE:
1 package (12 ounces) frozen unsweetened raspberries, thawed
2 tablespoons sugar
2 tablespoons cornstarch
1/3 cup maple syrup
ICE CREAM LAYERS:
1 quart coffee ice cream, softened
1-1/3 cups sliced almonds, toasted
1 quart chocolate chip ice cream, softened
2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon almond extract
Fresh raspberries

Steps:

  • Place egg whites in a small bowl. Let stand at room temperature for 30 minutes. Line two large baking sheets with parchment paper; draw three 8-1/2-in. circles on paper., Beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Drop meringue in mounds onto circles; spread to cover. , Bake at 250° for 1-1/4 hours or until set. Turn oven off; leave meringues in oven for 1 hour. Remove from the oven and cool on baking sheets. When completely cooled, remove meringues from paper., Drain raspberries, reserving juice. Set berries aside. Add enough water to juice to measure 1/2 cup. In a small saucepan, combine sugar and cornstarch. Stir in maple syrup and juice mixture until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Remove from heat; gently stir in reserved berries. Cool., To assemble, place one meringue in a 10-in. springform pan. Spread with coffee ice cream; sprinkle with a third of the almonds. Top with a second meringue. Spread with chocolate chip ice cream; sprinkle with a third of the almonds. Top with remaining meringue. Cover and freeze overnight., In a large bowl, beat cream until it begins to thicken. Add sugar and almond extract; beat until stiff peaks form. Remove torte from freezer; carefully run a knife around edge of pan to loosen. Remove side of pan. Frost with whipped cream., Garnish with fresh raspberries and remaining almonds. Cover and freeze for at least 2 hours. Remove from the freezer for 20 minutes before serving. Serve with raspberry sauce.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with nonstick spray.
  • Combine brownie mix, cake mix, cold coffee, oil, and eggs in a large bowl; beat with an electric mixer until well combined. Pour into the prepared pan.

2 ounces semisweet chocolate, chopped
3 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 teaspoons all-purpose flour
1/4 teaspoon baking powder
1 pinch salt
1 egg, room temperature
1/2 cup sugar
1/2 teaspoon vanilla
1/3 cup walnuts, coarsely chopped
1 pint raspberry sherbet
2 1/2 cups vanilla ice cream
1 cup whipping cream, well-chilled
2 teaspoons sugar
1 teaspoon vanilla
fresh raspberry

Steps:

  • For Brownies.
  • Position oven rack in center of oven and preheat to 350 degrees.
  • Line 8-inch square pan with parchment or foil; butter paper or foil.
  • Melt chocolate and 3 T. butter in double boiler over hot, but not boiling water.
  • Stir until smooth; cool slightly.
  • Sift together flour, baking powder and salt.
  • Blend egg and sugar using electric mixer; mix in vanilla.
  • Gradually beat in chocolate mixture.
  • Stir in dry ingredients, then walnuts, using wooden spoon.
  • Spread batter evenly in prepared pan.
  • Bake until tester inserted in center comes out dry, about 19 minutes.
  • Cool completely in pan on rack.
  • Invert onto rack and remove paper.
  • Cut into 16 squares.
  • Freeze brownies until solid, but not solid, about 2 hours.
  • Line bottom of 8-inch square pan with waxed paper; freeze about 15 minutes.
  • Soften sherbet in refrigerator until spreadable; smooth into prepared pan.
  • Freeze until firm, about 15 minutes.
  • Soften 1 cup ice cream in refrigerator until spreadable.
  • Smooth over sherbet and freeze until firm.
  • Cut each of the brownies into 2 layers.
  • Cover ice cream with half of brownies, arranging around sides first, then filling in center.
  • Press into ice cream to even top.
  • Freeze until firm, about 15 minutes.
  • Soften remaining 1 1/2 cups ice cream in refrigerator;spread over brownies.
  • Freeze 15 minutes.
  • Cover ice cream with remaining brownies, smooth sides up, arranging around the sides first, then filling in the center.
  • Press into ice cream to even top.
  • Cover and freeze for 8 hours or overnight.
  • Run knife around edge of dessert and invert onto platter; peel off parchment paper.
  • Return to freezer.
  • For Topping.
  • Whip cream with sugar and vanilla until peaks form.
  • Spoon in a pastry bag fitted with a medium star tip.
  • Pipe mixture in ruffles over sides of cake.
  • Pipe rosettes on top.
  • Place a raspberry atop each rosette.
  • Serve with additional berries.

1 (19.8 ounce) package brownie mix
½ cup vegetable oil
¼ cup water
2 eggs
1 quart mint chocolate chip ice cream, or as needed
1 (14 ounce) can sweetened condensed milk
½ cup semi-sweet chocolate chips
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9-inch cake pans.
  • Combine the brownie mix, vegetable oil, water, and eggs in a mixing bowl; stir well with a spoon until thickened and smooth, about 1 minute. Spread the batter into the prepared cake pans.
  • Bake in the preheated oven until set and browned, about 30 minutes. A toothpick inserted into the center of a pan should come out with moist crumbs. Let cool for 10 minutes in pans before removing to finish cooling on racks.
  • After brownies are cool, remove ice cream from freezer and allow to soften for about 10 minutes. Meanwhile, pour sweetened condensed milk into a saucepan, and mix in the chocolate chips; heat over low heat, stirring constantly, just until chips have melted and the sauce is smooth.   • Place one of the layers of brownies into the bottom of a 9-inch springform pan. Freeze until ready to eat, at least 1 hour. Serve topped with whipped topping, if desired.

175g dark chocolate, finely chopped, plus extra shavings for the top (optional)
200g butter, softened, plus extra for the tin
2 eggs, plus 2 yolks
50g caster sugar
150g light brown soft sugar
175g plain flour
25g cocoa powder
1½ tsp baking powder
2 tbsp milk
50g Greek yogurt
2 egg whites
100g caster sugar
1 tsp cornflour
500g mixed berries (we used strawberries and raspberries)
300ml double cream
1 tbsp icing sugar

Steps:

  • Melt the chocolate in a bowl over a pan of gently simmering water, ensuring the bowl doesn't touch the water, or in short bursts in the microwave, then set aside to cool a little. Butter two 20cm loose- bottomed deep cake tins and line the base and sides with baking parchment. Heat the oven to 160C/140C fan/gas 3.
  • Put all the brownie ingredients, including the melted chocolate, in a bowl, then beat with an electric whisk until well mixed. Divide between the cake tins and level the tops using the back of a spoon or a palette knife.
  • Work quickly to make the meringue, ensuring your whisks and bowl are entirely clean and grease-free (or the egg whites won't whip up to their full volume). Put the egg whites in the bowl and whisk for a couple of minutes until stiff. Add the sugar, a spoonful at a time, whisking continuously to stiff peaks, then whisk in the cornflour. Use a spoon to dot the meringue all over the top of one of the cakes, then using the back of the spoon, spread it to the edge of the tin, being careful not to disturb the cake mixture underneath. Make nice swirly dips and peaks as you spread.
  • Bake both cakes for 45 mins, then remove the cake without the meringue topping and quickly close the oven door. Cook the meringue-topped cake for a further 30 mins, then remove from the oven and leave both cakes to cool completely in their tins.
  • Slice any strawberries (if using), keeping a few with stalks on for the top of the cake. Whisk the cream and icing sugar to soft peaks. Remove the brownie base cake from its tin and peel off the baking parchment. Place it on a plate or cake stand. Use a spoon to swirl a little over half of the cream over the cake and top with half of the berries. Carefully remove the meringue-topped cake from the tin and remove the parchment. Place it on top of the cream and berries, and spoon dollops of the remaining cream on top, filling any cracks or dips in the meringue. Top with the remaining fruit and some chocolate shavings, if you like, and serve within an hour. Leftovers will keep in the fridge for two days.
