SPICED GLAZED TURKEY

Spiced Glazed Turkey image

Provided by Food Network Kitchen

Time 3h45m

Yield 8 to 10 servings

Number Of Ingredients 11

1 12- to 14-pound turkey, thawed if frozen
Kosher salt and freshly ground pepper
1 teaspoon ground coriander
1 teaspoon ground allspice
1 small orange, halved
1 shallot, halved
1/4 small bunch fresh parsley
4 tablespoons unsalted butter, melted
1 1/2 cups low-sodium chicken broth
1/2 cup pineapple preserves
1 tablespoon apple cider vinegar

Steps:

  • Position an oven rack in the lowest position (remove the other racks); preheat to 350 degrees F. Remove the neck and giblets from the turkey and reserve for gravy. Pat the turkey dry with paper towels and put breast-side up on a rack set in a large roasting pan.
  • Combine 2 tablespoons salt, 1 tablespoon pepper and the coriander and allspice in a small bowl. Squeeze the orange halves all over the turkey and rub the juices into the skin, then stuff the squeezed oranges into the cavity along with the shallot and parsley. Brush the turkey all over with the melted butter, then sprinkle all over with the spice mixture. Tie the legs together with kitchen twine and tuck the wings under the body. Pour the broth into the roasting pan.
  • Microwave the pineapple preserves in a small microwave-safe bowl until melted, about 1 minute; strain through a fine-mesh sieve into a small bowl. Stir in the vinegar. Set the glaze aside.
  • Roast the turkey until the skin is golden brown and a thermometer inserted into the thigh registers 165 degrees F, 2 1/2 to 3 hours, brushing with the pineapple glaze twice during the last 30 minutes of roasting; use about two-thirds of the glaze. (Tent the turkey with foil if the skin gets too dark.) Remove from the oven and brush with the remaining glaze. Transfer the turkey to a cutting board and let rest at least 30 minutes before carving.
  • Pour the pan drippings into a fat separator and let stand until the fat rises to the top. Discard the fat (or drizzle on your stuffing). Serve the turkey with the defatted drippings.

HERB-GLAZED ROASTED TURKEY

Herb-Glazed Roasted Turkey image

The holiday season means it's Turkey Time. I could never figure out why so many people wanted to come over...until they confessed it was my recipe for turkey! Gobble, Gobble! I do not stuff the turkey. I make my own stuffing on the side and serve in a festive dish.

Provided by lovestocook

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 4h45m

Yield 16

Number Of Ingredients 12

1 (16 pound) whole turkey, neck and giblets removed
¼ cup extra-virgin olive oil
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon ground thyme
1 cup honey
½ cup melted butter
2 teaspoons dried sage leaves
1 tablespoon minced fresh parsley
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Rinse the turkey, and pat thoroughly dry with paper towels. Brush the turkey with olive oil, inside and out.
  • Mix 1 teaspoon of salt, 1/2 teaspoon of pepper, and the thyme in a small bowl, and sprinkle the turkey with the mixture.
  • Place the turkey on a rack set in a roasting pan, and roast in the preheated oven for 2 hours.
  • In a bowl, stir together the honey, melted butter, sage, parsley, basil, 1 teaspoon salt, and 1 teaspoon pepper, until the mixture is smooth and well blended. Brush the turkey with the honey glaze, and return to the oven.
  • Roast the turkey until no longer pink at the bone and the juices run clear, about 2 more hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Continue to brush the turkey with the honey glaze frequently as it roasts. Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

HONEY MAPLE TURKEY BREAST

Honey Maple Turkey Breast image

The easiest way to prepare turkey on Thanksgiving day! This delicious foolproof Honey Maple Turkey Breast recipe will be the star of the show on Thanksgiving.

Provided by Kit

Time 2h15m

Number Of Ingredients 16

1 Turkey Breast
2 tablespoons Butter (at room temperature)
1/2 cup Maple Syrup
1 tablespoon Honey
1 tablespoon Whole Grain Mustard
1/2 teaspoon Smoked Paprika
1/2 teaspoon Onion Salt
1/2 teaspoon Garlic Powder
1/2 teaspoon Thyme
1/2 teaspoon Salt
1/2 teaspoon Ground Black Pepper
2-4 cups Chicken Broth
For the Gravy:
1 tablespoon Butter
1 tablespoon Flour
1/2 cup White Wine

Steps:

  • Heat your oven to 325 degrees. Remove the turkey breast from its packaging and leave the string netting on, this holds the turkey breast together as it cooks.
  • Place the turkey breast in the center of a roasting pan. Rub the butter all over the turkey breast. Then mix the maple syrup, honey, mustard, smoked paprika, onion salt, garlic powder, thyme, salt, and pepper together. Spread a thick layer of the maple syrup and spice mix on the turkey.
  • Pour enough chicken broth in the bottom of the pan to coat it, this prevents any pan drippings from burning. This is important since you need the pan drippings to make gravy.
  • Roast the turkey breast at 325 degrees. Baste the turkey with the maple syrup and spice mixture every 30 minutes, and add more chicken broth to the pan as necessary. Continue this process until the turkey breast reaches 165 degrees.
  • Remove the turkey breast from the oven, and place it on a serving dish to rest while you prepare the gravy.
  • Scrape all of the pan drippings into a glass container (like a mason jar).
  • Melt the butter in a skillet and whisk in the flour. Then using a baster, suck up the pan drippings below the line of fat that rises to the top of the jar. Whisk all of these juices into the flour and butter. Whisk in the white wine. Bring to a simmer, and let the gravy thicken. Once thick, taste test and add salt and pepper if necessary. Strain the gravy to remove any lumps.
  • Remove the string netting around the turkey breast. Slice the turkey breast and serve it with the gravy.

1/8 teaspoon ground red pepper

Drain juices from turkey; dry turkey with paper towels. 3 Turn wings back to hold neck skin against back of turkey. 4 Place turkey, breast up, on flat roasting rack in roasting pan 2 to 3 inches deep. Brush turkey with oil. 5 Roast turkey in the preheated oven for a total of 3 to 3-1/2 hours, covering breast and top of drumsticks loosely with foil after 2 hours to prevent overcooking of breast. 6 Uncover turkey breast and brush turkey with honey-spice mixture when about 45 minutes of roasting time remains. Return foil to top of turkey and continue roasting until food thermometer, inserted deep in thigh, reaches 180 degrees F. 7 Let turkey stand 15 minutes before carving. 8 NOTE: Do not brush glaze on turkey until near the end of roasting time. If the glaze is added in the initial roasting procedure the sugar from the honey would cause the skin to darken. Source: National Turkey Federation

  • Preheat your oven to 450 degrees. Line a sheet pan or roasting pan with foil and put a rack in it. Set aside.
  • Make the honey butter glaze: Melt 4 Tbls. butter in a small bowl. Add the honey. Whisk briskly to incorporate. Set aside for now.
  • Make the spicy butter rub: Leave your butter out on the counter until it softens and comes to room temp, about 30 minutes. Chunk up the softened butter and put it in a small bowl or measuring cup. Add the garlic powder, onion powder, white pepper, chipotle, kosher salt, dried parsley. Mash it up with a fork until the mixture is uniform. Give it a quick taste and adjust the seasoning if you like.
  • Prep your turkey breast: Sprinkle the underside of the meat with a little kosher salt. You could also sprinkle him with spices, too. Totally up to you. Next, loosen up his skin, just like you would on a roast chicken. Pull the skin up with one hand, and with the other, use a small knife to gently slash the membrane that holds the skin to the meat. Take about half the spiced butter and spread it around under the skin. Fold the skin back over the butter.
