EASY GLUTEN FREE DUMP CAKE



Easy Gluten Free Dump Cake image

In only 10 minutes time, you could be sitting patiently by the oven waiting for this yummy gluten free dump cake / cobbler dessert to be bubbling and ready, hot out of the oven. Such an easy dessert with such yummy results!

Number Of Ingredients 8

1 ½ cups (202.5 grams) gfJules All Purpose Gluten Free Flour
1 cup minus 1 Tbs. granulated cane sugar
2 tsp. baking powder
1/3 tsp. baking soda
1 tsp. vanilla powder or pure vanilla extract
1 can (8 ounces) crushed pineapple, undrained (use 15 ounce can for 9x13 pan)
1 can (21 ounce) pie filling - cherry, blueberry, etc. - (I used Lucky Leaf)
1/2 cup butter or non-dairy alternative (e.g. Earth Balance Buttery Sticks)

Steps:

  • Preheat oven to 350 F. Oil pan or line with parchment paper. In a separate bowl, whisk together dry ingredients for cake topping. Empty full can of pineapple by dumping into prepared pan. Dump full can of pie filling on top with vanilla extract. Dump whisked dry ingredients on top. Melt butter and drizzle on top of cake ingredients. Stir gently with a rubber spatula, if needed, to distribute evenly so the dry powder ingredients on top are mixed in at least slightly. Bake for 1 hour or until fruit is bubbling and the cake is lightly browned.

This is an interesting dessert to be served at any special occasion, personally I like it on any day of the week!!

2 cups cherry pie filling
1 (8 1/4 ounce) can crushed pineapple
1 (18 1/2 ounce) box yellow cake mix
1/2 cup butter or 1/2 cup margarine
1 cup shredded coconut
1/2 cup pecans, chopped

Steps:

  • In a 9x13 glass casserole dish mix together cherry pie filling and crushed pineapple. Sprinkle entire box of cake mix over fruit careful not to have any big lumps. Melt butter and drizzle over cake mix. Sprinkle coconut and nuts over entire cake.
  • Bake at 350F for 25 minutes.

I wanted to come up with a recipe for dump cake that would still be simple but wouldn't consist primarily of pie filling. I used fresh strawberries that I cut into pretty small pieces myself, but I'm sure thawed frozen strawberries would work too.

1 lb fresh strawberries
1/2 teaspoon cinnamon
1 cup yellow cake mix
3 tablespoons Fleischmann's margarine

Steps:

  • Preheat oven to 350°F.
  • Chop strawberries into small pieces. Pour into the bottom of a loaf pan that has been sprayed with cooking spray.
  • Sift cinnamon and cake mix together. Pour evenly over strawberry layer.
  • Cut margarine into thin pieces, placing them at intervals over the cake mix layer. Try to cover as much area as you can.
  • Spray top with cooking spray. Bake for about 35 minutes.

TROPICAL DUMP CAKE

This is a very moist, fruity cake made with yellow cake mix. I like to use cherry pie filling, pineapple chunks, coconut and walnuts; but any like substitutions could be made. The cake turns a pretty pink color due to the cherry pie filling and smells heavenly while baking. I like it best chilled and topped with homemade whipped cream.

1 (20 ounce) can pineapple chunks, drained

1 cup flaked coconut
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Combine all ingredients.
  • Pour batter into a greased 13 x 9-inch cake pan.
  • Bake for 30 minutes.
  • Remove from oven and cool on wire rack for one hour.
  • Slice cake into 2-inch pieces.
  • Serve warm or chilled. If desired, top with a dollop of whipped cream.

1 cup coconut

Steps:

  • In a 9 x 13" pan, spread in layers of cherry pie filling, pineapple, cake mix, coconut, and nuts.
  • Cut margarine into bits and sprinkle over top.
  • Bake 1 hour at 350°.
