Steps:
- In a large self-closing plastic bag, combine first six ingredients; mix well.
- Place salmon in bag and seal tightly.
- Turn bag gently to distribute marinade.
- Refrigerate 15 minutes or up to 30 minutes for stronger flavor.
- Turn bag occasionally.
- Lightly grease grill rack.
- Preheat grill to medium heat.
- Remove salmon from marinade; reserve the marinade.
- Grill 12-15 minutes per inch of thickness or until fish flakes easily with a fork.
- Brush with reserved marinade up until the last 5 minutes of cooking time.
- Discard leftover marinade.
HONEY GINGER SALMON
Recovered this old worn magazine cut out some time ago (if the yellowed edges are any sign). This is a quick and easy fix for any busy night. Cook time does not include chill time.

Steps:
- Spray grill rack with nonstick spray before starting the grill.
- In bowl combine the juice, soy sauce, honey, onion, ginger and garlic powder. Mix well.
- Reserve 1/3 cup for basting; cover and refrigerate.
- Pour remaining marinade into large bag or dish; add salmon and turn to coat.
- Seal bag or cover dish and regrigerate 30 minutes, turning 2-3 times.
- Heat grill to medium-hot heat.
- Drain and discard marinade.
- Place salmon skin side down on grill.
- Grill, covered 5 minutes.
- Baste with reserved marniade.
- Grill 8-10 minutes longer until done to your taste.

HONEY GINGER SALMON
My friends say this is the best fish they've ever had! Serve with quinoa tossed with some ginger and garlic. I created this recipe as an accompinent to various Asian dishes I was preparing. Can be eaten along side a noodle salad with chopsticks as well.

- Place Fillets in a large sheet of tin foil.
- Season fillets with salt and pepper to taste.
- Drizzle with honey.
- Sprinkle and/or press garlic and ginger on the fish.
- Douse in olive oil.
- Seal the edges of the tin foil around the fish, forming a "pocket" that does not allow for the escape of steam.
- Cook at 180/375 for 10 minutes and then remove from oven and CAREFULLY open the pouches.
- Return to the oven to cook as per your tastes for the remainder of the time.
- I prefer this fish to be "over cooked" and for the honey to take on a carmelized consistancy and the fish to be slightly "tough" and chewy. Though this is also excellent with a soft buttery consistancy fish. You'll know it is done when the fish looses it's transparent color and flakes apart in the center/thickest part with a fork.

This is the easiest, most flavorful honey-baked salmon that the whole family will be able to enjoy. It comes together in 30 minutes and only requires eight ingredients. Oh, and that honey-lime drizzle at the end is to die for - no one will judge you for slurping it down! Baking the salmon at a high heat not only quickens the cooking time, but also helps to crisp up the honey glaze and spice mixture that coats the fish.

- Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
- Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
- Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
- Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

- Combine the olive oil, soy sauce, sesame oil, ginger, maple syrup, Chinese mustard, sriracha and garlic in a large bowl. Pour one-third into a small bowl and reserve. Add the salmon fillets to the large bowl. Marinate, covered, in the refrigerator for 30 minutes.
- Heat a large nonstick skillet over medium-high heat. Add a drizzle of olive oil to coat the skillet. Add the salmon skin-side down and cook until crispy, about 5 minutes. - In a small saucepan simmer the sauce ingredients, stirring until honey is dissolved, and sauce is reduced to about 1/2 cup.
- Cool to room temperature in a metal bowl set in a large bowl of water with some ice in water.
- In a nonreactive baking dish large enough to just hold salmon steaks in 1 layer marinate salmon in sauce, turning to coat, about 15 minutes.
- Preheat broiler.
- Line a broiler pan and rack with foil.
- Arrange fish on rack in a single layer, not touching each other.
- Brush with melted butter, and sprinkle with salt and pepper.
- For a 1/2" steak, it should be 2" away from the heat.
- Cook 3 minutes, turn and cook 3 to 5 minutes on the other side.

- In a small bowl or measuring cup, mix marinade ingredients.
- Pour half of the marinade on the salmon. Save the other half for later.
- Let the salmon marinate in the refrigerator for at least 30 minutes.
- In a medium pan, heat oil. Add salmon to the pan, but discard the used marinade. Cook salmon on one side for about 2-3 minutes, then flip over and cook for an additional 1-2 minutes.

SALMON IN A SOY & HONEY MARINADE

- Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
- Rinse the fish with clean water and gently pat dry with kitchen paper.
- Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
- Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
- Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
- Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
- Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.
