SMOOTH WHITE GRAPE GAZPACHO

Ingredients

2 1/2 cups seedless white grapes, plus more finely chopped or sliced, for garnish
1 cup regular soy milk, chilled
1/2 cup blanched slivered almonds
2 scallions, white and green parts, chopped, plus more thinly sliced, for garnish
1 lime, juiced
Kosher salt and freshly cracked black pepper

Steps:

Put the soy milk and almonds in the jar of a blender and puree until very smooth, about 2 to 3 minutes. With the motor running, slowly add the grapes, scallions and lime juice; season with salt and pepper and puree until well blended.
To serve, pour into a small bowls and garnish with chopped or sliced grapes and sliced scallions.
Note: Gazpacho can be served immediately but is even better if refrigerated until very cold. Stir well before serving.

1 lb seedless grapes
8 ounces premium white baking chocolate, coarsely chopped
1 cup finely chopped roasted cashews
mint leaf (to garnish) (optional)

Steps:

Wash and drain grapes.
Cut into clusters of 3, place on paper towels and wait until completely dry.
Melt chocolate in a double boiler and remove from heat.
Dip each grape cluster in melted chocolate allowing excess to drip back into pan.
Roll gently in chopped nuts and place on waxed paper.
Refrigerate until firm and decorate with mint leaves before serving.

In a microwave-safe bowl, whisk the egg yolks with the sugar. Whisk in the reduced orange juice and stir in the butter. Microwave the mixture on high power for 1 minute, until thickened. Whisk until smooth. Press a piece of plastic wrap directly onto the curd and refrigerate until chilled.
Line a rimmed baking sheet with parchment paper. In a microwave-safe bowl, combine the white chocolate with the oil. Microwave for 1 minute, until the chocolate is just melted; whisk until smooth. Let cool.
Dry the grapes with a towel and set them in a large bowl. Pour in the chocolate, folding to coat. Sift the confectioners' sugar on top and stir until the grapes separate; transfer to the baking sheet and refrigerate for 10 minutes, until the chocolate sets. Serve the grapes in glasses with the orange curd in ramekins alongside.
