Honey Wholemeal Scones image

This recipe comes from the Australian Women's Weekly Muffins, Scones and Breads Cookbook. It makes for very tasty, just slightly sweet and quite healthy scones. I like them best topped with either cheese or some jam. Note: Cups refer to the Australian standard measuring cup, which equals 250 ml!

Number Of Ingredients 6

2 cups flour (300g)
1 cup wholemeal flour (160 g)
3 teaspoons baking powder
20 g butter
1/4 cup honey (60ml)
1 cup milk, approx. (250 ml)

Steps:

  • Combine dry ingredients in a bowl. Rub in butter until mixture resembles coarse crumbs. Stir in honey and add as much milk as needed to form a soft dough.
  • Turn out onto a floured surface and knead lightly. Pat down to desired thickness and cut out scones of desired size (I use a 7.5 cm glass).
  • Bake at 220 °C for about 8 minutes.

Wanted to have something that was healthy but sweet and Low in Fat messed around with loads of other recipes and came up with this mix

Number Of Ingredients 8

160 g self rising flour
160 g whole meal flour
1 teaspoon baking soda
1 teaspoon brown sugar
3 teaspoons honey
200 ml low-fat milk
25 g margarine
8 drops lemon juice

Steps:

  • Pre-heat oven to 200°C.
  • Sieve the self rising flour and the whole meal flour together. Mix by letting it flow through your fingers for air.
  • Add the baking soda and continue to mix.
  • Next chop the margarine into small cm squares and drop into the mix. Break down the margarine with your fingers till all of the clumps are gone.
  • Add 8 drops of lemon juice to the milk. Then slowly add the low fat milk into the mix. I use a knife to work in the milk to keep as much air in the mix.
  • Continue adding milk until mix is moist and add in the honey.
  • Powder you chopping board with flour and kneed the mix for a few second so as not to force out the air. Maneuver the mix like a pizza base and lay flat on board.
  • Cut into 6 - 8 pieces and roll into shape about 1" to 1 &1/2 " thick and place on floured baking tray.
  • Place in pre-heated oven for 10 - 15 minutes. Cool and enjoy!

This is one of my favorite recipes from my childhood. I always loved to get my hands messy with this one!

1 3/4 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon cinnamon
6 tablespoons butter
1 tablespoon honey
1/2 cup milk
1 egg

Steps:

  • Mix flour, baking powder and cinnamon in a medium sized mixing bowl.
  • Add room temperature butter and work it in with your hands until mixture is crumbly.
  • Add honey, milk and egg. Mix only until combined.
  • Drop evenly spaced heaping spoonfuls onto a cookie sheet lined with aluminum foil.
  • Bake at 450 degrees F for 15 minutes or until golden brown.

250 g dried pitted dates
1 cup whole wheat flour
1 cup plain flour
1 tablespoon icing sugar
salt
40 g low-fat margarine
1 egg, lightly beaten
1/3 cup skim milk

Steps:

  • Preheat oven to 200.C.
  • Spray a baking tray with cooking oil.
  • Pour 2 cups boiling water over dates and allow to soften for approx 10 mins before draining & chopping.
  • Sift flours with icing sugar & salt into a bowl.
  • Rub in margarine with fingertips until mixture resembles breadcrumbs, add dates and make a well in the centre then add egg.
  • Stir lightly with a knife and add enough milk to form a soft dough.
  • Turn onto a floured surface and cut dough into 5cm rounds.
  • Place on the baking tray and brush with a little milk before baking for 15-20 mins or until golden.

I found this on the 'net in a hungry search for ever more scone recipes. This was listed as being a prize winner in a recipe contest for wheat germ. They don't contain egg so a true scone aficionado would probably say these are a biscuit not a scone.

2 cups all-purpose flour
2/3 cup wheat germ
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/3 cup butter or 1/3 cup margarine, cold
1 large tart apple, peeled and finely chopped, about 1 1/4 cups
1/2 cup milk
1/4 cup honey
2 teaspoons wheat germ
2 teaspoons sugar
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine flour, wheat germ, baking powder, cinnamon, baking soda, salt and nutmeg. Cut in the butter until the mixture resembles coarse crumbs.
  • Combine the apple, milk and honey; add to dry ingredients just until moistened. Turn onto a floured surface, knead gently 4 or 5 times.
  • Gently pat dough into a 9-in. circle, about 1/2 inch thick. Combine topping ingredients and sprinkle over dough. Cut into eight wedges and place on a greased baking sheet. Bake at 400 degrees for 15-18 minutes.

  • Preheat the oven to 350°F. Line a large rimmed baking sheet with parchment paper. In a medium bowl, combine the flour, baking powder, salt, and cinnamon. Whisk to combine.
  • In a 2-cup liquid measuring cup or small bowl, combine the coconut milk, honey, and vanilla. Whisk to blend. Pour the wet ingredients into the flour mixture and mix with a big spoon until you have a cohesive dough. If the dough is sticky and unmanageable, add another tablespoon of flour and stir just until incorporated. Repeat if necessary.
  • Lightly flour your work surface and turn the dough over onto it. Knead the dough a few times, just enough to bring the dough together. Then press the dough into an even round about 1 inch thick all around.
  • Use a sharp chef’s knife to cut the round into 8 even wedges, as you would a pizza. Separate the wedges and place each one on the prepared baking sheet several inches from the next. Brush the tops of the scones liberally with coconut milk and sprinkle them with the turbinado sugar.
