SPICY BEEF BURRITOS
These beef burritos contain various peppers and seasonings on top of refried beans. Top them off with lettuce, sour cream, cheese, and wrap up in a soft shell.

- Mix jalapeno peppers, tomato, green chile peppers, green bell pepper, red bell pepper, onion, hot sauce, and cayenne pepper together in a large bowl.
- Cook beef in a large skillet over medium-high heat, stirring to break up clumps, about 5 minutes. Drain excess grease. Add jalapeno pepper mixture and burrito seasoning; cook, covered, stirring occasionally, until flavors combine, about 10 minutes.
- Pour refried beans into a saucepan over medium-low heat. Cook and stir until heated through, about 5 minutes.
- Warm each tortilla in the microwave until soft, 15 to 20 seconds. Spread a layer of refried beans on top. Divide beef mixture among tortillas. Top with lettuce, sour cream, and Cheddar cheese. Fold in opposing edges of each tortilla and roll up into a burrito.

Steps:
- Make the beef & bean filling: heat oil in pan, cook beef, stirring, til browned.
- Add onion and garlic, cook, stirring, til onion is soft. Stir in undrained can of tomatoes and remaining ingredients; simmer uncovered 15 minutes or til mixture is thickened.
- Divide warm beef & bean filling among the tortillas, roll; secure with toothpicks. Placed filled tortillas on greased oven tray, sprinkle with cheese and bake in moderate oven about 10 minutes or til cheese melts.
- Meanwhile, make the guacamole: mash avocado with fork, add remaining ingredients and mix well.
- To serve: Remove toothpicks from tortillas, served topped with guacamole, sour cream and cilantro.

- Preheat the oven to 170 to 180 degrees F.
- In a large skillet over medium heat, cook the onions until softened. Then add the ground beef and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low heat for 5 minutes. Add a little water if the mixture gets too dry.
- Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and stir it in till its melted. Remove from the heat.
- Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with foil and keep warm in the oven.
- When ready to serve, drizzle the remaining can of tomato sauce over all of the burritos and sprinkle with more grated Cheddar. Return to the oven for a couple of minutes just to melt the cheese.
- Sprinkle the tops with the cilantro leaves and serve immediately to the fork-bangers in your life. They'll kiss you and hug you. Repeatedly.
GROUND BEEF BURRITOS
I was surprised to see that there are so many burrito casseroles on Zaar, but no one has posted an actual beef burrito recipe. Here is my recipe for the much loved Ground Beef Burrito! The key to this burrito in achieving that authentic Mexican flavor and mouth feel, is in the method for cooking the ground beef. If you decide to brown your ground beef or follow the directions on the spice package, you will end up with a totally different product.

- With your clean hands start by adding 3/4 to 1 cup of warm water and the burrito seasoning packet in a large pot. Place the raw hamburger in the liquid and use your hands to break all down so there are no chunks. Bring the mixture to a full boil then reduce the heat and allow to simmer, stirring occasionally, until all the liquid has been absorbed.
- Place a tortilla on a plate and cover with a damp towel. Microwave on high for 15 seconds. Remove tortilla from the microwave, uncover. Slightly off center of the tortilla, spread on 2 tablespoons of sour cream on the tortilla. Place 1/4 of the ground beef on top of the sour cream. Place 1/4 cup of the cheese blend on top of the ground beef. Sprinkle on tomatoes and green onions. Top with 2 tablespoons of Recipe #311703.
- Fold the front of the tortilla over the filling. Tuck the left and right sides of the tortilla inside as you roll. Roll the belly on top of the back so the weight of the filling holds it together. Use a small piece of masking tape if necessary, but remember to use only edible tape. : ).

- Heat the oil in a large pan - a casserole is ideal. Fry the onions for 8 mins, then add the garlic, spices and oregano and cook for 1 min. Crumble over the mince and sizzle for 5 mins, stirring, until browned. Stir in the sugar and leave for a minute, then splash in the vinegar and pour in the tomatoes.
- Simmer for 5 mins then tip in the beans and the water from the can. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy. The sauce can be prepared up to 2 days ahead, chilled and reheated with a splash of water or frozen for 6 months.
- To make the burritos, heat the tortillas following pack instructions. Pile some rice and beef sauce along each tortilla and scatter over your choice of topping. Fold over the ends and roll up to seal. Secure by wrapping with foil if you want. Eat immediately.

- In a Dutch oven over medium heat, brown roast in oil; drain. Add water, onion, garlic, oregano, salt and pepper; bring to a boil. - preheat oven to 350.
- sauté beef and onion in a skillet until browned, breaking up larger pieces.
- drain fat.
- add chili powder and cumin, stir.
- add refried beans and stir to incorporate, add the green chilies and tomato sauce.
- cook until some liquid is absorbed.
- heat tortillas in oven, or microwave a few minutes until pliable.
- spread each tortilla with a few tablespoons of beef mixture down the middle.
- sprinkle with cheddar to cover.
- fold each side over and secure with toothpicks.
- bake 20-30 minutes until cheese is melted.

BEEF & BEAN BURRITOS
Years ago I lived in Baton Rouge, La and frequented a restaurant called La Fonda's. They had a unique burrito that I loved. I have tried to recreate it with this recipe and it is very close. A difference is, I think, that they deep fried the tortilla shell where mine is baked.

- Brown beef (and chorizo if desired)in olive oil. Add the onions, garlic, cumin, white pepper, red pepper flakes, black pepper, and salt. Add chipotle powder if used. When the beef (and chorizo if used)has browned, add thee taco seasoning and water and stir in well. Now add the refried beans and chili beans and mix in well. Do not drain the chili beans. (Additional water may be used if the mixture is too dry). Simmer for 10 minutes to allow the beans to heat and the flavors to blend.
- Soften tortillas with steam, hot oil, or warm water. Coat 8 large ramekins or a muffin pan with large cups with cooking spray (Pam). Shape the tortillas into cups in the ramekins or muffin pan. If water was used to soften tortillas, lightly coat them with oil.
- Place the shaped tortillas in an oven pre-heated to 400 deg. F. Bake for 7 to 10 minutes until tortillas are browned.
- Remove shaped tortillas from oven and fill with the hot beef/bean mixture. Top each with shredded cheese. Return to oven for 3 to 5 minutes to melt the cheese. Cool for about 3 minutes then remove them from the ramekins or muffin pan. Place them on serving dishes and enjoy.
- This dish has a moderate zing so the faint of heart may not enjoy it.
- Makes 8 hearty servings.
- May be served with Pico de Gallo or a lettuce & tomato salad or Spanish rice.
- Also, these could be topped with a zesty red or green salsa if desired.

- Cook beef over medium heat until cooked, Drain.
- Add half of taco seasoning packet and cook 2 more minutes.
- Stir in tomatoes with chiles, and refried beans. Cook 5 minutes.
- Spoon about 1/4 cup of mixture evenly in center of tortillas, sprinkle with cheese, then roll up and place in 9x13 pan coated with cooking spray.
- Stir together crushed tomatoes and last if taco seasonings, and pour over tortillas.
- Bake at 350 degrees for 25 minutes or until bubbly. I like to sprinkle some cheese on top too.

HOT BEEF BURRITOS
I love these. you can use less peppers if you arent fond of real spicy. It is hot. These are real good for potlucks or dinner at home or just for snacks. very easy to make. and tons of flavor. I eat them plain with some refried beans and if you are just looking for some great hot sauce home made. use the blender ingredients and chill but just use either the tomatillos or red tomato, not both.

- put beef roast in slow cooker to cook until can be shredded. Drain all juice out. Shred cooked meat.
- Put halapeno's or chili's or your prefered pepper in a medium size sauce pan in water to boil. when peppers look a little darker around 1 minute. add peeled tomatillos and red tomato's. boil until all are soft.
- Take the peppers,tomatillos, and tomato and put them into a blender, add a pinch of salt (if desired). also add the onion and garlic. Blend until mixed well.
- put mixture in the hot shredded beef and let cook in the slow cooker until hot. around 20 minutes on medium to high
- put small amount of hot beef in tortillas and roll up. You can add sour cream or cheese. Serve with refried beans and mexican rice. you can also use less jalepeno if you don't like real spicy or add a tomato and jalepeno to make more spicy.
