  • Preheat oven to 350º.

1 1/3 cup all-purpose flour
2/3 cup cornmeal
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
4 tablespoons unsalted butter, (melted (plus extra for the pan if making skillet cornbread))
1 1/4 cup milk
1/4 cup oil
2 eggs ((large))

Steps:

  • Preheat the oven to 350 degrees, mist a 9x13-inch pan with nonstick spray, and line with parchment. (If making skillet cornbread, place about 1 1/2 tablespoons of butter in the pan and allow it to preheat in the oven.)
  • In a large bowl, whisk the flour, cornmeal, sugar, baking powder, and salt together.
  • Whisk the melted butter, milk, oil, and eggs together in a large liquid measuring cup.
  • Pour the liquid ingredients into the dry and stir together until combined.
  • Transfer the batter to the prepared pan, and bake for 35 to 45 minutes, or until fluffy and slightly golden around the edges (a toothpick inserted into the thickest part of the cornbread should come out clean or with a few moist crumbs).
  • Cool for about 20 minutes, then cut into slices and serve.

2 tablespoons canola oil
1 medium onion, chopped
1 cup baking mix
2 cups cornmeal
1/2 cup sugar
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cayenne pepper
2 large eggs
2 cups milk
1 jalapeno, finely chopped

Steps:

  • Heat the oven to 375 degrees F.
  • Put a 10-inch cast iron skillet over medium-high heat and add the oil. When the oil is hot, add the onions and cook until they are soft and beginning to brown, about 5 minutes. Remove the onions from the pan onto a plate. Leave the remaining oil in the pan.
  • In a large bowl, whisk together the baking mix, cornmeal, sugar, baking soda, salt, and cayenne. In another bowl, whisk together the eggs and milk. Add the wet ingredients to the dry ingredients and stir until combined. Fold in the reserved onions and the jalapeno. Pour the batter into the skillet the onions were cooked in and bake until a toothpick inserted in the center comes out clean, 20 to 25 minutes. 2 cups yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
Kosher salt
1 hot chile pepper, such as serrano, Fresno or jalapeno, thinly sliced
1 cup (2 sticks) unsalted butter, at room temperature
2 cups buttermilk
2 large eggs, lightly beaten
3/4 cup honey
1/2 teaspoon cayenne

Steps:

  • Preheat the oven to 400 degrees F. Put a10-inch cast-iron skillet into the oven to heat.
  • Whisk together the cornmeal, flour, baking powder and 2 teaspoons salt in a large bowl. Add the sliced peppers and toss to coat.
  • Remove the skillet from the oven and add 1 stick of the butter to the skillet to melt. Pour into a bowl. Add the buttermilk, eggs and 1/2 cup of the honey to the bowl and whisk together. Stir the buttermilk mixture into the dry mix, then pour the combined batter into the hot skillet. Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes.
  • While the cornbread is cooling, mix the remaining stick of butter and 1/4 cup honey with the cayenne and a pinch of salt in a small bowl until completely combined.
  • Serve the cornbread with the hot honey.

1 cup stone-ground cornmeal

1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk
3 large eggs
1 teaspoon pure vanilla extract
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F. Butter and lightly flour a 9-inch cake pan. Be sure to remove any excess flour from the pan.
  • Whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl.
  • Whisk together 8 tablespoons of the butter with the buttermilk, eggs and vanilla in a small bowl until smooth.

My Version of Stephanie Tyson's Sweet Potato Cornbread Muffins image

I love cornbread of all kinds and have a couple of sweet potato to use, found this recipe, but modified it to have more sweet potato, used less baking powder (from 1 tablespoon to 1 teaspoon and added 1/2 teaspoon of baking soda for the reaction with kefir) so I could sub kefir for the milk. I make a ton of kefir and have to use it up.

3 eggs

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a 9x13-inch baking pan with cooking spray.
  • Pour corn bread mix into a large bowl.

1/3-1/2 cup granulated sugar (depending on your taste for sweetness)
1 cup all-purpose flour
1 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
2/3 cup milk
2/3 cup buttermilk
3 tablespoons unsalted butter, melted

Steps:

  • Directions:.
  • Preheat oven to 400 degrees.
  • Spray pan with Pam Baking spray (has flour in it) into an 8"x8" baking pan (I use glass) or brush pan with oil and lightly dust with flour.
  • Add all dry ingredients in a large bowl and whisk to incorporate ingredients.
  • Form a well in middle of the bowl. Set aside.
  • Melt 3 Tbs. butter. Set aside.
  • In medium bowl, whisk together eggs, milk, buttermilk and melted butter.
  • Pour into the middle of well in the large bowl of dry ingredients.
  • With spatula, gently fold in the dry mix into the wet ingredients of bowl.
  • Mix until just wet and leave the lumps alone. Scrape sides and near the bottom of bowl to make sure all the dry ingredients get wet. Do not over mix.
  • Pour into prepared baking pan. Place pan on middle rack in oven and bake for 25 to 30 minutes or until golden and middle of cornbread is set.
  • Remove and set on rack to cool or slice and serve warm.
  • Directions for muffins:.
  • Preheat oven to 400 degrees.
  • Prepare a muffin tin by spraying each well with Pam Baking Spray or just use muffin wrappers.
  • Follow the recipe and directions for the cornbread batter and fill each well with ¼ cup of batter.
  • Place pan on middle rack in oven and bake for 16 to 18 minutes or until golden and middle of corn muffins are set.
  • Remove and set on rack to cool or serve warm.
  • If you're not using wrappers, loosen muffins from pan by gently running a knife around edges of muffins.
