HONEY SESAME GLAZE FOR ROAST CHICKEN
A quick glaze that's nice added to roast chicken during the last 30-45 minutes of cooking. This makes enough for a large chicken.

Steps:
- Mix all ingredients in a small bowl.
- Start roasting chicken as per your normal preferred method, don't glaze the chicken at the start because the skin will burn.
- Brush the glaze over the chicken when there is 30-45 minutes cooking time remaining. I normally do it with 45 minutes for a fairly dark crispy skin but you may prefer 30 for a lighter colour.

Steps:
- Heat oven to 200C/180C fan/gas 6. Mix the soy, honey, 1 tbsp of the oil and ½ tbsp garlic & ginger paste in a bowl. Pour over the chicken thighs and leave to marinate if you have time, but don't worry if not - they will be delicious either way. Tip the chicken with all the marinade into a roasting tin, skin-side up. Cook for 45 mins until sticky and the skin is crispy.
- When the chicken has 15 mins left, start cooking the rice following pack instructions, if using, and heat the remaining oil in a frying pan. Add the remaining garlic & ginger paste, sizzle for 1 min, then tip in the broccoli along with a splash of water. Cover and cook for 10 mins until tender, then take the lid off, tip the sesame seeds into the pan and give everything a good toss around. Season. Serve with the chicken, and all the caramelised bits from the bottom of the tin.

HONEY-ORANGE GLAZED CHICKEN
Good dish to please people with. DH loves it, friends & family love it, finally getting around to posting. There are several recipes for Orange Glazed Chicken out there, but this one uses the chicken in bite-size pieces like you would get at a Chinese restaurant rather than a glazed chicken breast recipe. I also have the luxury of having one of those electric fry-grill pans from HSN and that is what I use every time I make this. Serve over white or brown rice or egg noodles. Sometimes I even stir-in fresh broccoli florets that I've steamed while the chicken in simmering. Prior to serving you could sprinkle with toasted sesame seeds if desired.

Steps:
- Combine chili sauce, orange marmalade, mustard, garlic powder, 1 tablespoon melted butter, sugar and honey together in bowl and set aside as a glaze.
- Fry chicken (already cubed or cut into bite-size pieces) in butter over medium heat in large skillet or electric frying pan. Cook until browned on both sides then fold in glaze mixture and coat chicken well cooking an additional 5 minutes.
- Reduce heat & simmer, uncovered, about 10 more minutes, basting occasionally until chicken is tender. ** If you like chicken crispier, cook at higher heat and about 5 additional minutes **.
- Serve over white or brown rice or egg noodles.
- ** Note: If you like crispy chicken, you could first coat the chicken pieces in flour & deep fry them in oil - drain on paper towel - then return them to a skillet & coat with glaze mixture and cook as above.

Steps:
- Heat a small skillet on medium high heat. Add the sesame seeds. Toast sesame seeds until fragrant and lightly browned.
- Do not turn your back on the seeds while cooking, they can easily and quickly burn. Stir often to keep them from burning.
- You may hear them pop, and some of them may hop out of the pan while cooking. When lightly browned remove from heat and set aside.
- Mix melted butter in with the bread crumbs. Heat a large skillet on a medium high, add the bread crumbs, stir often until the bread crumbs get toasty brown. Remove from heat, let cool.
- Heat the oven to 450°F Line a roasting pan with foil. Put a flat baking rack on the lined roasting pan.
- Use a meat pounder to lightly pound the chicken breasts between two pieces of wax paper to even out the thickness of the breasts.
- Use a microplane grater to grate the zest from the orange. Place the zest in a large bowl.
- Cut 4 thin round slices from the center of the orange to use with this recipe. Save the rest of the orange for snacking.
- 6 Add to the large bowl with the zest, the marmalade, honey, soy sauce, sesame oil, peanut oil, chili sauce and salt. Mix well.
- Add the chicken to the sauce, coating every piece. You can at this point make ahead by 24 hours and let the chicken marinate, or you can go ahead with the recipe.
- In a large, shallow dish, mix together the toasted sesame seeds and bread crumbs. Working with the chicken one piece at a time, dredge the chicken in the coating, pressing down on the crumbs to make sure they adhere well.
- Transfer to the backing rack on the lined roasting pan. Dip the orange slices in the leftover marmalade mix and set on the rack.
- Cook at 450°F until the chicken has an internal temperature of 165°F, about 20 minutes. Serve immediately, topped with the orange slices.

Steps:
- Mix the oil, orange zest and juice, honey, soy and vinegar in a bowl, then combine the cornflour, sesame seeds, five-spice and a pinch of salt in another bowl. Run a small knife down the back of each prawn, so they butterfly out as they cook, helping more sauce stick to them.
- Toss the prawns through the cornflour mixture. Heat the oil in a large wok or frying pan. When it's very hot, add the garlic. Sizzle for 10 secs, but don't let it brown. Add the prawns and any flour and seeds left in the bowl. Stir-fry over a high heat for a few minutes, until the prawns are pink and the sesame seeds are golden. Tip the prawns onto a plate and pour the sauce mixture into the wok. Bubble for a few minutes until thickened. Add the prawns back to the wok and stir to coat in the sauce. Heat through for another 30 seconds. Top with spring onions and serve with rice.
