PEANUT BUTTER AND CHOCOLATE CEREAL TREATS

Steps:
- Line a 9-by-13-inch baking dish with a piece of parchment paper, leaving 1 inch of paper hanging over each side of the dish. This will help with removing the treats later. Spray the parchment paper with nonstick spray.
- In a 6-quart Dutch oven over medium heat, melt the butter. Add the marshmallows and cook, stirring continuously, until the marshmallows are melted and the butter is incorporated, 3 to 5 minutes. Reduce the heat to low and quickly add the cereal and peanuts; stir to combine. Transfer the cereal mixture to the prepared baking dish. Lightly coat a spatula with cooking spray, then use it to spread out the cereal mixture evenly.
- Put the melted chocolate in a plastic sandwich bag (or pastry bag), cut off one corner and drizzle over the top of the cereal treats. Refrigerate, uncovered, until set, 1 to 1 1/2 hours.
- Remove the cereal treats using the parchment paper and cut into 24 bars.

- In a large saucepan over medium heat, bring honey and peanut butter to a boil. Remove from the heat; stir in vanilla and cereal. , Press into an ungreased 9-in. square pan. Spread chocolate over bars. Chill until firm.

NO-BAKE PEANUT BUTTER CRUNCH BARS
No-bake and easy-to-make, these healthier Peanut Butter Crunch Bars come together with real food ingredients and are the perfect treat for any time of the year.

- In a medium bowl combine the quick oats, rice krispies, coconut, flaxseed meal, and chia seeds. Stir to combine then add the rest of the bar ingredients (except for the water). Mix well. The dough should stick together easily. If not, mix in 1 Tbsp. of water at a time until dough sticks together nicely.
- Line an 8×8 or 9×9 pan with parchment paper so that paper overlaps edges. Transfer the dough to the pan. Spread the dough out evenly and with your hands press dough VERY firmly into the pan.
- Place pan in the freezer for at least 30 minutes (this can be done the day before or even a few days before).
- For the chocolate drizzle: combine the chocolate chips and coconut oil in a small saucepan over low heat. Stir continuously until smooth and drizzly. You may also use a microwave at 50% power for 30-second increments stirring between each increment until smooth and drizzly.
- After bars have been in the freezer, remove the bars from the pan by grabbing onto the parchment paper flaps and place on a cutting board.
- Drizzle the chocolate evenly over the bars. The chocolate should harden quickly since the bars are cold.
- With a sharp knife, cut the bars into 16 squares. Serve and enjoy!
- Bars hold together best when stored in the fridge or freezer.

HONEY-PEANUT CRUNCH CEREAL
An irresistible snack, great to provide lots of (basically) healthy energy for those late-night studying sessions!! Don't know if anyone's invented this already, but here is my version. Enjoy!

- Combine the cereals in a bowl. Add the peanut butter and milk and gently stir it until it's fairly well combined. Note: this can be tricky, if your peanut butter is really firm from being refrigerated. Bring it to room temperature or warm it a bit first for best results.
- Slice in the banana and top with strawberries. (can stir them in too, if you want to.).
