HONEY GINGER CHICKEN (CROCK POT)
I haven't tried this one yet, but I thought I would share it with you. I got this from a friend of the family.

Steps:
- Combine melted butter, honey, lemon/lime juice and ground ginger in a bowl.
- Mix well.
- Place chicken in crock pot. Pour mixture over chicken and cook on low for 6 hours.
- Spoon mixture over chicken periodically to make sure it gets covered in the sauce.

- Combine flour and salt and coat chicken.
- Brown on all sides in hot oil.
- Put in crock pot.
- Stir lemonade concentrate, brown sugar, vinegar and catsup.
- Mix well.
- Pour over chicken.
- Cover and cook on high 3 to 4 hours or low for 6 to 8 hours.

Steps:
- In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper and brown on both sides.
- Scatter potatoes, onion, garlic, thyme, and lemon slices in crock pot. Season with salt and pepper. Lay browned chicken over this layer, and drizzle with honey.
- Add stock/water, cover and cook, undisturbed for 4 hours on high, or 6-8 hours on low.

- In a large bowl, combine the first 10 ingredients.
- Pour 2/3 cup marinade into a large resealable plastic bag; add the chicken, seal bag and turn to coat. Refrigerate for at least 4 hours or overnight.
- Cover and refrigerate the remaining marinade.
- Drain and discard marinade from chicken.
- Coat grill rack with cooking spray before starting the grill.
- Grill chicken, uncovered, over medium heat for 12-15 minutes or until juices run clear, turning once and basting occasionally with reserved marinade.

This is such a good recipe and a family favorite. the combination of citrus and garlic gives it just the right flavor. I usually get some baby carrots and cook them in some orange juice and honey in a saucepan to go along with it.

- Roll Lemon on kitchen counter to loosen insides and pierce with a fork.
- Place Lemon inside of chicken cavity along with the clove of garlic.
- Put chicken into crock pot.
- Pour orange juice and honey over the chicken.
- Sprinkle pepper on top.

CLAY-POT HONEY LEMON CHICKEN

- Prepare a clay roaster by soaking in cold water for 15 minutes.
- Wash the chicken well inside and out under cool running water. Pat dry with paper towels. Rub chicken all over with 2 tablespoons of the lemon juice and season evenly on all sides with the salt and pepper. Place the reserved lemon shell inside the chicken cavity. Place the chicken inside the prepared clay roaster and brush with the melted butter. Cover the roaster and transfer to a cold oven. Set the oven temperature to 400 degrees F and cook for 45 minutes.
- Combine the remaining 1/4 cup of lemon juice, honey, and soy sauce in a small saucepan and cook over medium heat until heated through. In a small bowl, make a paste from the remaining 4 tablespoons of butter and the flour. Whisk the butter-flour mixture into the melted honey-lemon-butter mixture. Continue to cook until the sauce has thickened slightly. Remove the clay cooker from the oven and pour the honey-butter mixture all over the chicken, making sure to evenly cover the breast and any exposed areas. Cover the roaster and return the chicken to the oven for 45 minutes, or until it is cooked through and very tender. Transfer the chicken to a platter or carving board, cut into pieces and serve immediately. Transfer the sauce to a gravy boat for serving, or spoon some of the sauce over each piece of chicken.
- I serve this with roasted potatoes or rice.
