Simple oven baked chicken breast with a subtle spice from ginger and a sweet and sticky glaze from honey.

1.5-2 pounds boneless skinless chicken breast
1.5-2 teaspoon sea salt (1 teaspoon of salt per pound chicken)
1 teaspoon garlic powder
1 teaspoon ginger powder
2 tablespoon high heat resistant oil (avocado or melted coconut work great)
1 tablespoon reduced salt coconut aminos (or soy sauce)
2 tablespoons orange juice
4 tablespoon honey
1/2 teaspoon ginger powder

Steps:

  • Rub oil, salt, ginger and garlic into chicken breast and let chicken sit at room temperature for 10 minutes (up to 20 minutes) before baking. For best flavor, dry brine in fridge for up to 6 hours before letting rest 20 minutes at room temperature and then baking.
  • While chicken rests, preheat the oven to 450 F.
  • Bake chicken on parchment paper lined baking sheet for 15-18 minutes (or until internal temp reaches 160).
  • While chicken bakes, bring glaze ingredients to a simmer in a sauce pan, then turn heat to low and cook until reduced into a glaze, stirring occasionally for about 12 minutes.
  • When chicken is 5 minutes from being finished, brush a little of the glaze over the chicken and finish in the oven. Let the meat sit for 5 minutes before slicing and serving with more honey glaze on top.

1/2 cup honey
1/2 cup low sodium soy sauce

Steps:

  • Layer the chicken in the bottom of a 5 - 6 qt slow cooker.
  • In a bowl, whisk together honey, soy sauce, preserves, hoisin sauce, oil, garlic, ginger, onion and red pepper flakes. Pour over chicken. Cover slow cooker and cook on low 4-5 hours.

  • Set aside.
  • Once the chicken is cooked, mix it into the sauce and warm up. This can be done in a small skillet or the saucepan, simply coat the chicken with the sauce. It will be a sticky texture sauce.
  • Serve the chicken over the cooked rice with green beans.
  • Garnish with green onion.

Steps:

  • Make sauce by whisking together garlic, ginger, honey, soy sauce, ketchup, sesame oil, and sesame seeds. Set aside.
  • Toss chicken with cornstarch until evenly coated.
  • In a wok or large skillet, heat cooking oil over medium-high heat. Add chicken and let cook for a moment without stirring until browned on the bottom, 3 to 5 minutes.
  • Give the chicken a stir and pour in about 3 Tbsp of sauce (it doesn't have to be super precise, so you can just estimate it by tipping in about a quarter of the sauce). Cook chicken in sauce, stirring frequently until chicken is well coated and looks sticky with sauce.

2 large boneless/skinless chicken breasts
Salt/Pepper
½ cup all-purpose flour
3-4 tablespoons peanut oil (can sub olive oil)
¾ cup beef broth
¾ cup chicken broth
¼ cup low sodium soy sauce
1/3 cup honey
5 cloves garlic (minced)
2 Tablespoons apple cider vinegar
½ teaspoon ground ginger
1 teaspoon toasted sesame oil
¼ cup packed brown sugar
1 small Bell pepper
2 cups Broccoli
Pinch red pepper flakes
¼ cup cornstarch (plus ¼ cup cold water)
3 cups cooked rice (any kind)
Green Onions (to garnish)
Red Pepper Flakes (to garnish.)

Steps:

  • Note: Preparing/cooking the chicken and measuring out the sauce brings you 85% of the way to completion, it goes very fast after that.
  • Slice the chicken into 2-3 thinner slices. Pound with a meat tenderizer if needed, the chicken will plump up more when cooked. Aim for ½ inch thick slices. Pat the chicken completely dry.
  • Combine all sauce ingredients except for the cornstarch and set aside.
  • Season each side of the chicken with salt/pepper. Dredge in flour mixture and tap off excess.
  • Heat olive oil in a large pan over medium-high heat. Add 2-3 pieces of chicken, leaving room around each. Sauté for 4-5 minutes per side, until a golden brown crust has developed. Remove and set aside. Repeat with the remaining 3 pieces of chicken.
  • Pro Tips: Make slight adjustments to the heat, (up or down), as needed during cooking. Add an additional splash of olive oil if needed throughout cooking. Try to leave the chicken undisturbed as it cooks to get a nice crusty sear.
  • Wipe excess oil from the pan but leave the chicken remnants. This is called "fond" and it will give the sauce more flavor.
  • Add the sauce mixture (minus the cornstarch) to the skillet. Add the vegetables and heat over medium heat for 4-5 minutes, until the broccoli and peppers are softened.
  • Bring to a gentle boil. Combine cornstarch with ¼ cup cold water and stir until well-combined.
  • Slowly add the cornstarch mixture to the sauce, stirring continuously, until desired thickness is obtained. You don't have to add it all.
  • Reduce heat to low. Add the chicken back and spoon the sauce on top. Let the chicken heat through for about 5 minutes. Serve with rice and garnish with green onions and red pepper flakes!

Steps:

  • In a medium bowl, whisk together the honey, lime juice and zest, tamari, sesame oil, ginger, garlic, scallions, 1/4 teaspoon salt and 1/4 teaspoon pepper. Reserve 3/4 cup of the marinade for later use. Pour the remaining marinade into a 2-gallon ziptop bag. Add the chicken and seal the bag, pressing out as much air as possible; massage to distribute the marinade. Marinate, refrigerated, for at least 6 hours, preferably overnight.
  • Remove the chicken wings from the refrigerator and let sit at room temperature for about 30 minutes.
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Put the wings skin-side down on the baking sheet and spoon the marinade from the bag over the wings. Cook for 20 minutes, then flip the wings, baste with the pan drippings, rotate the pan and cook until the honey has caramelized and the skin is a dark amber, an additional 20 to 25 minutes.
  • Pour the reserved 3/4 cup marinade into a small saucepan and bring to a boil over medium-high heat. Cook until the liquid is thick and syrupy and turns into a glaze, about 4 minutes. Coat the wings with the thickened marinade. Transfer to a serving platter and garnish with lime zest.
