Steps:
- Firstly, heat a tawa or griddle on medium-high flame for roasting. Alternatively, you can roast in an oven as well.
- Place 3 tomatoes, 6 garlic cloves and 1 small onion on the tawa and roast on medium flame.
- Flip all the ingredients when roasted from 1 side and let it roast from other sides as well.
- Remove the onions and cloves of garlic from the tawa and continue to roast tomatoes.
- Roast tomatoes till it gets charred spots on all sides and turn off the flame. Let it cool down to room temperature.
- Now, transfer the roasted tomatoes, garlic and onion into the blender.
- Furthermore, add coriander leaves, jalapeño, roasted cumin seeds and dried red chillies.
- Add Lemon juice, olive oil and salt into the blender and blend it coarsely without adding any water.
- Finally, enjoy the delicious roasted tomato salsa recipe with Nachos and Doritos Chips.

SWEET AND MILD COOKED TOMATO SALSA
When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

- Combine all ingredients except tomato paste in large sauce pot.
- Simmer until desired thickness.
- Stir in tomato paste.
- Ladle hot salsa into hot jars leaving 1/4 inch head-space.
- Process 15 minutes in a hot water bath.
- Note: use more hot peppers for a very hot salsa or less for mild.
- It depends on how hot your peppers are and how hot you like your salsa.
- I never get close to 2 1/2 cups for our mild salsa.
SMOOTH AND SPICY TOMATO SALSA

This is a spicy, fruity salsa . We use it with chips, of course, but it can be a condiment with meat dishes as well. My family and friends eat it by the jar; we love the sweet and spicy combination! - Peel, pit, and chop peaches, and mix with lime juice.
- Peel, core, and chop apples. Add to peaches.
- Peel and chop fresh tomatoes to measure 4 cups (or use canned diced).
- Seed and dice bell peppers.
- Seed & dice jalapenos.
- Combine all fresh fruits and vegetables in a large stainless steel pot. Add vinegar,honey, chipotle powder, and crushed red pepper. ( Do not add canned vegetables and fruit yet).
- Bring mixture to boil over medium heat. Cook for 25 minutes, stirring frequently. Lower heat if necessary to avoid sticking.
- Drain and add pineapple and any canned vegetables. Cook for 5 more minutes. Add tomato paste (optional). Continue frequent stirring. Reduce heat to simmer.
- Ladle salsa into hot sterilized canning jars, leaving 1/4 inch headspace. Wipe jar rim with clean cloth or napkin. Top with new sterilized lid. Screw on band tightly.
- Place jars in canning pot. Add water to cover jars by 2 inches.
- Bring canner to boil, and process for 20 minutes.
- Remove jars from canner, and place on towel in a cool spot.
- In about an hour, check to make sure that lids have sealed. Refrigerate or reprocess any that are not sealed.
- Allow to sit without moving for about 2 days.
- Label and store jars in a cool, dark place.

- Put peppers, onion, garlic, cilantro and cumin in a food processor, and process until finely minced, but not a paste.
- Or, if you're mincing the peppers by hand-be SURE to wear rubber gloves, as the oil from the peppers is very irritating to skin and eyes.
- Add seasonings, vinegar, olive oil and water and mix well.
- Store in a glass container with a tight fitting lid (I use the larger size of baby food jars).
- Stores well in the refrigerator for a couple of days.
- Serve on chips, eggs, grilled chicken, in burritos, on tacos, mixed into rice or beans, anything you can think of!
CHUNKY TOMATO SALSA
This salsa has a very nice flavor & isn't too hot if you omit the jalapeno seeds. It's great for using fresh veggies from the garden but can easily be scaled down to accommodate non-gardeners. A food processor makes quick work of the chopping, but be careful not to overprocess or you'll end up with mushy veggies. Wear gloves when handling the hot peppers.
